Try caramel pears instead of caramel apples this Halloween or fall! We used a shortcut to make our caramel sauce - simply microwave soft caramel candies with some half-and-half and get dipping! Pouring your caramel sauce into a wide mug and dipping your pears directly inside it also saves you the hassle of a messy cleanup afterwards.

  • Microwave 10 ounces unwrapped soft caramels with 1 tablespoon half-and-half, stirring every 20 seconds, until smooth. Pour into a wide mug, then quickly dip 4 pears in the caramel, sprinkle with chopped pistachios and let set on a parchment-lined baking sheet.

This recipe calls for canned pears, however I am sure it could easily be used to get rid of the surplus of fresh pears you might have this time of year.

4 (15 1/4 ounce) cans sliced canned pears, drained
1 tablespoon all-purpose flour
1 1/2 cups finely crushed gingersnaps (about 32 cookies)
1/3 cup finely chopped walnuts (or could use any nut of your choice)
1/4 cup butter, melted

Steps:

  • Place pears in a large bowl.
  • Sprinkle with flour and toss lightly to coat.
  • Divide among 8 - 8 OZ custard cups.
  • Combine the gingersnaps, walnuts and butter.
  • Sprinkle over pears.
  • Place custard cups on baking sheet.
  • Bake at 350 degrees for 15-20 minutes or until heated through.
  • Serve with vanilla icecream or plain with a dallop of whip cream on top.

3/4 cup red-currant jam or jelly
3 tablespoons fresh lemon juice
1/2 cup creme fraiche or sour cream
3/4 cup heavy cream
1/4 cup sugar
3/4 teaspoon pure vanilla extract
1/4 teaspoon ground cardamom
1/4 teaspoon ground ginger
8 (about 1/2 cup) gingersnap, cookies crushed

Steps:

  • Whisk together jam and lemon juice in a small bowl; set aside. Beat the creme fraiche, cream, sugar, vanilla, and spices with an electric mixer until mixture holds stiff peaks. Gently fold in 1 tablespoon jam mixture with a rubber spatula, creating red swirls.
  • Layer 1 heaping tablespoon cream mixture, 1 tablespoon crushed cookies, and 1 tablespoon jam mixture in a small glass. Repeat layering; top with a dollop of cream mixture. Make 3 more parfaits. Refrigerate until ready to serve, up to 1 hour.

1 package (8 ounces) Mascarpone cheese
1/3 cup packed brown sugar
1 teaspoon ground cinnamon

1/3 cup spiced rum or Amaretto, optional
1 cup heavy whipping cream
1/4 cup confectioners' sugar
1 teaspoon vanilla extract
1 cup crumbled gingersnap cookies (about 20 cookies)

Steps:

  • In a large bowl, combine the first seven ingredients; stir in rum if desired. Refrigerate, covered, for at least 2 hours., In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until soft peaks form., Just before serving, spoon half of the pumpkin mixture into six parfait glasses. Top with half of the whipped cream and half of the crumbled cookies. Repeat layers.

Dough for single-crust pie
TOPPING:
1 cup crushed gingersnap cookies (about 16 cookies)
1/4 cup all-purpose flour
1/4 cup packed brown sugar
Pinch salt
1/2 cup cold butter, cubed
FILLING:
2/3 cup sugar
1/3 cup all-purpose flour
1/2 teaspoon ground ginger
1/4 teaspoon salt
2-1/2 pounds ripe pears (about 4 medium), peeled and thinly sliced
1 tablespoon lemon juice
1 teaspoon vanilla extract
Hot caramel ice cream topping, optional

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 350°., For topping, in a food processor, combine crushed cookies, flour, brown sugar and salt. Add butter; pulse until crumbly., For filling, in a large bowl, mix sugar, flour, ginger and salt. Add pears, lemon juice and vanilla; toss gently to combine. Transfer to crust; cover with topping., Place pie on a baking sheet; bake until topping is lightly browned and pears are tender, 60-70 minutes. Cover pie loosely with foil during the last 15 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack at least 1 hour before serving. If desired, drizzle with caramel topping.

4 Tbs. butter
1 cup brown sugar
4 large, firm (but ripe) Bartlett pears (about 2 pounds), halved and cored
2 cups heavy cream
2 Tbs. sugar
6 Tbs. brandy or cognac, divided
40 small gingersnap cookies
Candied or crystallized ginger

Steps:

  • Adjust oven rack to middle position and heat to 400 degrees. Melt butter in a 9-by-13-inch pan in the preheating oven until nutty golden. Sprinkle brown sugar evenly over butter in the pan, then place pears, cut sides down, over sugar. Bake until pears are tender when poked with a sharp knife and sauce is thick and caramel colored, about 40 minutes. Remove pears from sauce to a plate with a slotted spoon. Pour sauce in a measuring cup. (You should have about 1 cup of sauce. If not, simmer to reduce, or add water to equal 1 cup.) Cool pears and sauce to room temperature. (At this point, you can remove skin from the pears with a knife, if you want.) Cut each pear half into 8 chunks. When ready to assemble, whip cream into soft peaks, gradually adding sugar. Beat in 2 Tbs. of brandy. Set aside. Place 24 gingersnaps on a cookie sheet and lightly brush with some of the brandy. Work quickly; the cookies will soften in places, making them difficult to transfer. Arrange 3 cookies in each of 8 goblets. Drizzle each with some of the caramel sauce (about 1/3 cup total), a dollop of whipped cream and 4 pieces of pear. Lightly brush remaining 16 cookies with brandy and repeat layering with 2 cookies, 1/3 cup caramel sauce, whipped cream and 4 pieces of pear. Drizzle with remaining 1/3 cup caramel sauce, and cover each goblet with plastic wrap. Refrigerate parfaits and remaining whipped cream until serving time. To serve, garnish each goblet with a dollop of whipped cream and top with a couple slivers of candied ginger.
