1 lb rigatoni pasta
2 tablespoons olive oil, divided
1 lb ground beef (I used ground sirloin)
2 garlic cloves, crushed
1/4 teaspoon fresh ground pepper
1 (28 ounce) can good quality crushed tomatoes
butter, for pan
salt
1 cup finely grated parmesan cheese
8 ounces coarsely grated mozzarella cheese

Steps:

  • In a large pot of salted boiling water, cook pasta until slightly underdone (I cooked mine for 12 minutes when the box indicated 14 minutes). One pound of pasta should be cooked in 6 quarts of water, make sure you are using a big enough pot so the pasta doesn't stick together. When done, rinse in cold water and drain again. Toss pasta with 1 Tablespoon olive oil to coat. Set aside.
  • Heat remaining 1 Tablespoon olive oil in a large skillet over medium-high heat. Add ground beef. Cook, stirring occasionally until browned. Add garlic, 1 teaspoon salt and pepper. Cook 2 minutes more.
  • Add crushed tomatoes; simmer until thickened, about 20 minutes.
  • Toss pasta with Parmesan cheese. Butter a 9-inch springform pan. Tightly pack pasta into pan, standing each piece on end. Spread meat sauce on top of pasta.
  • Push the meat sauce into the pasta holes filling each one up. Stuffing the meat into the holes is a weirdly satisfying task. Enough said.
  • Place in a 400 degree oven for 15 minutes. Sprinkle mozzarella cheese on top and bake another 10-15 minutes until cheese is golden. Remove from oven and let stand for 15 minutes. Run a knife around the edge to loosen and then unmold.
  • Cut into wedges and serve with any remaining meat sauce you might have.

1 1/2 pounds ground beef
1/4 cup chopped fresh parsley leaves
1 cup bread crumbs
1 small onion, chopped
3 large eggs
1/2 cup Parmesan
1/2 teaspoon salt
1/4 teaspoon pepper
5 cups cooked tubetti pasta (tiny tubes or baby shells work best)
1/2 pound shredded mozzarella
1/2 pound shredded provolone
3/4 cup grated Parmesan, plus extra for garnish
2 cups Adriana's tomato basil sauce, recipe follows
1/3 cup olive oil
4 cloves minced garlic
1/2 teaspoon crushed red pepper flakes
56 ounces canned tomatoes
24 ounces tomato paste
56 ounces water
1 1/2 tablespoons salt
1 teaspoon black ground pepper
3/4 cup sugar
1 cup fresh whole basil leaves
1 (2-ounce) chunk Romano cheese

Steps:

  • Crust:
  • Mix crust ingredients gently to combine. Do not over mix. Put mixture into a lightly greased 10-inch pie plate. Shape meat to form a 1-inch thick crust.
  • Filling:
  • Preheat the oven to 350 degrees F.
  • Mix filling ingredients and scoop into meat crust.
  • Bake for 1 1/2 hours. Let pie cool for 15 minutes before cutting into 8 pie slices. Top each slice with Adriana's Tomato Basil Sauce and sprinkle with a little Parmesan.
  • In large pot, cook garlic and red pepper flakes in oil on low heat for 3 to 5 minutes only. Add tomatoes, paste, water, all seasonings, and fresh basil. Bring to a boil and then reduce to low heat. Add the chunk of Romano cheese. Cook for 2 1/2 to 3 hours stirring often.

4 pints cherry tomatoes, halved
Good olive oil
2 tablespoons minced garlic (6 cloves)
18 large basil leaves, julienned, plus extra for serving
1/2 teaspoon crushed red pepper flakes
Kosher salt
1/2 teaspoon freshly ground black pepper
1 pound dried angel hair pasta
1 1/2 cups freshly grated Parmesan cheese, plus extra for serving

Steps:

  • Combine the cherry tomatoes, 1/2 cup olive oil, garlic, basil leaves, red pepper flakes, 1 teaspoon salt, and the pepper in a large bowl. Cover with plastic wrap, and set aside at room temperature for about 4 hours.
  • Just before you're ready to serve, bring a large pot of water with a splash of olive oil and 2 tablespoons salt to a boil and add the pasta. Cook al dente according to the directions on the package (be careful - it only takes 2 to 3 minutes!). Drain the pasta well and add to the bowl with the cherry tomatoes. Add the cheese and some extra fresh basil leaves and toss well. Serve in big bowls with extra cheese on each serving.

Ingredients
1 Tbsp Olive Oil
1 Cup chopped onion
4 Garlic cloves, minced
3 Cups cooked linguine (15Pts)
1/4 C chopped fresh parsley
1 Tbsp fresh lemon juice
1 1/2 Tsp dried oregano
1 1/2 Tsp dried basil
1/4 Tsp fresh ground black pepper
1 Cup park-skim ricotta cheese (12 Pts)
1/4 Cup grated parmesan cheese (4 Pts)
1 Large egg lightly beaten (2 Pts)
2 Medium tomatoes cored & thinly sliced
1 1/2 Cups thinly sliced zucchini
1 1/2 Ounces. shredded part-skim mozzarella cheese (3 Pts)

Steps:

  • Directions 1. Preheat oven to 375°. Spray 8" springform pan with non-stick cooking spray. 2. In small non-stick skillet heat oil; add onion & garlic. Cook over medium heat until onion is translucent, 3 minutes. 3. Transfer onion to medium bowl. Add linguine, parsley, lemon juice & 1/2 tsp each oregano & basil. Add pepper & toss well. 4. In another bowl combine ricotta, 2 Tbsp Parmesan cheese, the egg and remaining oregano & basil; stir into linguine mixture until blended. 5. Place half the linguine mixture in prepared pan. Arrange half the tomato & zucchini slices on top. Add remaining linguine mixture. Top with the rest of the tomato & zucchini; sprinkle with mozzarella & remaining parmesan cheese. Cover with foil & place on parchment covered baking sheet. Bake 35 minutes. Remove foil & bake until golden, 5 minutes longer. Let stand 10 minutes before cutting. Cook's Note: I like to pre-cook the zucchini a little to soften; use fresh basil in place of dried; substitute summer squash or use both; split the linguine mixture into thirds to have two layers of vegetables inside. Adjust points value to increase to 8 servings or decrease to 4 servings depending on your appetite.

