LANNETTE'S FROSTED CHOCOLATE DROP COOKIES
For many years these cookies have been our favorite 4th of July picnic cookies . . . soft and moist!

Steps:
- Preheat oven to 375°F.
- Cream butter and sugar; add eggs and vanilla; beat well.
- Add cocoa, then sour cream; beat till well blended.
- Sift remaining dry ingredients together, then add to creamed mixture.
- Drop from rounded teaspoonfuls onto greased baking sheets.
- Bake cookies 8 to 10 minutes. Frost while still hot.
- For frosting, combine all ingredients, and beat well. Start with 2-1/2 cups of the powdered sugar, and add more if needed. Frosting should be slightly thin.

CHOCOLATE FROSTED COOKIES

- Preheat oven to 350 F. Line 2 large baking sheets with silicone baking mats.
- In a large mixing bowl, beat butter and sugars together until well-combined.
- Mix in vanilla.
- Add in eggs one at a time, and mix in until combined.
- Stir in the flour, cocoa, baking soda, and salt until just incorporated.
- Drop by 1.5 tablespoon scoops (medium cookie scoop) 2 inches apart on the prepared baking sheet.
- Bake 10 minutes.
- Cool on baking sheet for 2 minutes before removing to a wire rack.
- To make the frosting, add cocoa powder, hot water, melted butter, and vanilla to a large bowl.
- Mix together until combined.
- Whisk in the powdered sugar until combined.
- Spread frosting over room temperature cookies.

COPYCAT LOFTHOUSE COOKIES
These sweet, frosted, cake-like cookies taste just like the ones you find in your supermarket bakery, only better.

- For the cookie dough: Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment.
- Whisk the cake flour, baking powder, baking soda and salt in a medium bowl. Mix the granulated sugar, butter and sour cream in the bowl of an electric mixer on medium-high speed until smooth, light and fluffy, about 3 minutes. Add the vanilla and egg and mix until combined. Reduce the speed to low, add the flour mixture and mix until just combined, about 1 minute.
- Using a 2-tablespoon ice cream scoop, drop level scoopfuls of dough onto the prepared baking sheets, making sure to leave 2 inches between each cookie. Dip the bottom of a glass cup into some cake flour. Gently press the cup on top of each mound of dough and flatten until you get a 1 1/2-inch circle, flouring the bottom of the cup as needed. Use a wet finger to smooth out any rough sides.
- Bake until the cookies puff up and are pale yellow and barely starting to brown on the bottoms, about 20 minutes. Let cool on the baking sheets for 1 minute, then transfer to a wire rack to cool completely, about 1 hour.
- For the frosting: Meanwhile, mix the confectioners' sugar, butter, cream, vanilla and 2 drops of the pink food coloring in the bowl of an electric mixer. Mix until light, fluffy and almost doubled in size, about 3 minutes.
- Frost the cookies with the frosting and sprinkle with confetti sprinkles.
COCOA DROP COOKIES
My mom made these when I was a kid and we all loved them. They're good plain, or with a simple powdered sugar icing on top. They are really great with a cold glass of milk!!

- Mix shortening, sugar and egg.
- Stir in the buttermilk and vanilla.
- Sift together dry ingredients and stir into buttermilk mixture.
- Chill at least 1 hour.

- Bake at 400° just until almost no imprint remains when lightly touched.

- In a large bowl, cream shortening and brown sugar. Beat in the egg, milk and vanilla. Beat in chocolate until blended. Combine the flour, baking powder, salt and baking soda; gradually add to the creamed mixture. Stir in walnuts. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. - Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
- Sift flour, soda, and salt together.
- In the top half of a double boiler, melt the chocolate over low heat.
- Cream together brown sugar, butter, and egg in a large mixing bowl. Slowly mix in the flour mixture and mix until well blended. Pour in melted chocolate, sour cream, and vanilla. Mix well and stir in nuts.

FLOURLESS COCOA COOKIES
Glossy and near black in color, these intense, easy-to-make chocolate cookies are like a cross between fudge and the deepest of brownies -- and gluten-free to boot. We discovered them in "The Fearless Baker" by Erin Jeanne McDowell. A little cinnamon gives them a spicy complexity, but you can leave it out for a more purely chocolate flavor. - Heat the oven to 350 degrees and line 2 rimmed baking sheets with parchment paper.
- In a large bowl, whisk the eggs until well blended.
- In another large bowl, sift together confectioners' sugar, cocoa powder, cinnamon and salt. Whisk into eggs, changing to a spatula when the batter becomes too thick to whisk. Stir in vanilla and chocolate.

- Bake, rotating front to back, and top to bottom, halfway through, until set around the edges, cracked on top and slightly underbaked in the middle, 10 to 13 minutes. Transfer to a rack and let cool completely on the baking sheets. Store carefully in an airtight container.
