  • Place potatoes in a large pot and cover with cold water. Bring to boil, then lower heat to simmer, uncovered for 10-12 minutes or until potatoes fall apart when pierced with fork. Drain potatoes in a colander and return potatoes to the pot. Mash potatoes until smooth. Stir in Ranch seasoning and sour cream. Serve immediately.

Steps:

  • Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan, add the salt, and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.
  • Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.
  • Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Remove outer skin from garlic head, leaving individual cloves intact. Cut 1/4 to 1/2 inch off the top, exposing all cloves. Coat top of garlic with olive oil and use your fingers to work it in. Wrap in foil and place in a baking dish.

1 (1 ounce) package Hidden Valley Ranch dip
1 whole onion
2 -3 tablespoons of minced garlic
1 -2 teaspoon olive oil
1 (8 ounce) package shredded cheddar cheese
1 (8 ounce) package shredded mozzarella cheese
0.5 (8 ounce) container sour cream

Steps:

  • Peel and Cube your potatoes, add to bowl. Cut your onions to your liking. I just diced mine. I like to taste bigger pieces of onions. Add onions, garlic and drizzle olive oil over those. Then add whole package of Ranch dip. Stir until all is mixed well. Put in microwave for 12-15 minutes until almost done and then put in oven set at 350 on cookie sheet for 10 minutes just to finish cooking and give them a crispness. Take out and add cheeses. Then return to oven just to melt cheese. Take out once again and either spread sour cream on top of whole thing or just in case everyone doesn't like it add it to your individual serving. I had to add a little salt and pepper to mine and it tasted wonderful! Enjoy.

3 whole garlic heads
1/2 cup pure olive oil
sea salt
fresh ground pepper
2 lbs yukon gold potatoes
1 -1 1/2 cup unsalted butter, at room temperature
1 tablespoon garlic paste
1 1/2 cups heavy cream, to taste
sea salt, preferably gray sea salt
fresh ground black pepper

Steps:

  • The night before, cube the potatoes, and put them in a large saucepan with salted cold water and place in the refrigerator overnight.
  • Roast the garlic: Preheat the oven to 350 degrees F, peel the outermost layers of skin off the heads of garlic; cut off the top 1/3 of the heads to open the cloves and heat olive oil in a large oven-safe saute pan over medium heat; Add garlic, and saute for about 10 minutes; Season with salt and pepper and transfer pan to the oven to roast for 15 minutes; Remove from heat and let cool.
  • For the garlic paste: Pop garlic cloves from their skins and place cloves in a blender, along with any olive oil left in the pan; Puree until smooth; you should have a paste-like consistency.
  • For the potatoes: The next day, add some more salt and then bring to a boil over high heat.
  • Cook until tender, about 10 minutes.
  • Drain well, place potato cubes in a food mill, and grind to remove skins.
  • Alternatively, smash the potatoes with a large fork or potato masher.
  • Heat 1 tablespoon of the butter in a large saucepan over medium heat until the butter stops foaming and turns a light brown.
  • Add the garlic paste and cook quickly.
  • Add the cream, season, to taste, with salt and pepper, and bring to a boil.
  • Reduce the heat to low and fold in potatoes with a wooded spoon or large whisk.
  • Add the remaining butter by tablespoons, until taste suits you, stirring after each addition.
  • Season with salt and pepper, to taste, and serve.
