My husband and three boys all love oven-roasted potatoes. But I work full-time, so once I get home and start dinner, I usually don't have time to make them. I whipped up this quick and very tasty microwave garlic potato recipe with red potatoes and seasonings instead, and everyone likes it. -Heidi Iacovetto, Phippsburg, Colorado

6 small red potatoes, quartered
1/4 cup butter, melted
1 teaspoon seasoned salt
1 teaspoon paprika
1 teaspoon dried parsley flakes
1 teaspoon minced garlic

Steps:

  • Place the potatoes in a 2-qt. microwave-safe dish. In a small bowl, combine the butter, seasoned salt, paprika, parsley and garlic; pour over potatoes and toss to coat., Microwave, uncovered, on high for 8-10 minutes or until potatoes are tender, stirring frequently.

  • Cook in microwave for 20 - 25 minutes or until potatoes are tender. Stir after first 10 minutes.

4 russet potatoes
6 garlic cloves, chopped
1 teaspoon dried oregano
1 teaspoon dried rosemary
2 tablespoons parsley
2 tablespoons olive oil
1/4 teaspoon salt

Steps:

  • Combine garlic, oregano, parsley, rosemary, oil, salt and pepper in a small bowl.
  • Slice potatoes in 1/4 inch slices almost all the way through the potato like you would for garlic bread.
  • Spread a small amount of the garlic mixture inside each cut.
  • Wrap in heavy duty plastic wrap and microwave on high 12-16 minutes.
  • Arrange on a serving dish, press down lightly to fan out the slices.
  • Alternate to microwave method of cooking --
  • You can spread a light coating of olive oil over the potato and sprinkle with Kosher salt, place directly on rack in stove and bake for 45-60 minutes.
  • Arrange on serving dish, press down lightly to fan out the slices.

2 lbs. potatoes (red or yellow)
3 garlic cloves (minced)
2 T olive oil
1/2 tsp. salt
1/4 tsp crushed red pepper
1 tsp. grated lemon peel
1 tsp. chives or rosemary

Steps:

  • Cut unpeeled potatoes into chunks. In microwave casserole dish, combine potatoes,garlic, oil, salt and pepper. Cook covered on high 14-18 minutes or until potatoes are tender, stirring twice. Stir in lemon peel and chives. Let stand covered 5 minutes.

  • In a liquid measuring cup or small bowl, combine the milk, salt, and butter and stir to combine.
  • Pour the milk mixture over the potatoes.
  • Microwave for 2 minutes.
  • Remove from the microwave and mash the potatoes with a fork.
  • Add the pepper and stir to incorporate.
  • Garnish with chives.
