RUM RAISIN MUFFINS
Both men and women enjoy these rum-flavored, raisin-filled goodies. I think they're best served warm with mugs of hot coffee or cappuccino.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine 1-1/2 cups flour, baking powder and baking soda; add to creamed mixture alternately with milk, beating just until combined. Toss raisins with remaining flour. Fold raisins and pecans into batter. , Fill paper-lined muffin cups two-thirds full. Bake at 375° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Immediately brush muffins with syrup. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

BAKED APPLES WITH RUM SOAKED RAISINS
A wonderful side dish to any pork dish. I serve it instead of applesauce. I never have leftovers with this one.

Steps:
- Preheat oven to 350 degrees.
- Place sliced apples and raisins in a greased casserole dish.
- Mix all dry ingredients, sprinkle over apples & raisins.
- Mix lightly to cover apples with sugar/cinnamon mixture.
- Bake for 45 minutes.
- DO NOT over bake, as apples will be mushy.
FRUIT FILLINGS: RUM-RAISIN APPLE; BLUEBERRY
Steps:
- APPLE 1. Bring rum and raisins to a boil in a heavy medium sauce pan. Remove from heat and let stand, covered, for 1 hour. 2. Rub together with your fingers, in a bowl, brown Splenda, flour, zest, nutmeg and salt until no bumps remain. 3. Peel and core the apples, then cut into 1/2" wedges. Add to the Solenda mix, tossing gently to mix. Add the raisnis, with any fluid and mix until combined. Set aside in refrigerator. BLUEBERRY 1. Measure out 1 1/2 cups of the blueberries, choosing the softest, and placing them in a sauce pan with 1/2 cup of water. Cover and bring to a boil. 2. Meanwhile, in a small bowl, mix together the corn starch and 1/4 cups of water. Set aside. 3.When the blueberries have come to a boil, lower the heat and simmer, stirring constantly for 3-4 minutes or until the start to burst and the juuices have begun to thicken. Stirring constantly, add the cornstarch mixture, Splenda, lemon juice and salt. Simmer a minute or two until the mixture becomes translucent. Immediately remove from the eat and stir into the berries. Set aside in refrigerator.
BAKED APPLES WITH RUM AND CINNAMON
These are so satisfying and don't break the calorie bank if eaten without the ice cream. They can also be made without the rum. I have suggested rum raisin ice cream because I love the combination, but vanilla ice cream or even lemon sorbet would be just as delicious.

- For the glaze: In a medium saucepan, combine the dark brown sugar, rum, salt, nutmeg, cinnamon, and cloves. Stir to blend and bring to a simmer over medium heat. Cook and reduce for 3 to 4 minutes to allow the sugar and other ingredients to blend together.
- For the apples: Preheat the oven to 375 degrees F.
- In a baking dish large enough to hold all of the apples, arrange the apples in a single layer. Put a cinnamon stick inside the cavity made from coring each apple. Pour the glaze over the apples and top each with pieces of butter. Add the cider to the bottom of the dish and place it in the center of the oven.
- Cook the apples, basting them from time to time, until they are tender but not mushy, 25 to 30 minutes (smaller apples will take less time). Serve with scoops of ice cream, sour cream, or just by themselves. They are also delicious leftover.

- 1. For Filling: Place apples in a large saucepan. Add apple juice, white and brown sugar, cinnamon, nutmeg, ginger, and cloves (or Allspice). Bring to boil over medium heat, stirring occasionally.
- 2. Combine cornstarch with lemon juice; add to saucepan. Bring to boil again while stirring. Cook and stir until thickened.
- 3. Remove from heat; stir in raisins (do not drain!) and almond extract. Allow to cool; stirring occasionally. When cool, pour into 9-10 inch high side baking dish. (I used deep dish pie plate).
- 4. For crust: In medium bowl, cream butter and sugar. Add egg and mix well. Add flour and stir until incorporated. Batter will be thick. Spoon over filling and smooth out. Bake at 350 degrees for 40-45 minutes. Delicious hot or cold! Serve w/ or w/out ice cream or if feeling particularly decadent: Serve with Honey Butter Rum Sauce (also posted) if you dare!
APPLE, RUM AND RAISIN BREAD PUDDING

- In a large bowl, combine milk, eggs, vanilla and 1/2 cup of the brown sugar.
- Stir in bread cubes; let stand for at least 30 minutes; stirring occasionally.
- In a small bowl, combine raisins and rum or apple juice. Set aside.
- In another bowl, toss together apples, cinnamon and remaining brown sugar.
- Add raisin and apple mixtures to the softened bread, mixing well.
- Spread evenly in a greased 8"x8"x2" baking pan.
- Drizzle with the melted butter.
- Bake in a 375 degree Fahrenheit oven for 40 to 50 minutes or until golden brown and apples are tender.
- Serve warm or cold.

- Put all the ingredients for the mincemeat in a bowl and add brandy or rum to cover the fruit. Stir well, then let it rest overnight. The next day, stir again and then divide among sterilized preserving jars.
- To make the pastry, mix the flour, sugar, and salt in a large bowl. Rub the butter into the mixture until it is the consistency of fine breadcrumbs. Add the water and egg yolk and knead until the mixture comes together into a smooth dough. Alternatively, use a food processor to make the pastry. Wrap the dough in plastic wrap and let it rest for 30 minutes in the refrigerator.
- Preheat your oven to 350° F. Grease the tart molds with butter and cover the base of each with a small circle of parchment paper. Dust with flour.
- Briefly knead the pastry until smooth, then pat it into a rectangle and roll it out to a thickness of ⅛ inch. Use a round cutter with a diameter of 2¾ - 3¼ inches to cut out pastry circles. Gently push the pastry rounds into the tart molds. Prick the base or each tart shell three times with a fork.
- Knead the remaining dough back together and roll it out to cut out the lids-you can choose whichever shape you like, but stars are the most traditional.
- Divide the 8 ounces of filling among the tarts and press down gently. Place the lids on top and brush with the egg wash.
- Bake in the middle of the oven for 20-25 minutes until golden brown. Serve warm or cold.
