PERFECT SUMMER FRUIT SALAD
The perfect fruit salad for a backyard bbq or any occasion. There are never leftovers! This is one of my favorite fruit salad recipes, as I think the sauce really makes it. This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

Steps:
- Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
- Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

FRUIT SALAD WITH ORANGE-VANILLA SYRUP

Steps:
- Place the sugar, 1 cup water, orange zest, juice and vanilla bean in a small pan and stir to dissolve the sugar. Then bring to a boil. Turn the heat to low and simmer for about 15 minutes to thicken. Set aside to cool.
- Prepare all the fruit in a large bowl, pour the cooled syrup over the top and toss together. Decorate with mint leaves and chill until ready to serve.

- Drain pineapple, reserving juice in a 1-cup measuring cup. In a large bowl, combine the pineapple, pears, peaches and grapes. Cover and refrigerate. , Add enough water to pineapple juice to measure 1 cup. Pour into a small saucepan. Whisk in pudding mix. Bring to a boil over medium heat, stirring constantly. Remove from heat; set aside to cool to room temperature., Slice bananas into a small bowl. Drizzle with lemon juice; gently toss to coast. Let stand for 5 minutes; drain. Add bananas and cherries to chilled fruit. Add cooled pudding; toss gently to combine. Refrigerate until serving. Refrigerate leftovers.

- Drain pineapple, reserving juice; set pineapple aside. Add enough cold water to juice to make 6 cups. , In a very large bowl, whisk juice mixture and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in the oranges, apples and reserved pineapple. Refrigerate until chilled.

WINTER FRUIT SALAD
Make the most of autumnal fruits in this refreshing and nourishing salad - make a batch and eat during the week

Steps:
- Tip the fruits and 700ml/11⁄4 pints cold water into a large saucepan. Add the honey and vanilla, scraping the seeds from the pod into the pan. Bring to the boil. Stir well, lower the heat and simmer for 10 minutes until slightly syrupy.
- Take the pan off the heat and stir in the tea bag. Leave to infuse for 10 minutes.
- Discard the tea bag and vanilla pod, tip the fruits and liquid into a non-metallic bowl and pour over the lemon juice. Stir, then leave to cool. Cover and chill until ready to serve.

FRUIT SALAD WITH APPLE VANILLA SYRUP
This fruit salad is amazing, and there is NO ADDED sugar to the syrup because it's made with 100% pure apple juice. The colors of the strawberries, blueberries and mangoes together are absolutely beautiful. This is now my new signature "summer" dish that people ask me to bring to picnics and cook outs. I found this in Vegetarian times. It was mentioned that the vanilla apple syrup alone can be used as a sweetener for plain yogurt, iced tea or cocktails, in place of simple syrup made with sugar.

Steps:
- Place apple juice and lemon zest in a pot.
- Slice the vanilla bean in half, and scape out the seeds into the juice. Add bean pod to the pot as well.
- Bring to a boil over medium high heat.
- Reduce to medium low and simmer for 30 minutes, or until mixture is syrup-like and reduced to 1/3 cup.
- Remove lemon zest and vanilla bean, and cool to room temperature.
- Sometimes I strain the cooled syrup through a mesh strained if there are pieces of the bean pod still left behind.
- Toss mangoes, strawberries and blueberries with the syrup and serve.
