Steps:

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

I made this particular sauce a week ago today, as a trial run...my friend had talked me into trying it...as she shared this recipe with me a year ago...I never got around to making it, but wanted something different for my guests this Thanksgiving. Let me just say it's fantastic...she makes it every year, and I will be as well...

2 c water
1 c sugar
1/4 c maple syrup
16 oz fresh cranberries
1/3 c fresh squeezed orange juice
3 Tbsp orange rind - chopped + 1 1/2 tbsp orange zest ( about 3 oranges )
1 c fresh, diced pineapple
1 Tbsp candied ginger, thinly sliced + 1 1/2 tablespoons fresh ginger, minced
1 c toasted, chopped pecans
1/2 tsp cinnamon ~ optional

Steps:

  • 1. Preheat oven to 350 degree F. Place pecans on a sheet pan. Bake for about 10 minutes or until starting to brown, don't burn. Set aside and chop once cool.
  • 2. Zest an orange to make 1 tablespoonful. Using a potato peeler, take several strips of zest from an orange to make 3 tablespoonful, finely chopped. Squeeze juice from oranges to make 1/3 cup. Slice candied ginger thinly to make 1 tablespoonful. Mince fresh ginger to make 1 1/2 tablespoonful. Dice 1 cup fresh pineapple.
  • 3. In a medium saucepan, bring sugar and water to a boil. Reduce heat and simmer for about 15 minutes or until syrup starts to thicken some. Add the maple syrup and simmer a couple minutes more.
  • 4. Add the cranberries and cook for about 5 minutes. Cranberries will begin to pop and skin will split. Stirring often.
  • 5. Reduce heat and add the zest, rind and orange juice - cook 5 minutes, stirring occasionally.
  • 6. Now, stir in the fresh ginger, candied ginger and pineapple. Cook another 5 minutes or until thickening. The sauce will thicken more as it cools
  • 7. Remove sauce from stove and stir in the toasted pecans. Cool, then place in a jar with a lid, or bowl. This sauce should be made a week before serving, for the flavors to merry!
  • 8. Enjoy! It's delicious!

1 cup water
1 cup white sugar
1 (12 ounce) package fresh cranberries
1 orange, peeled and pureed
1 apple - peeled, cored and diced
1 pear - peeled, cored and diced
1 cup chopped dried mixed fruit
1 cup chopped pecans
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • In a medium saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in cranberries, pureed orange, apple, pear, dried fruit, pecans, salt, cinnamon, and nutmeg. Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst. Remove from heat, and let cool to room temperature.

12 ounces cranberries
1 cup white sugar
1 cup orange juice

Steps:

  • In a medium sized saucepan over medium heat, dissolve the sugar in the orange juice. Stir in the cranberries and cook until the cranberries start to pop (about 10 minutes). Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools.

This recipe is my Great Grandmother's...It has been in our family for many many years. The celery and walnuts add great texture and flavor. The preparation can be done in between other tasks and it's definitely worth it and not your plain old cranberry sauce! Sometimes I make this throughout the year and freeze it in individual containers for a fantastic breakfast. It freezes very well.

1 (16 ounce) package fresh cranberries
3/4 cup sugar
2 (3 ounce) packages fruit flavored gelatin (can use cranberry with orange or lime)
2 cups water, boiled
2 cups ice
1 red apple
1 navel orange
1 1/2 cups red seedless grapes
1 stick celery
1 cup walnuts

Steps:

  • Chop the cranberries in a food processor. Place the cranberries in a bowl, add sugar and set aside in the fridge.
  • Dissolve gelatin into boiled water. Once dissoved, add ice and stir until melted.
  • Pour gelatin into a 13x9 glass pan and set in the fridge until almost set (20-30 minutes).
  • While the gelatin is setting, chop all other ingredients:
  • Quarter apple & remove seeds, but leave on the skin. Chop in food processor and place in a mixing bowl.
  • Peel the orange, leaving on about 1/2 of the peel. Quarter and chop. Place in the bowl.
  • Cut seedless grapes in halves or quarters, depending on their size. Place in the bowl.
  • Quarter the celery and add the walnuts to processor for chopping. Place in the bowl.
  • Once you have completed chopping, the gelatin should be set. Take the 13x9 pan out of the fridge, stir in the cranberry mixture & the other chopped ingredients.
  • Spread everything out evenly & return to fridge. Allow gelatin to finish setting (about another 20-30 minutes).
  • NOTE: If gelatin gets solid before your ingredients are ready, you can still make it. It will mix okay and set up again.
