1 (7 ounce) can chipotle peppers in adobo sauce, or to taste
¼ cup honey
3 tablespoons lime juice
3 tablespoons soy sauce
1 teaspoon garlic powder
1 teaspoon all-purpose flour

Steps:

  • Open can of chipotle peppers in adobo sauce and take out 3 to 5 peppers. Measure 2 tablespoons adobo sauce. Store remaining peppers and sauce for another use.
  • Blend chipotle peppers and 2 tablespoons adobo sauce, honey, lime juice, soy sauce, garlic powder, and flour in a blender until almost smooth.

2 lbs chicken wings
2 tablespoons barbecue seasoning
1 (250 ml) jar smucker's pure apricot jam
1 -2 tablespoon chipotle pepper sauce
2 tablespoons balsamic vinegar

Steps:

  • Preheat broiler to high. Grease broiler pan and line bottom tray with foil. Toss chicken wings with seasoning mix and place on prepared pan. Combine glaze ingredients in small bowl. Set aside half of glaze for dipping sauce and use remaining on partially cooked chicken.
  • Meanwhile, broil seasoned wings for 5 minutes. Turn and broil 5-7 minutes longer, or until almost cooked through.
  • Remove from oven and brush with glaze. Return to oven and cook another 2 minutes.
  • Turn wings over, brush with glaze, continue cooking and brushing , every minute or so , until juices are clear and chicken is no longer pink inside. Discard any leftover glaze that was used on raw chicken and serve remaining glaze as a dip.

I love a little spicy and a little sweet. While my husband and son brutalize them selves by eating fire on their wings I enjoy these. I use Tabascos Chipotle hot sauce. You can also add more or less of the hot sauce to suit your own taste.

1/2 cup brown sugar corn syrup
1/4 cup brown sugar
3/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
5 -10 dashes TABASCO® brand Chipotle Pepper Sauce

Steps:

  • Combine all ingredients.
  • Heat in microwave for 1 minute This is to melt the sugar and meld all the flavors.
  • Cool. If you pour the glaze warm it tends to be thin and doesn't really adhere as well.
  • Pour over cooked wings and toss.

i made this for my family and they loved them, since i am a vegetarian, i just basted some of this glaze onto a piece of veggie grilled chicken, and it was delicious... add more chipotle puree if you want them to bee spicier, or less for milder and sweeter wings. if possible, do not leave out the grated panela, it adds a complexity of flavor that cannot be duplicated with other ingredients.

12 chicken wings
4 tablespoons honey
1/2 cup jaggery, grated (panela)
2 -3 tablespoons pureed chipotle chiles
1/2 cup apple cider vinegar
2 -3 tablespoons chili powder
1/2 cup lime juice
lime zest
salt
pepper

Steps:

  • thoroughly wash chicken wings, and add to plastic ziplock bag. to the bag add 2 tbsp chile powder, salt and pepper, lime zest and 2-3 tbsp of lime juice, and 1 tbsp of grated panela. seal bag and marinate for at least an hour or longer if time permits.
  • for a basting sauce mix the remaining lime juice, 1 to 1 1/2 tbsp of grated panela, and about a tablespoon of chile powder in a bowl and set aside.
  • for glaze add apple cider vinegar, honey, remaining grated panela to a small sauce pan, and reduce till glaze is thick and coats a spoon. then add chipotle puree one tablespoon at a time, to get to desired spiciness and then add some lime zest to the glaze, and set aside or over low fire to keep warm.
  • start a charcoal fire in your grill (or start a gas grill) and let heat to a medium high to high heat. add wings to the grill and let brown on one side, flip wings and baste with chili lime juice mixture. when wings are done, and basted. add some glaze to one side of wings and flip over, grill for 2-3 minutes, then glaze the other side of the wings and flip again, and grill for another 2-3 minutes -- remove from the grill and add the remaining glaze to the wings.

I recently tried this at a restaurant and attempted to duplicate tonight. It came out really good! You can really taste all of the flavors of both the glaze and the marinade. I like to make it healthier with boneless, skinless chicken thighs, but regular thighs make a nicer presentation. I am making this tomorrow night (1/15/10) for a birthday dinner....so I will post a picture :)

2 tablespoons rosemary, stems removed and minced
2 tablespoons thyme, stems removed and minced
2 garlic cloves
1/4 cup olive oil
salt
pepper
16 ounces chicken thighs, cleaned
1 cup chicken stock
1 cup apricot preserves
2 chipotle peppers, canned in adobo sauce
2 teaspoons adobo sauce, from the can above
2 tablespoons parsley, fresh
salt
pepper

Steps:

  • Mix together the marinade and place in a resealable bag with the chicken. Marinate for a few hours or up to over night (which I did on accident as our plans changed).
  • Blend together all of the glaze ingredients.
  • Heat a grill to medium high and place chicken on the grill (after you discard the remaining marinade). Brush the glaze on the chicken liberally each time you flip the chicken.
  • Serve with your favorite side dish. I made a very basic green bean & carrot side with a mashed sweet potato dish.
  • Enjoy!
