BEST GARLIC TOAST (QUICK & EASY!)
Here's the very best garlic toast you'll find! Ultra garlicky, crunchy on the outside and soft on the inside: and it takes only 10 minutes to make.

Steps:
- Preheat the oven to 350 degrees Fahrenheit.
- Thinly slice the bread.
- Mince the garlic. In a small bowl, mix together the garlic with the olive oil, dried oregano, and salt. Use a brush to brush the mixture on both sides of each slice of bread and place them onto a baking sheet. Try to pick up some of the minced garlic with the brush, as it tends to sink to the bottom. (If the oil runs out, depending on your size of bread, just add a splash more to the bowl with the garlic.)
- Add a pinch of garlic powder to the top of each toast.
- Bake for 5 minutes until the crust is crisp but the inside is still soft. If desired, sprinkle with finely chopped Italian parsley. Enjoy immediately.

- In a small sauce pan, reduce the balsamic vinegar by half over a low flame, about 5 minutes. Set aside to cool.
- Heat 1/4 cup olive oil in a large frying pan, add the chopped garlic and the thin slices of Italian bread. Sauté until lightly browned on both sides. Add olive oil as needed but only enough so the slices brown evenly.
- Place the sautéed bread on the bottom of a large bowl, add the Italian parsley, corn, mozzarella, quartered cherry tomatoes and slivered olives. Drizzle with olive oil and the reduced balsamic vinegar. Season with sea salt and pepper. Serve immediately.

- If you are new to visiting a farmers market, my advice is to keep it simple. Don't overbuy! it is really easy to do, especially if you go without a plan. The saddest thing is seeing what you've purchased go to waste because you couldn't go through it all. Start conservatively.
- with "eat-immediately" items- things that will not last very long - like sprouts, lettuce, berries, some fruits. Opt for 1-2.
- with produce that keeps for longer (potatoes, apples, cabbages, winter squashes, leeks, kale, etc) that give you more time to consume them. Buy more of these.

- The best tip here! I often buy specialty items like Thai basil, garlic chives, purple basil- thing's I can't readily find at the grocery store.

- Preheat the oven to 400 degrees F.
- Slice the baguette diagonally into 1/4-inch-thick slices. Depending on the size of the baguette, you should get 20 to 25 slices.
- Lay the slices in one layer on a baking sheet, brush each with olive oil, and sprinkle generously with salt and pepper. Bake the toasts for 15 to 20 minutes, until they are browned and crisp. As soon as they are cool enough to handle, rub one side of the toasts with the cut side of the garlic. Serve at room temperature.

- Mix butter, Parmesan cheese, parsley, and garlic powder in a bowl. Arrange Italian bread on a large baking sheet and spread each slice with garlic butter mixture. Place baking sheet in freezer and freeze until bread solid, about 1 hour. Transfer bread to a resealable plastic freezer bag until ready to use.
