Time 2h45m

Yield 8 servings

Number Of Ingredients 20

8 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 cup flour
3 large eggs
3/4 cup milk
7 cloves garlic, minced
2 cups panko breadcrumbs
2 teaspoons garlic salt
Vegetable oil, for frying
3/4 cup Nancy's Marinara Sauce, recipe follows
1/4 cup grated Parmesan
1 1/2 cups shredded mozzarella
1/4 cup extra-virgin olive oil
1 small onion, chopped
1 clove garlic, chopped
1 carrot, peeled and finely chopped
1 stalk celery, chopped
Sea salt and freshly ground black pepper
One 32-ounce can crushed tomatoes
1 teaspoon dried oregano

Steps:

  • Preheat the oven to 350 degrees F. Set a wire rack into a baking sheet lined with aluminum foil.
  • Sprinkle the chicken on both sides with salt and pepper.
  • Combine the flour and some salt and pepper in a medium baking dish. In a second baking dish, combine the eggs, milk and minced garlic. In a third dish, combine the panko and garlic salt.
  • Dredge the chicken breasts through the flour mixture, dusting off any excess; then through the egg mixture, letting excess drip off; and then through the panko breadcrumbs, making sure to coat the breasts on each side. Set the breaded chicken breasts on the wire rack and refrigerate for 30 minutes to allow the breading time to set.
  • Fill a large, deep skillet halfway with vegetable oil and heat to 375 degrees F on a deep-fry thermometer.
  • Using tongs, carefully place the breaded chicken in the hot oil, working in batches to avoid crowding the pan. Fry until light golden on both sides, about 4 minutes. Return the chicken to the wire rack.
  • Dollop 2 tablespoons of Marinara Sauce over each piece of chicken and sprinkle the chicken evenly with the Parmesan and mozzarella. Transfer to the oven and bake until the chicken is cooked through, about 15 minutes. Serve warm.
  • Heat the olive oil in a large heavy-bottomed pot over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the carrots and celery, season with salt and pepper and saute until all the vegetables are soft, another 10 minutes. Add the tomatoes and oregano and simmer, uncovered, over low heat until the sauce has thickened, about 1 hour. Season to taste with more salt and pepper.

1 carrot, peeled and finely chopped
1 stalk celery, chopped
Sea salt and freshly ground pepper
1 32-ounce can crushed tomatoes
1 teaspoon dried oregano
8 skinless, boneless chicken breasts (6 to 8 ounces each)
Kosher salt and freshly ground pepper
1 cup all-purpose flour
3 large eggs
3/4 cup milk
7 cloves garlic, minced
3 cups panko breadcrumbs
2 teaspoons garlic salt
Vegetable oil, for frying
1/4 cup grated parmesan cheese
1 1/2 cups shredded mozzarella cheese

Steps:

  • Make the sauce: Heat the olive oil in a large heavy-bottomed pot over medium-high heat. Add the onion and garlic and saute until the onion is translucent, about 10 minutes. • Dredge the chicken breasts through the flour mixture, dusting off any excess, then through the egg mixture, letting the excess drip off, and then through the panko, making sure to coat the chicken on both sides. Set the breaded chicken on the wire rack and refrigerate for 30 minutes to allow the breading to set.
  • Fill a large deep skillet halfway with vegetable oil and heat over medium heat until a deep-fry thermometer registers 375 degrees F. Using tongs, carefully place the breaded chicken in the hot oil, working in batches to avoid crowding the pan. Fry, turning once, until light golden on both sides, about 4 minutes. Return the chicken to the wire rack.
  • Dollop 2 tablespoons sauce over each piece of chicken and sprinkle evenly with the parmesan and mozzarella. Transfer to the oven and bake until the chicken is cooked through, about 20 minutes. Serve with the remaining sauce on the side.

CREAMY GARLIC PARMESAN CHICKEN AND POTATOES

Creamy Garlic Parmesan Chicken and Potatoes image

Complete and total one pot comfort food.

Provided by Katie Workman

Categories     Main Course

Time 50m

Number Of Ingredients 12

4 tablespoons olive oil (, divided)
1 pound Idaho russet potatoes (, peeled and cut into 1-inch cubes)
Kosher salt and freshly ground pepper (to taste)
1/2 cup all-purpose flour
1 ½ pounds boneless skinless chicken breasts
1 onion (, chopped)
1 tablespoon finely minced garlic
1 ½ cups less-sodium chicken broth
5 ounces (1 clamshell) baby spinach (, roughly chopped)
½ cup heavy cream
½ cup grated Parmesan cheese (, plus more to serve)
¼ cup chopped fresh parsley

Steps:

