GREEK SALSA

Yield 2-3/4 cups salsa and 40 pita chips.

Steps:
- In a small bowl, combine the vinegar, 1 tablespoon oil, 1-1/2 teaspoons Greek seasoning and garlic; set aside. , In a large bowl, combine the tomatoes, cucumber, feta cheese, onion and olives. Drizzle with vinegar mixture and toss to coat. Chill until serving., Cut each pita bread into eight wedges. Place on an ungreased baking sheet. Brush with remaining oil; sprinkle with remaining Greek seasoning. Bake at 400° for 6-8 minutes or until crisp. Serve with salsa.

FRESH HOMEMADE SALSA
Another salsa recipe called for a fresh jalapeno (I think), but I had green chiles in a can on hand. This salsa tastes great, so I'm sticking with it!

- Combine tomatoes, red onion, yellow onion, green chilies, lime juice, cilantro, garlic, cumin, and salt in a food processor. Pulse processor until mixture is combined, yet remains chunky. Transfer to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.

FRESH GREEK SALSA
This is happy food, friends. Fresh, crunchy, flavourful, and filling without being heavy, this Greek inspired salsa is full of cucumbers, fire roasted peppers, red onions, garlic stuffed kalamata olives, crumbled feta, lemon and chopped parsley. Dip with pita chips or serve as a salad alongside grilled meat or fish. Opa! I know those garlic stuffed kalamatas can be hard to find, so if you can't lay your hands on them, simply use an equal amount of pitted kalamatas and add a large clove of garlic, peeled and minced, to the recipe. - To make the Greek salsa, whisk together the tablespoon of olive oil with the lemon juice, salt, and parsley in a medium bowl. Add the tomatoes, cucumber, red onion, and olives and toss well. Gently fold in the Feta cheese. Set aside.
- For the tzatziki, start by grating the cucumber half into a medium bowl. Place the bowl by the sink then, working one handful at a time, squeeze the grated cucumber over the sink to remove as much excess liquid as possible. Return the squeezed cucumber to the bowl and mix with the yogurt, garlic, olive oil, vinegar, and salt. Gently fold in the fresh dill.
- Divide the tzatziki mixture into the 12 mini taco boats (about 2 heaping tablespoons into each). Top each with a tablespoon of Greek salsa. Serve immediately.
