This is a recipe from Joy of Cooking... totally changed my mind about Brussels Sprouts! It's imperative that you use fresh sprouts, the texture would be way off with the frozen ones.

15 Brussels sprouts, halved lengthwise
1 1/2 tablespoons butter
1 1/2 tablespoons olive oil
3 cloves garlic, smashed with the flat of a knife
freshly grated parmesan cheese (optional)
salt and pepper

Steps:

  • Melt butter and olive oil in a medium skillet (over medium-high heat) until butter is foamy.
  • Reduce heat to medium, add smashed garlic and cook until lightly browned.
  • Remove garlic and discard.
  • Add sprouts cut side down, cover, and cook without stirring on medium-low heat 10-15 minutes or until tender when pierced with a knife.
  • The cut side of the sprouts should get nice and browned, with a nutty, buttery flavor enhanced by garlic.
  • Top with freshly grated parmesan and salt& pepper to taste.

1 pint brussels sprouts (about a pound)
4 to 6 tablespoons extra virgin olive oil, to coat bottom of pan
5 cloves garlic, peeled
Salt and pepper to taste
1 tablespoon balsamic vinegar

Steps:

  • Heat oven to 400 degrees. Trim bottom of brussels sprouts, and slice each in half top to bottom. Heat oil in cast-iron pan over medium-high heat until it shimmers; put sprouts cut side down in one layer in pan. Put in garlic, and sprinkle with salt and pepper.
  • Cook, undisturbed, until sprouts begin to brown on bottom, and transfer to oven. Roast, shaking pan every 5 minutes, until sprouts are quite brown and tender, about 10 to 20 minutes.
  • Taste, and add more salt and pepper if necessary. Stir in balsamic vinegar, and serve hot or warm.

2 lbs Brussels sprouts
2 heads garlic

Steps:

  • Preheat the oven to 400 degrees.
  • Rinse the brussels sprouts and trim the bottoms. If they are very large, cut them in half.
  • Separate the garlic cloves and peel them.
  • Toss the brussels sprouts and garlic cloves with the olive oil, salt & pepper until they are well coated.

  • Heat the oven to 400 F / 200 C / Gas 6.
  • Slice the ends off of the sprouts and remove loose, discolored, or damaged leaves from the outside. Cut each sprout in half lengthwise and put them in a large bowl.

400g/14oz Brussels sprouts, cut in half
2 tbsp olive oil
50g/1¾oz butter, at room temperature
3 garlic cloves, crushed to a paste with a little salt
½ nutmeg, freshly grated
40g/1½oz Parmesan, finely grated
10g/⅓oz finely chopped parsley
1 tbsp fresh lemon juice
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7.
  • In a large mixing bowl, season the sprouts and toss with the olive oil.
  • Line a large baking tray with baking paper and spread the sprouts on top, cut side down. Place on the middle shelf of the oven to roast for 10-15 minutes, or until the sprouts have softened underneath and coloured on top.

4 slices crusty, bakery-style white bread (about 5 ounces)
4 tablespoons unsalted butter, melted
1/4 cup freshly grated Parmesan

1 1/2 pounds Brussels sprouts
1/4 cup olive oil

  • Preheat the oven to 425 degrees F.
  • Remove the crusts from the bread slices. Cut the bread into large cubes. Transfer to a food processor and pulse until uniformly chopped (the pieces of bread should be slightly smaller than a peppercorn; you should have about 2 cups).

2 tbsp Olive Oil
2 tbsp Butter
4 Garlic cloves, (crushed)

  • In a large shallow pan* using medium heat, melt the butter with olive oil. Let the butter bubble a little then add the garlic cloves and cook until they turn pale-brown/lightly browned.

oil spray
3 Tbsp butter
1/2 tsp salt
1/4 tsp granulated garlic
1 vanilla bean or additional 1/2 tsp vanilla extract (paste or powder)
1/2 tsp vanilla extract
1/2 tsp agave or honey

Steps:

  • Preheat the oven to 400°F
  • Remove the loose outer leaves from the sprouts.
  • Trim a thin slice off the stem end and cut in half
  • Spread the sprouts out on a sheet pan in a single layer. Very lightly coat with high heat oil spray. Roast for 20-25 minutes or until the sprouts begin to brown.
  • While the sprouts are roasting get the good stuff going! Place the butter, salt, garlic, vanilla extract and sweetener in a small pot.
  • Use a sharp-pointed knife to cut a lengthwise slit in the vanilla bean pod. Open up the slit and scrape out the sticky seeds from the inside.
  • Add the vanilla seeds and the whole pod into the pot. Heat over a very low flame for 2 minutes and stir. Turn off the flame, and allow it to sit.
  • Once the sprouts are done roasting, place them in a large bowl. Gently reheat the butter mixture and remove the vanilla pod. Pour over the sprouts, toss and enjoy!

4 cloves garlic (very roughly chopped (leave the pieces a bit chunky; add more if you live in a house of garlic lovers))
1 ½ tablespoons extra-virgin olive oil

2 tablespoons freshly ground or grated parmesan
