3 firm bananas, halved lengthwise
½ cup white sugar
1 ¼ teaspoons ground cinnamon
3 tablespoons butter

Steps:

  • Cut each banana half into 3 or 4 pieces.
  • Mix sugar and cinnamon together in a shallow bowl.
  • Melt butter in a skillet over medium-low heat; add banana slices and cook until golden brown, 5 to 10 minutes. Transfer banana slices to a paper towel-lined plate. Coat banana slices, 1 at a time, with cinnamon-sugar.

For frying:
3/4 cup sunflower oil (or other neutral frying oil)
2 to 4 regular bananas (or 6 to 8 mini sweet bananas)
1/4 cup all-purpose flour
1/2 cup rice flour
1/4 cup cornstarch
1/4 teaspoon salt
3 tablespoons coconut (dried, shredded unsweetened)
1/3 cup cold water
1/3 teaspoon baking soda
1 large egg
Few drops vanilla

Steps:

  • Gather the ingredients.
  • Heat a wok or skillet with oil about 3/4 to 1-inch deep.
  • Meanwhile, prepare the bananas by peeling and slicing them in half. Then slice each section in half again, but lengthwise this time.
  • In a medium mixing bowl, place all-purpose flour, 1/4 cup of rice flour, cornstarch, salt, and 2 tablespoons of the shredded coconut and stir to combine.
  • In a measuring cup, mix together cold water with baking soda until dissolved and pour into bowl with flour mixture.
  • Add the egg and the vanilla. Stir well until fully combined.
  • Place remaining 1/3 cup rice flour in a separate, dry bowl and add remaining one tablespoon shredded coconut. Mix well and set next to the batter.
  • Dip banana pieces first in the batter, then gently dredge them in the rice flour-coconut mixture. This last step helps firm up the batter and is the secret to creating a crisp, rather than soggy, coating. (Depending on the size of your bananas, you might need to make more of this rice flour-coconut mixture.) You're now ready for frying.
  • Make sure the oil is hot (350 to 375 F). You can test it with a breadcrumb. If it sizzles and cooks within a few seconds, the oil is hot enough for frying.
  • Carefully place coated bananas in the hot oil. Fry approximately 1 minute per side, or until batter puffs up slightly and turns light- to medium-golden brown. Remove from heat and drain on paper towel.
  • Serve your fried bananas as soon as possible as is, or with a side of coconut or vanilla ice cream. For a fancier presentation, place them on a serving platter and sprinkle with confectioners' sugar.

1/4 cup sugar
1 teaspoon salt
1/4 teaspoon ground nutmeg
1 egg, large, lightly beaten
1 tablespoon vegetable oil
1/2 cup milk
1 teaspoon vanilla
vegetable oil
9 bananas, firm and ripe, sliced into 1 inch pieces

Steps:

  • In a small bowl, combine the first four ingredients.
  • In a large bowl, combine the egg, oil, milk, and vanilla. Gradually add the flour mixture to the egg mixture, stirring often.
  • Pour the oil to a depth of 2 inches into a Dutch oven; heat to 375 degrees. Dip the banana slices into the batter; fry in hot oil 3 1/2 to 4 minutes or until golden. Drain on paper towels.

4 overripe American bananas
Oil, for deep frying
1 egg white
1/2 cup all-purpose flour, sifted
1/4 cup cornstarch
1/2 teaspoon baking powder
1/2 cup water, ice cold
1 tablespoon oil

Steps:

  • Cut the bananas into 1 inch length, set aside.
  • In a big bowl, mix all the ingredients in the Frying Batter together. Stir to mix well. Make sure the batter is smooth. Gently the bananas into the batter.
  • Heat up a small pot with 2-3 inches oil on high heat. The oil is ready when it's fully heated with a swirl of smoke coming from the surface.
  • Gently drop each piece of banana into the hot oil. Deep fry the bananas in batches. Turn the bananas over so both sides turn golden brown in color and become crispy.
  • Use a slotted spoon to remove the fried bananas out of the oil, drain on a plate lined with paper towels.
  • Repeat step 4 until bananas are used up. To serve, dust some powdered sugar on top of the bananas. You may also serve with maple syrup and chocolate sauce.

6 tablespoons all-purpose flour
2 tablespoons sugar
1 egg, beaten
1/4 cup milk
1 pinch salt
4 medium bananas (the firmer they are, the better)
peanut oil (for frying)

Steps:

  • Mix together the flour, sugar, egg, milk and salt to make a smooth, paste-like batter.
  • Leave to rest for one hour.
  • Peel the bananas and slice each one in half lengthwise, then across into chunks about three inches long.
  • Dip the banana pieces into the batter and shallow fry in hot oil for a few minutes or until golden brown all over.
  • Drain quickly on a wire rack or paper towel, and serve warm.
  • If you like, serve them with real maple syrup, powdered sugar, or honey, for extra sweetness.
