1 pound dried cannellini beans
4 cloves garlic, unpeeled
1/2 cup extra-virgin olive oil
5 sprigs thyme
Kosher salt and freshly ground pepper

Steps:

  • Place beans in a large bowl; cover with water by several inches. Refrigerate, covered, overnight.
  • Preheat broiler. Drain and rinse beans. Transfer to a large pot; cover with 8 cups cold water. Place garlic cloves on a rimmed baking sheet and place under broiler, turning to charall over, 2 to 3 minutes. Add garlic, oil, and thyme to pot; season generously with salt and pepper. Bring to a boil, then reduce to a simmer and cook until beans are just tender, 45 minutes to 1 hour. Remove and discard aromatics; serve. (Or let cool completely in broth, then store in an airtight container in refrigerator up to 5 days.)

12 to 16 ounces fresh green beans, trimmed
3 tablespoons butter
2 cloves garlic, grated on a rasp grater or finely minced
Zest of 1 lemon plus 2 teaspoons fresh lemon juice
1/4 cup slivered almonds

Steps:

  • Bring a pot of salted water to a boil. Prepare an ice bath. Blanch the green beans briefly in the boiling water, then transfer to the ice bath to stop the cooking process. Drain and set aside.
  • In a large pan on medium-high heat, add the butter, garlic and lemon juice. When the butter is melted and the garlic is fragrant, add the green beans and toss until just heated through. Taste a green bean and season with salt and pepper if needed. Remove to a serving plate and wipe the pan clean. Add the almonds and lemon zest and quickly toast a minute or two. Sprinkle the toasted almonds and zest over the green beans and serve.

I make this often with my summer's crop of green and yellow beans ---for this recipe I really don't bother to measure so really the exact amounts do not matter, however I have posted the amounts that I I think is pretty much close to what I use --- I usually have my beans already steamed and stored in the refrigerator until ready to use for this recipe, do not make this using uncooked raw beans they must be cooked firstly, prep time does not include pre-steaming the beans or peeling the garlic cloves.

2 tablespoons butter
1 tablespoon olive oil
1/4-1/2 teaspoon crushed red pepper flakes (optional or to taste)
1 head garlic (peeled, then thinly slice all the cloves)
1 lb fresh steamed green beans (pat steamed beans dry using a paper towel)
1/4 teaspoon seasoning salt (or to taste) or 1/4 teaspoon white salt (or to taste)
fresh ground black pepper (to taste)
1/3 cup freshly grated parmesan cheese (or to taste)

Steps:

  • In a skillet melted the butter with oil over medium heat.
  • Add in the sliced garlic and crushed chili flakes; cook stirring for about 4 minutes or just until the garlic is just lightly browned (do not burn the garlic).
  • Add in steamed beans and toss until heated through.
  • Season with salt and freshly ground black pepper.
  • Remove to a bowl and sprinkle with Parmesan cheese.

  • In a microwave safe bowl, add green beans and 1 tablespoon water. Cover with plastic wrap and cook on high setting for 6 to 8 minutes or until crisp-tender.

1/2 teaspoon dried thyme
1/4 teaspoon salt

  • Place the frozen green beans, water, thyme, and salt in a large nonstick skillet.
  • Cover and cook over medium-heat, stirring occasionally, for about 7 minutes, until the green beans are completely thawed.
  • Reduce the heat to medium and cook for several minutes more, just until tender.
  • Add a little more water during cooking if needed, but only enough to prevent scorching.
  • Drain off any excess liquid.