  • In a very large skillet, heat 2 tablespoons of the olive oil over medium high heat. When the oil is hot, add the potatoes, season with salt and pepper, and leave the potatoes alone for about 4 minutes, until the underside is browned. Flip the potatoes and let side for another 4 minutes, until the second underside is browned. Flip once more so that another uncooked side of the potatoes brown, another 4 minutes; the other sides of the potato cubes will not be browned, which is ok. Remove the potatoes with a slotted spoon or tongs to a plate.
  • Meanwhile, combine the flour, 1 teaspoon salt and ½ teaspoon pepper in a shallow bowl.
  • Heat the remaining 2 tablespoons in the same skillet over medium high heat. Dredge the chicken cutlets in the flour mixture. Once the oil is hot, cook the cutlets in the pan for about 3 minutes on each side until they are golden brown, and but not cooked through (still pink in the center). Transfer the cutlets to a large plate when they are browned.
  • Turn the heat down to medium and add the onions. Cook, stirring frequently, for about 2 minutes, until the onions are slightly tender and golden. Stir in the garlic for 1 minute, until you can smell the garlic. Add the chicken broth, bring to a simmer and stir so that any browned bits stuck to the bottom of the pan are released into the liquid. Stir in the spinach, then add the cream, and Parmesan. Bring to a simmer and cook, stirring frequently, until the sauce thickens slightly, about 2 minutes.
  • Add the potatoes back to the pan and tuck the chicken back into the pan, with any juices that may have collected on the plate, making sure the chicken is at least mostly covered by the sauce. Cook for about 6 to 8 more minutes until the chicken and potatoes are cooked through.
  • Sprinkle with the parsley, and serve hot in shallow bowls with the extra Parmesan passed on the side.

INSTANT POT GARLIC PARMESAN CHICKEN THIGHS

Instant Pot Garlic Parmesan Chicken Thighs image

Get dinner on the table in less than 30 minutes with this delicious Instant Pot garlic chicken parmesan chicken thighs recipe.

Provided by Becky Hardin

Categories     Main Course

Time 25m

Number Of Ingredients 10

1 tablespoon olive oil
1 tablespoon butter
4 bone-in skin-on chicken thighs
1 cup water or chicken stock
2 tablespoons butter
2 tablespoons olive oil
4 garlic cloves (minced (about 1 tablespoon))
½ teaspoon red pepper flakes (optional)
¼ cup grated parmesan
2 tablespoons fresh chopped parsley

Steps:

  • Heat the Instant Pot using the Saute-Normal function. Add the olive oil and butter.
  • Pat the chicken thighs dry with a paper towel and season them lightly with salt and pepper.
  • When the butter has melted, add the chicken thighs skin side down and cook for 2-3 minutes, or until the chicken has started to turn golden brown.
  • Flip the chicken and cook for an additional 2 minutes.
  • Turn the Instant Pot off. Add the trivet to the bottom and place the chicken thighs, skin side up, on the trivet. Try not to overlap them too much. Pour in the water or chicken stock. Set the Instant Pot to the Manual Pressure Cook-Normal-High Pressure for 10 minutes. Make sure the pressure valve is in the "sealing" position.
  • The Instant Pot will take a few minutes to come to pressure and will then begin counting down from 10.
  • When the Instant Pot has finished cooking, manually release the pressure by switching the valve to the "venting" position. Be careful-- the vent will steam and may splatter!
  • Remove the chicken thighs and set them aside. Remove the trivet and discard the water/stock.
  • Heat the Instant Pot using the Saute-Normal function. Add the butter, olive oil, garlic cloves, and red pepper flakes, if using.
  • When the butter has melted and the garlic has started to turn golden, add the parmesan and fresh chopped parsley and stir to combine.
  • Return the chicken thighs to the Instant Pot and toss to combine-- make sure the chicken thighs get coated on all sides with the garlic parmesan sauce.
  • Serve immediately.
  • Store any leftover chicken in an airtight container in the refrigerator for up to 2 days.

1 cup all-purpose flour
1 cup Panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon Italian seasoning

HOW TO MAKE GARLIC PARMESAN CHICKEN PASTA : 10 STEPS ...

From instructables.com
  • First, lace your 2 pounds of chicken breasts that are skinless, at the bottom of the crockpot. Pour your 12oz bottle of garlic parmesan sauce into the crockpot covering the chicken, you can use any brand you want but I used the Great Value brand.
  • Second, measure out 1 cup of milk in a measuring cup. Pour the 1 cup of milk into the garlic parmesan bottle. Shut the lid on the bottle and shake the milk until all the extra sauce from inside the bottle is gone.
  • Third, open your 8oz of cream cheese and put it onto a plate or a cutting board. Cut the cream cheese into blocks of whatever size you would like to cut them into.
  • Fourth , rinse and dry out the measuring cup because you will then need to measure out 4oz of parmesan cheese .
  • Immediately following, you will add the 4oz of parmesan cheese into the crockpot so it can start melting on the chicken and cooking. Stir everything together and make sure the chicken is fully and evenly covered so the chicken can start cooking.
  • In the meantime, you will let the chicken cook on low for 3-4 hours or on high for 2-3 hours and stir the combination every so often. Make sure you put the lid on the crockpot.
  • After a few hours, you will grab two forks and start shredding the chicken while it is in the crockpot. Start pulling the chicken apart from each other and shredding it as much as you would like.
  • Meanwhile, put water into a pot and let the water start boiling so you can cook your noodles. You may add a pinch of salt into the water so it can boil faster.
  • Eventually , your noodles will be cooked and you can tell they are done by taking one out of the water and trying it, if the noodle is soft, they are done.
  • Last but not least, let the noodles sit in the crockpot for at least 10 minutes so the noodles can soak up some of the sauce and cook a little more if needed .
