3 Tbsp butter
1 square baker's chocolate

Steps:

  • 1. Melt butter in double boiler, add chocolate. When melted, add sugar, cream and corn syrup. Boil until mixture forms a soft ball in water. Then remove from heat and serve.

1/3 cup packed light brown sugar
1/3 cup light corn syrup
Pinch of kosher salt
8 ounces bittersweet or semisweet chocolate (or a combination), chopped
1/4 cup unsweetened cocoa powder
1 tablespoon vanilla extract

Steps:

  • Combine the heavy cream, butter, brown sugar, corn syrup and salt in a saucepan. Bring to a simmer over medium heat, whisking. Add the chocolate and cocoa powder, reduce the heat to low and cook, whisking, until the chocolate is melted and the sauce is smooth, 1 to 2 minutes.
  • Whisk in the vanilla. Let cool 10 minutes before serving. To store, let cool completely, then cover and refrigerate up to 2 weeks; reheat before serving.

  • Combine the sugar, cream, cocoa and butter in a small saucepot over medium heat and cook, stirring, until the butter melts and everything is combined, a few minutes.
  • Transfer to a mason jar and store in the refrigerator. It will harden as it cools so when ready to use, simply reheat in a saucepan over medium-low heat.

1 1/2 unsweetened chocolate squares, shaved or broken up
1/4 cup cocoa
3/4 cup sugar
1/4 cup table cream
1/8 teaspoon salt
1 teaspoon vanilla

Steps:

  • Melt the butter and chocolate over low heat in a heavy saucepan, stirring until smooth.
  • Stir in cocoa, sugar, cream and salt and then bring slowly to boil. My mom always said do not stir, but to dissolve the sugar I've found using a whisk works fine.
  • Remove from heat and blend in vanilla.
  • Serve warm.
  • May be reheated very slowly.

1 cup butter
4 cups confectioners' sugar
2 ⅔ cups evaporated milk
1 teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • In a large saucepan, combine the chocolate chips and butter. Cook and stir over low heat until melted.
  • Gradually mix in the sugar and milk. Increase heat to a boil. Cook, stirring constantly, for 8 minutes. Remove from heat, and then stir in vanilla and salt. Serve warm. Store in refrigerator.

  • Transfer to a clean jar with a fitted lid. Will keep in the refrigerator for up to 1 week. It thickens as it cools; to bring it back to pourable consistency, put it in a double boiler and warm it over low heat.
