You can make this easy, flavorful apricot chicken in the oven, slow cooker, pressure cooker, or even on the grill. You just can't go wrong with this recipe!

3 chicken breasts ((boneless, skinless))
1 cup apricot preserves
1 cup Catalina salad dressing ((or Russian dressing))
2 tablespoons Dijon mustard
2 ounces dried onion soup mix

Steps:

  • Cut chicken breasts in half or into serving-sized portions.
  • In a medium-sized bowl, combine apricot preserves, Catalina dressing, onion soup mix, and Dijon mustard. Mix well.

1 cup dried apricot
2 tablespoons oil
4 chicken breasts, boneless and skinless
1 medium onion, sliced
3 garlic cloves, crushed
1 1/2 tablespoons ginger, fresh grated
2 teaspoons lemon rind, grated
1 1/2 tablespoons thyme, chopped fresh
1/4 cup lemon juice
1/2 cup apricot juice
2 tablespoons brandy
1 cup chicken stock
3 teaspoons cornstarch
1 1/2 tablespoons water

Steps:

  • Cover the apricots with boiling water and stand about 1 hour or until apricots are soft; drain.
  • Heat oil in pan, add chicken and cook until lightly browned all over.
  • Transfer to an (8 cup capacity) ovenproof dish.
  • Add onion, garlic, ginger, and rind to the same pan, cook until onion is soft.
  • Stir in thyme, juices, brandy, stock and blended cornstarch and water, stir over heat until mixture boils and thickens.
  • Pour mixture over chicken, add the apricots.
  • Bake covered in a medium oven about 20 minutes or until chicken is tender.
  • Can be made ahead. Suitable for freezing.

1/2 cup apricot preserves
2 tablespoons ketchup
1 tablespoon Dijon mustard
1/2 teaspoon ground ginger
4 boneless skinless chicken breasts (6 ounces each)
1/4 cup toasted hazelnuts, chopped
6 ounces long grain and wild rice blend
1 tablespoon olive oil

Steps:

  • Heat oven to 400°. Spray a baking dish with nonstick cooking spray.
  • Whisk together the apricot preserves, ketchup, mustard and ginger. Reserve 1/4 cup of the mixture.
  • Place chicken in the prepared baking dish and spread the remaining apricot mixture over the top. Bake at 400° for 20 to 25 minutes or until internal temperature reaches 160° on an instant-read thermometer.
  • Make rice following package directions, using the olive oil.
  • To serve, sprinkle the hazelnuts over the chicken breasts and stir the reserved apricot mixture into the cooked rice.

1/2 cup apricot preserves
2 tablespoons soy sauce
1 tablespoon lemon juice
1/4 cup onion, minced
1 tablespoon parsley, chopped
1/8 teaspoon oregano
4 boneless skinless chicken breast halves

Steps:

  • In a flat glass or china dish or a mixing bowl, combine fruit spread, soy sauce, lemon juice, onion, parsley, and oregano; set aside 1/4 cup of mixture for basting sauce. Add chicken pieces to remaining mixture and turn several times, coating.
