SCOTTISH MINT DELIGHT
This is a "delight" in more ways than one. First, it's so easy to put together; and 2nd, it's even easier to eat!!!! Very, very refreshing. A perfect frozen ice cream dessert. I've had this recipe for almost 30 years and I can barely read from the paper it was written on. That was a good indication that I need to get it posted somewhere so I can always have access to it! NOTE: In place if the vanilla ice cream, I have been using mint chocolate chip ice cream. I still add some creme de menthe to it. Also, you can easily experiment with different flavors of ice cream.

Steps:
- Mix the ground wafers with the melted butter. Pat into the bottom of a 9x11 pan.
- Spread the chocolate ice cream over the crust and freeze until firm.
- Blend the vanilla ice cream with the desired amount of Creme de Mint and enough green food coloring to bring the mixture to desired flavor and color.
- Spread on top of chocolate ice cream. You can sprinkle a few more chocolate wafers, crushed Oreo cookies, or even some mint chocolate chips that have been crushed over the top. Return to freezer and freeze until firm. Serve.
- Passive work time is the approximate time this needs to freeze between layers.

MINT TURKISH DELIGHT

- Oil an 8-inch square baking pan and line with plastic wrap. Oil plastic wrap.
- In a small bowl sprinkle gelatin over 1/2 cup cold water and let soften. In another small bowl stir together 1/8 cup cold water and cornstarch.
- In a 4-quart heavy kettle stir together remaining 1 1/4 cups cold water, granulated sugar, and mint and bring to a boil over moderate heat, stirring until sugar is dissolved. Stir in gelatin and cornstarch mixtures and boil over moderate heat, stirring constantly with a wooden spatula, 10 minutes (mixture will be very thick). Stir in food coloring. Pour mixture into baking pan, smoothing top with spatula, and cool. Chill confection, loosely covered, until set, about 4 hours.
- Sift 1 tablespoon confectioners' sugar onto a work surface. Invert confection onto sugar and peel off plastic wrap. Cut confection into 1/8-inch cubes. Sift remaining confectioners' sugar over cubes and toss to coat. Wrap cubes in parchment paper (do not use wax paper, plastic wrap, or airtight containers because confections will weep) and chill. Turkish delight may be made 2 weeks ahead and kept chilled, wrapped in parchment paper.
- Just before serving, recoat Turkish delight in additional confectioners' sugar.

- 1. Sift flour, salt and baking powder together. Cream shortening and white sugar until fluffy. Add eggs, vanilla and sifted ingredients, mix well. Spread batter very thin on baking sheet.
- 2. Fold brown sugar into beaten egg white. Spread over cookie batter. Bake in a slow oven (325 degrees) for approximately 30 minutes. Cool and cut into squares
