Great little pizzas. Use this basic recipe and add, remove, modify with your favorite ingredients. Great for low-fat diets when you're craving some 'zaah!

2 whole wheat pita bread
30 g reduced-fat mozzarella cheese
1/2 cup pasta sauce (Ragu, etc)
1/4 cup chopped onion
1/4 cup chopped green pepper
50 g black forest ham (chopped)

Steps:

  • Preheat oven to 400.
  • Spread pasta sauce evenly over both pitas.
  • Sprinkle with onion, green pepper and ham.
  • Cover with cheese.
  • Place on a cookie sheet or baking stone and bake for 10 minutes (or until cheese starts to brown).

1/2 cup chopped zucchini
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
2 tablespoons chopped onion
2 tablespoons chopped carrot
1 garlic clove, minced
2 teaspoons butter
1/8 teaspoon Italian seasoning
1/8 teaspoon dried oregano
Dash pepper
1 prebaked mini pizza crust
1/3 cup chopped seeded tomato
1/3 cup shredded Italian cheese blend

Steps:

  • In a large skillet, saute the zucchini, peppers, onion, carrot and garlic in butter for 8-10 minutes or until tender. Sprinkle with Italian seasoning, oregano and pepper; toss to coat., Place the crust on an ungreased baking sheet or pizza pan. Spoon vegetable mixture onto crust to within 1/2 in. of edges. Top with tomato and cheese. Bake at 450° for 8-10 minutes or until cheese is melted.

1/3 cup button mushroom, thinly slice
1/3 cup zucchini, thinly sliced
1/8 teaspoon garlic powder
1/4 cup tomato sauce
1 fat-free whole wheat pita bread, 6-in diameter
2 tablespoons scallions, finely chopped
1 tablespoon fresh basil, slivered
1/4 teaspoon dried oregano
1 large pitted black olives, chopped
2 tablespoons fat free mozzarella cheese, shredded
1 tablespoon fat-free parmesan cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Place the mushrooms and zucchini in a large no-stick skillet, and coat with no-stick spray.
  • Cover and cook over med-high heat for 2 to 3 minutes, or until the mushrooms start to release their juice.
  • Remove the cover and cook, stirring occasionally, for 1-2 minutes, or until the mushrooms and zucchini are golden.
  • Stir in the garlic powder and 2 tbsp tomato sauce. Set aside.
  • Place the pita bread on a baking sheet. Bake for 1 minute to crisp.
  • Remove from the oven and spread remaining tomato sauce.
  • Spoon on mushroom mixture.
  • Sprinkle the scallions, basil, oregano, olives, mozzarella, and Parmesan.
  • Bake for 8-10 minutes, or until cheese is melted and golden.

4 tbsp tomato purée
2 tsp mixed herb
2 tomatoes , sliced
6 slices salami , torn into small pieces
50g cheddar , grated

Steps:

  • Heat the grill. Spread each pitta bread with 1 tbsp tomato purée, sprinkle over the mixed herbs, then lay on the tomato slices. Divide the salami between the pittas, sprinkle over the cheese and grill until the cheese is golden and bubbling.

4 wholewheat pitta breads
4 tsp sun-dried tomato purée
3 ripe plum tomatoes , diced
1 shallot , thinly sliced
85g chorizo , diced
50g mature cheddar , grated
few basil leaves , if you like

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put a baking sheet inside to heat up. Spread each pitta with 1 tsp purée. Top with the tomatoes, shallot, chorizo and cheddar.
  • Place on the hot sheet and bake for 10 mins until the pittas are crisp, the cheese has melted and the chorizo has frazzled edges. Scatter with basil, if you like, and serve with a green salad.

This is my Mom and Dad's favorite pizza crust recipe. They never grill theirs. I never would have thought about adding oats to pizza dough, but this is really good. Recipe courtesy of The News Review, Roseburg, Oregon (sometime in the 1970s). We just made the dough and had pesto and vegetables for toppings.

3/4 cup warm water (105 to 115 degrees)
2 1/2 teaspoons quick-rising yeast
1 tablespoon olive oil
2 teaspoons sugar
1 1/2 cups all-purpose flour
1 cup quick oats or 1 cup old fashioned oats, uncooked
1/4 teaspoon salt
2 cups cheddar cheese, blend shredded
1/2 cup bell pepper, thinly sliced
1/2 cup red onion, thinly sliced
1/4 cup fresh basil or 4 teaspoons dried basil
2 garlic cloves, minced
4 plum tomatoes, thinly sliced (about 2 cups)

Steps:

  • In small bowl, combine water, yeast, oil, and sugar and let stand for 10 minutes or until foamy.
  • In large bowl, combine flour, oats, and salt. Add yeast mixture and blend on low speed of electric mixer until moistened.
  • Beat 2 minutes at medium speed. Do not use a hand-held mixer.
  • Turn dough out onto lightly floured surface. Knead 1 minute.
  • Shape dough into ball and place in greased ball, turning once. Cover and let rise in warm place 20 minutes or until nearly doubled in size.
  • Punch dough down and divide. Divide into 4 portions.
  • Press each portion of dough into 7 inch circle.
  • Grill over medium-hot coals 2 to 4 minutes or until bottom is golden brown. Remove from grill.
  • On browned side of each pizza sprinkle 1/2 cup cheese.
  • Top pizzas with bell pepper, onion, basil, garlic, and tomatoes, dividing evenly.
  • Return to grill. Cover and grill 4 to 6 minutes or until bottoms of crust are golden brown and cheese begins to melt.
  • Sprinkle with remaining 2/3 cup cheese. Remove from grill once cheese has melted.
  • Makes 4 individual pizzas.
  • Baking directions: Heat oven to 425.
  • Spray 2 cookie sheets with cooking spray.
  • Pat each portion of dough into 7 inch circle onto prepared cookie sheet.
  • Layer each pizza with 1/2 cup cheese, peppers, onion, garlic, and tomatoes.
  • Bake 20 to 25 minutes or until crust is golden brown.
  • Sprinkle with remaining 2/3 cup cheese and continue baking 3 to 4 minutes or until cheese is melted.

I once had a craving for a pizza, but I didn't have the things to make pizza dough, so I got this idea! A good recipe for kids, too. I use pocket-less pitas we buy from Indian grocery, but I'm sure regular will work. Note: I edited this recipe by making more exact ingredient amounts, sorry about the previous vagueness, I posted this recipe back when I was just 10 or 11. :)

1 pita bread
2 tablespoons spaghetti or 2 tablespoons pizza sauce
1/4 cup mozzarella cheese, shredded
spices (oregano, basil, garlic powder) or dried herbs (oregano, basil, garlic powder)
olive oil (optional)

Steps:

  • Brush on a little olive oil on the pita.
  • Spread sauce on top of the pita.
  • Sprinkle on the shredded cheese.
  • Sprinkle on pinches of desired herbs and spices, and add any toppings you'd like.
  • Place on baking sheet, bake for 5-7 minutes at 400°, or until cheese is melted (times may vary).
  • Slice with pizza cutter and enjoy!
