6 tablespoons butter
10 cloves garlic, minced
6 cups mushrooms, sliced
1 teaspoon dried basil
1/4 teaspoon salt

2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
parmesan cheese, grated

Steps:

  • In a skillet melt 2 tbsp Butter.
  • Add garlic, allow to brown, then add mushrooms, basil, Salt& Pepper.
  • Cook until the mushrooms are just tender.
  • Add remaining butter and olive oil.
  • Stir and remove from heat.
  • When Pasta is cooked reheat the sauce add parsley.
  • Mix with Pasta and enjoy.

Creamy Garlic Mushrooms. This is a very quick, easy and delicious recipe, perfect as a side, serve on toast for brunch, or add to some lovely pasta!

8 oz or 225 g whole white mushrooms
2 cloves of garlic, minced
2 tablespoons of Cream Cheese., you can also use low fat variety
1 teaspoon of fresh or dry herbs, such as tarragon, basil, parsley
salt & pepper
1 teaspoon of Olive Oil

Steps:

  • Heat a pan with a teaspoon of oil and add the mushrooms and garlic on medium heat. Stir and toss until soft and a little liquid is released from the mushrooms. If the mushrooms do not release any liquid, add a couple of tablespoons of milk or broth. (Sometimes, depending on the season, mushrooms can vary in juiciness!)
  • Then add the cream cheese and combine. Add the herbs and taste, season to your taste with salt and pepper.
  • TIP: To avoid the cream cheese from splitting, you should make sure the heat is not too hot, if you are not sure, remove the pan from the heat whilst you add the cream cheese, combine well, then return to a gentle heat until the sauce is bubbling gently and heated through completely. As you will know, any cream products have a tendency to split or curdle if you add them to any high temperatures, so do not turn the heat up!!
  • Serve straight from the pan, or you can transfer to an oven dish and place in the oven (covered) to keep warm until you are ready to serve.

2 tablespoons olive oil
2 tablespoons salted butter
1 large white onion (sliced into rings)
1 pound fresh mushrooms (washed and sliced)
2 tablespoons minced garlic
3 tablespoons balsamic vinegar
3 tablespoons white wine (optional)

Steps:

  • Heat the olive oil and butter together in a large skillet.
  • Add in the onions and start frying. Fry for 5 minutes to get them started then add in the mushrooms.
  • Fry until the mushrooms have reduced in size and lost their moisture and the onions are softened completely.
  • Add in the garlic and saute until browned and fragrant.
  • Stir in the balsamic vinegar and wine and cook another 2 minutes, making sure to delgraze the bottom of the pan ( scrape off any browned tasty bits so that it goes into the sauce!)
  • Season to taste with salt and pepper and serve!

1 teaspoon fresh thyme leaves (chopped)
2 tablespoons chopped fresh parsley
4 cloves garlic (minced)
Salt and pepper (to taste)

Steps:

  • Heat the butter and oil in a large pan or skillet over medium-high heat.
  • Sauté the onion until softened (about 3 minutes).
  • Add the mushrooms and cook for about 4-5 minutes until golden and crispy on the edges.

fresh pasta, enough for 4
2 medium portabella mushrooms, in 1/4 inch thick slices
2 cups cremini mushrooms, capped and quartered (button mushroom works too, go wild with your choice :-)
1/2 cup of packed fresh basil leaf
2 cloves garlic, peeled
extra virgin olive oil (use the good quality one you've been saving)
1/2 cup sherry wine or 1/2 cup dry white wine
1 -2 teaspoon soy sauce
shredded parmesan cheese
salt & freshly ground black pepper, to taste

Steps:

  • For sauce, heat heavy skillet.
  • Saute garlic cloves in 1-2 tablespoons of olive oil until coated and beginning to brown (about 1 minute).
  • Add mushrooms and sautee until juices begin to emerge.
  • Add wine or sherry (more or less depending on how juicy you want it to be) and soy sauce.
  • Coat mushrooms and cook for another minute or so.
  • Add basil and cook until leaves are slightly wilted.
  • Remove garlic cloves.
  • Add salt and pepper to taste.
  • Toss cooked noodles with a little bit of olive oil (the amount depends on how juicy your mushroom mix is).
  • Transfer to plates and top with mushrooms and grated parmesan.

1.5 teaspoons soy sauce
1/2 teaspoon sriracha (or to taste)
1 teaspoon brown sugar
1.5 tablespoons olive oil
4-5 large garlic cloves (sliced thin)
8 oz white mushrooms (sliced)
1/8 teaspoon black pepper (or to taste)
1 tablespoon chopped basil

Steps:

  • In a bowl mix together balsamic vinegar, soy sauce, sriracha and brown sugar. Mix well and set aside.
  • Heat olive oil in a cast iron skillet (or any other pan) on medium heat. Once the oil is hot, add the sliced garlic and let them cook until they start changing color, around 2 minutes.
  • Then add the sliced mushrooms and stir. Cook the mushrooms on medium heat for 6 to 7 minutes until they release all the moisture and start turning golden-ish in color.
  • Add in the prepared sauce to the pan. Mix well until sauce is well combined with the mushrooms.
  • Add the black pepper and stir well.
  • Cook for a minute and then turn off the heat. Stir in the basil.
  • Serve these balsamic mushrooms with more basil. These can be enjoyed with rice, noodles or even on a toast!

375 g button mushrooms, 13 ounces and wiped clean

Steps:

  • In a large skillet, melt butter and add the garlic. Over medium heat saute garlic until soft and golden, stirring occasionally.