This is especially good when all of the veggies and herbs are in season. I've served this for a weekend breakfast, ladies lunch and even dinner. When served for dinner I grilled chicken breasts. Possible you could cook diced chicken right on top of the pie but I haven't tried it. You may use the lower fat versions of any or all of the cheeses with good results.

1 tablespoon olive oil
1 cup onion, chopped
4 garlic cloves, minced
3 cups cooked linguine
1/4 cup fresh parsley, chopped
1 tablespoon lemon juice
1 1/2 teaspoons oregano, minced if fresh
1 1/2 teaspoons basil, minced if fresh
1/4 teaspoon fresh ground black pepper
1 cup ricotta cheese
1/4 cup parmesan cheese, grated
1 egg, lightly beaten
3 medium tomatoes, sliced
3 cups zucchini, sliced
1 1/2 ounces mozzarella cheese, shredded

Steps:

  • Preheat oven to 375. Spray 8" springform pan or cake pan with nonstick cooking spray.
  • Heat oil in small skillet. Add onion and garlic. Cook over med heat until onion is transparent.
  • Place onion and garlic mixture in medium bowl. Mix in linguine, parsley, lemon juice, pepper 1/2 teaspoon each oregano and basil.
  • In small bowl combine ricotta, 2 tablespoons of the parmesan cheese, egg and remaining oregano and basil. Stir into linguine mixture.
  • Place half the linguine mixture in prepared pan.
  • Using half of each, place a layer of tomato, then a layer of zucchini.
  • Layer remaining linguine mixture.
  • Top with a layer of tomato and a layer of zucchini.
  • Sprinkle with mozzarella and remaining parmesan cheese.
  • Cover with foil.
  • Bake 35 minutes. Remove foil and bake another 5 minutes to melt and toast the cheese. Let stand 10 minutes before cutting.
  • If you prefer your veggies a little on the crunchy side just reduce the cooking time.

With just a few extra minutes of prep time, a classic baked pasta dinner is transformed into an eye-catching pie. To save time, instead of making your own tomato sauce, you can substitute 4 cups of smooth-textured, store-bought marinara.

6 tablespoons extra-virgin olive oil
9 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
One 28-ounce can whole peeled tomatoes in juice
One 15-ounce can whole peeled tomatoes in juice
1 cup loosely-packed fresh basil leaves
Kosher salt and freshly ground pepper
1 pound rigatoni
1 pound part-skim mozzarella, grated
2/3 cup grated Parmesan cheese

Steps:

  • Heat 4 tablespoons of the olive oil with the garlic in a large saucepan over medium-low heat. Once it begins to sizzle, cook, stirring occasionally, until the garlic is soft and just beginning to brown, about 6 minutes. Stir in the chile flakes, then add the tomatoes and 1 1/2 cups water. Increase the heat to high and bring the tomato sauce to a boil, crushing the tomatoes with the back of a wooden spoon. Lower the heat to maintain a simmer and cook, stirring occasionally, until reduced and thickened, about 15 minutes. Remove the pan from the heat, stir in the basil and season with salt and pepper. Let the sauce cool for 10 minutes then puree in a blender until smooth.
  • Preheat the oven to 375 degrees F. Grease a 9-inch springform pan with 1 tablespoon olive oil and bring a large pot of generously salted water to a boil. Cook the pasta until it is slightly less than al dente, about 8 minutes. Drain the pasta, spread in a single layer on a rimmed baking sheet and toss with the remaining 1 tablespoon olive oil.
  • Stand the rigatoni on their ends in the prepared pan until it is completely filled (you might not use all the pasta). Place the pan on a foil-lined baking sheet to catch drips. Pour the sauce over the noodles, spreading it with the back of a spoon (You might not use all the sauce.) Sprinkle the pasta with the mozzarella and Parmesan cheeses.
  • Cover the pan with foil, doming it slightly to avoid touching the cheese. Bake for 30 minutes. Uncover the pan and continue cooking until the top is golden brown and bubbly, about 30 minutes more. Let the pasta cool for 10 minutes, then carefully remove the sides of the pan, cut into wedges and serve.

350g penne
140g broccoli , cut into small florets
100g sugar snap pea , halved
2 courgettes , diced
1 tbsp olive oil
100g light cream cheese
50g grated parmesan (or vegetarian alternative), plus extra to serve
zest and juice 1 lemon
large handful basil

Steps:

  • Cook the penne according to pack instructions, adding the broccoli florets and sugar snap peas to the pan for the final 3 mins.
  • Meanwhile, gently fry the courgettes in oil for 7-8 mins until soft and tinged pale gold. When the penne and vegetables are almost ready, remove a ladleful of cooking water from the pan. Add 6 tbsp of this to the pan of courgettes, along with the cream cheese, Parmesan, lemon zest, half the lemon juice and seasoning. Stir to make a smooth, creamy sauce.
  • Drain the penne and vegetables, then mix with the creamy sauce, adding the basil, extra lemon juice and seasoning to taste. Serve in warmed bowls.
