FRIED DUCK FEET FROM 1917
I found this cookbook in a Thrift Store. It's dated 1917. Many of the pages are torn or ripped out. I just had to share this. Remember its from 1917.

Steps:
- Wash thoroughly 20 pairs of Duck feet and plunge them in boiling water for 3 minutes.
- Take off the skin. Take out all the bones without spoiling the shape of the feet. Cut each foot into 2 pieces.
- Have a hot stove. Oil the frying pan and fry the feet for 5 minutes. Add salt, bamboo shoots, chestnuts & mushrooms. Continue to fry for 5 minutes after having mixed well.
- Add enough primary soup or water to cover all. Cook until tender.
- Add Chinese gravy & mix well

If you have a jaccard, run it over the pounded breast so it's full of little lacerations; this helps the batter stick to the meat. Salt the duck breasts well.
- Mix the flour, seasoning, salt, baking powder and soda together in a bowl. Mix the buttermilk and the beaten egg together in another bowl. Put the duck breasts in the buttermilk. You can leave them there for a few hours if you need to, in the fridge.
