GERMAN CABBAGE CASSEROLE - KOHL UND HACKFLEISCH

German Cabbage Casserole - Kohl Und Hackfleisch image

Cabbage and meat mildly seasoned with garlic and onions in a creamy cheese sauce and topped with breadcrumbs for a pretty presentation! A real comfort food. Even those who say they HATE cabbage will eat this and like it! I have even made this without the meat- using bulgur and veggie broth. Here is how: Just replace the meat with the same amount of bulgur- (for 1 lb of meat sub 1 cup bulgur) you will want to soak the bulgur according to the instructions on the package- if you bought it in bulk here is how... Bring 2 cups of veggie broth ( can use bouillon and water) per 1 cup bulgur When broth is boiling stir in bulgur. Cover and simmer about 15 minutes or until bulgur is soft. All the broth should be absorbed. Fluff the bulgur with a fork as you would rice and add to your recipe. I have used beef, pork, turkey and chicken with great results too. *See NOTE for freezing, make ahead and left over tips*

Provided by Mamas Kitchen Hope

Categories     Cheese

Time 1h

Yield 6 serving(s)

Number Of Ingredients 8

1 cup bulgur (2.5 cups cooked, also known as cracked wheat) or 1 lb ground chicken, have all worked well
1 medium onion
1 garlic clove, minced, more if desired
2 cups cheddar cheese, shredded
1/2 cup sour cream
1 medium cabbage, chopped
1/2 cup unseasoned breadcrumbs
salt and pepper

Steps:

  • Brown meat, onion and garlic until meat is no longer pink and onion has turned clear.
  • Drain grease from pan and discard.
  • Add cabbage and cover.
  • Cook until cabbage is clear.
  • Add cheese and sour cream mixing well.
  • Pour all into greased casserole and top with bread crumbs.
  • Bake at 375 for 40 minutes.
  • *NOTE: to freeze- make ahead or re-heat left overs: compliments of Chef Marie Alice:* I froze half of this when I originally made it. This freezes excellently and if anything tastes even better after! I reheated it by melting a little butter in a skillet and then crumbling the partially thawed casserole into it, cooking and stirring until it was heated through.

GERMAN CHEESE-NOODLE CASSEROLE (KäSESPäTZLE)

German Cheese-Noodle Casserole (Käsespätzle) image

This traditional German cheese casserole comfort food (käsespätzle) recipe uses homemade noodles topped with cheese and caramelized onions.

Provided by Jennifer McGavin

Categories     Pasta

Time 1h25m

Number Of Ingredients 14

For the Onions:
2 teaspoons olive oil
1 teaspoon butter
2 medium onions (quartered and sliced)
For the Spätzle:
2 cups all-purpose flour
1/2 teaspoon salt
2 large eggs
1/2 cup water
For the Casserole:
1/2 cup breadcrumbs (more or less as needed)
2 tablespoons butter (more or less as needed)
1/4 teaspoon nutmeg (freshly grated)
4 ounces Gruyère cheese

Steps:

  • Gather the ingredients.
  • Start by making the caramelized onions about 1 hour before the casserole needs to go into the oven.
  • Heat the butter and oil in a nonstick pan on medium. Turn heat to low and add onions. Stir every few minutes for about an hour, or until onions are lightly browned and sweet enough for your taste. Here is more information on caramelizing onions .
  • Turn off the heat and set the onions aside.
  • Gather the ingredients.
  • Here is a step-by-step guide to making spätzle with a spätlebrett (wooden board used to make drop noodles). You may use a colander to form the noodles or a grater-like device with a hopper on it called a spätzle maker.
  • Place a large pot of water on to boil. You can add salt if you wish.
  • To make the dough, whisk together the flour and salt in a medium bowl. In a small bowl or measuring cup, beat the eggs with the water and add to the flour-salt mixture.
  • Beat for several minutes or until dough is smooth. Let the dough rest for 10 minutes, then beat it again. Add water or flour to adjust consistency to a thick batter (a little thinner than brownie batter).
  • Place half of the dough in the hopper of the spätzle maker which is placed over the simmering water. Push and pull the hopper back and forth, creating a dough wave inside the hopper. Little bits of dough will be pushed out the other side and drop into the water. They will be fatter and more teardrop-shaped than the spätzle you make with a board.
  • The noodles drop to the bottom of the pot, then rise to the surface. Let them sit there for another 2 or 3 minutes, then scoop them out with a slotted spoon or small sieve. Rinse briefly in hot water, then drain well and set aside.
  • Using the second half of the dough, make another batch of noodles. If the noodles stick to the bottom of the pan, give a quick stir to loosen. They should then rise to the top.
  • Butter and line a 1 1/2- to 2-quart casserole dish with breadcrumbs .
  • When noodles are done, add them to the (cooled) pan with the caramelized onions. Add the grated nutmeg and 3/4 of the grated cheese and stir to mix.
  • Spoon noodles into the casserole, sprinkle with remaining cheese and bake, covered, at 350 F for 20 minutes, then uncovered for 15 minutes. If you like, brown the cheese topping with the broiler during the last 5 minutes.
  • Serve hot.
  • Enjoy.

15 CLASSIC GERMAN RECIPES EVERYONE SHOULD KNOW

From thespruceeats.com
  • Quark (Classic German Cheese) Favored in much of Europe, but somewhat hard to find in the U.S., quark can be made at home with little money and effort.
  • German Potato Noodles. If you have leftover spuds, use them up by making badische schupfnudeln, or potato noodles. Browning them in butter gives them a delightfully toasty crust that tastes wonderful alongside schnitzel or any roast protein.
  • Butternocken (Tasty Butter Dumplings) Just five ingredients stand between you and these delightful little butter dumplings. Butternocken are incredibly easy to make, even for beginners.
  • German Beef Rouladen. German rouladen tastes like a special occasion, but doesn't require any fancy cuts or techniques. Just thin slices of beef browned, then braised in a simple red wine sauce would sub in for your typical roast on a Sunday evening.
  • Simple Baked Fish With Apple. Catholics commonly eat fish on Ash Wednesday and throughout the Lent season, but this basic fish with apples tastes great all year round.
  • Zurich Ragout (Zurcher Geschnetzelter) While the may sound like a mouthful, the traditional veal stew Zurich ragout sure tastes wonderful. Consisting of veal, pork loin, or chicken, and mushrooms smothered in a creamy white sauce with parsley and lemon zest, it makes a lovely supper alongside a German white wine.
  • German-Style Mustard Pork Chops. These German-style mustard pork chops highlight one of Germany's favorite condiments. Dredged in seasoned flour then fried before covered in a wine and mustard sauce, this hearty one-pan meal packs a punch without taking a lot of time or complicated work.
  • Milchreis (German Rice Pudding) Many countries in the world have their own take on rice pudding and Germany is no exception. For a satisfying and hearty dessert, combine short-grain rice, vanilla, milk, and sugar into a creamy, satisfying sweet.
  • Alsatian Apple Cake. The Alsatian apple cake has a shortbread-like crust filled with apple slices and vanilla cream for a rich and creamy fall treat. It also doesn't require any fancy ingredients, so you may even have the goods in your kitchen already.
  • German Christmas Cardamom Cookies. With its spicy, slightly medicinal taste, cardamom first appeared in folk remedies in the Middle Ages. Today, bakers use it to flavor desserts like these distinctly floral rolled German cookies that you may enjoy as part of a Christmas platter or anytime you want a unique pick-me-up.

Pronounced KAE-zeh-SHPET-zleh, this dish is a great example of simple German comfort food at its finest.
