Another imitation from my trip to Costa Rica. A very typical side dish- potatoes cooked and served on corn tortillas, called "gallitos" in Costa Rica. ("Papas" are potatoes).

Number Of Ingredients 7

3 large potatoes
2 garlic cloves, chopped finely
3 tablespoons vegetable oil
1 teaspoon sugar
1 teaspoon paprika (if you can find it) or 1 teaspoon ground annatto seed (if you can find it)
4 corn tortillas
2 teaspoons chopped coriander, if desired, as garnish

Steps:

  • Peel potatoes and dice into small pieces.
  • Sauté the finely chopped garlic in the oil and add some salt, about 1 teaspoon.
  • Add the potatoes, sugar, and paprika.
  • Cover the pan and cook on low heat, about 20 minutes, adding water as needed to prevent the potatoes from sticking.
  • Remove and serve on the corn tortillas, which you can warm in the oven on a cookie sheet at 200°F.
  • Garnish, to taste, with chopped coriander, salt, and pepper.
  • Also, a little sour cream or salsa is often served as an accompaniment.

I was lucky enough to spend part of the summer in Costa Rica. This is the traditional dish that every Tico eats for breakfast, lunch, and probably dinner. I never got used to it for breakfast, but this is what I've come up with to imitate my travels there.

2 cups cooked white rice
2 cups cooked black beans
1/2 cup bean stock or 1/2 cup chicken stock, if bean not available
1/2 onion, chopped
1 bell pepper, chopped
2 garlic cloves, chopped
2 tablespoons fresh coriander, chopped
2 tablespoons vegetable oil
heavy cream, as desired topping

Steps:

  • Fry onion and bell pepper in the vegetable oil, about 3 minutes.
  • Add the garlic and sauté a bit more.
  • Pour in the beans and the stock, bring to a simmer.
  • Avoid the mixture drying up.
  • Add in the rice and stir thoroughly, gently.
  • Don't mash the beans!
  • Season to taste with salt and pepper.
  • Right before serving, stir in the coriander, and top with heavy cream if desired.

1/2 lb beef, cubed
1/2 lb bacon, cubed
4 linguica sausage, sliced thinly
1 pork trotter
3 tablespoons oil
2 small red potatoes, diced
2 onions, chopped
2 garlic cloves, minced
salt, to taste
chili paste, to taste
1 cup white wine
1 cup water
5 1/4 cups cornmeal
1/2 cup dried black-eyed peas
2 large sweet potatoes, diced
1/2 cup savoy cabbage, shredded
2 bay leaves

Steps:

  • Add the beef, bacon, sausages and pig trotter to a pot. Add oil and saute for 5 minutes. Add the red potatoes, garlic, onion, chilli paste, bayleaves and salt. Saute until onions are translucent, stirring occasionally. Add 1 cup white wine then cover the pot and reduce to a simmer. Check in 20 minutes. Add cup of water. Return to a simmer and cook for 20 minutes, topping-up the water as necessary.
  • Meanwhile add the corn and beans to a pot with enough water to cover. Bring to a boil and cook covered until the beans are tender (1 1/2 hour approx.). Transfer to a larger pot and add the meat mixture. Add a little more water, if necessary then bring to a boil and cook for 30 minutes before adding the potatoes, cassava and cabbage.
  • Cook for a further 25 minutes then take off the heat, allow to stand for 10 minutes and serve immediately.

12 ounces sea bass, cut into bite sized pieces
6 ounces sea scallops, cut into bite sized pieces
6 ounces shrimp (31-40 count blanched and cut into bite sized pieces)
1 small red onion, peeled, diced fine
2 jalapenos, diced fine (remove seeds for less heat)
1 medium cucumber, peeled, diced
1 yellow bell pepper, seeded, diced
1 teaspoon sea salt
1/2 cup lime juice
1/4 cup lemon juice
1/4 cup pineapple juice
lime wedge, garnish (optional)
pineapple, garnish (cut into wedges)
tortilla chips, garnish (optional)

Steps:

  • In a large non- metal mixing bowl, combine fish, seafood, and half of the diced vegetables with salt and all 3 juices.
  • Refrigerate overnight stirring occasionally.
  • Add remainder of vegetables 1 hour before serving.
  • Serve in chilled martini glasses with wedges of lime and pineapple.

2 ounces white rum
5 teaspoons sugar
1 lime
1 tablespoon strawberry syrup
4 ounces carbonated lemon-lime beverage

Steps:

  • Cut up lime. Place in Shaker.
  • Add 5 teaspoons sugar.
  • Use muddler and smash limes until it makes a syrup consistency with the sugar.
  • Add White Rum and ice.
  • Shake in shaker.
  • Pour Strawberry Syrup in to glass.
  • Add Lemon Lime Soda to glass.
  • Pour shaker into glass.
  • Stir. Drink. Enjoy!
