FRENCH TOAST FINGERS WITH GINGER BOURBON MAPLE SYRUP

Steps:
- For the syrup: Place the maple syrup and ginger in a small saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer for 10 minutes. Use a slotted spoon to remove the ginger and discard. Stir in the bourbon and keep warm while you make the French toast fingers.
- For the French toast: Place two racks in the upper and lower thirds of the oven and preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper and spray lightly with cooking spray.
- Slice the brioche into 2-inch slices and then cut each slice into three to four 1-inch-wide fingers. In a large bowl whisk the eggs, milk, butter, vanilla, bourbon and salt. Dunk the fingers into the egg mixture, let the excess drip off, and then place them onto the baking sheet. Bake the fingers until they are firm and golden brown, 15 to 18 minutes, flipping the fingers over halfway through baking. Serve warm with the syrup.

- Add apple slices, brown sugar, and butter in a medium sauce pan. Cook over medium high heat until brown sugar has dissolved and butter has melted. Add 1/4 teaspoon vanilla and 1/2 teaspoon cinnamon and reduce heat to simmer. Cook 6-8 minutes longer. Remove from heat and allow to cool slightly and thicken while you prepare toast.
- In a large, wide bowl whisk together eggs, vanilla, milk, and cinnamon. Stir in flour and whisk until smooth. Completely submerge one slice of bread in the mixture, careful to coat both sides. Lift the bread out of the liquid and allow to drip off excess.
- Cook toast in a large pan over medium heat 1-2 minutes until lightly browned, then flip and cook other side 1-2 minutes. Repeat with remaining bread slices. Generously top toasts with apple-cinnamon mixture. Sprinkle with powdered sugar if desired.

Steps:
- In small bowl, mix granulated sugar and 1 1/2 teaspoons cinnamon with whisk.
- Heat 10-inch skillet over medium-high heat; melt butter in skillet. Add apples and half of the cinnamon-sugar; stir to coat. Cook about 10 minutes or until apples are tender.
- Butter 13x9-inch (3-quart) glass baking dish; spread half of the bread in bottom. Top with half of the apple mixture; repeat.
- In bowl, beat half-and-half, milk, eggs, vanilla and remaining cinnamon-sugar with whisk. Pour mixture over bread and apples, pressing down with spoon so everything gets soaked. Cover and refrigerate at least 1 hour but no longer than 12 hours to allow bread to soak up custard.
- Remove from refrigerator. Heat oven to 350°F. Bake about 40 minutes or until edges and top of bread are golden and casserole has puffed up a bit. Cool on rack 15 minutes before serving.
- In small bowl, beat glaze ingredients with whisk. Drizzle over casserole.

- Spread applesauce on four slices of toast.
- In mixing bowl add eggs, Splenda, vanilla, Amaretto, flour, baking powder and milk.
- Mix well and set aside.
- Top the applesauce toast with another slice of plain toast.
- Pour the batter in a flat dish.
- Carefully place each sandwich in the batter and turn it so each side is coated.Because the bread is lightly toasted the bread will not be soggy.
- Spray pam in a baking dish.
- Place sandwiches in the baking pan.
- Pour any batter left evenly over the sandwiches.
- Preheat oven 350*.
- Bake uncovered about 35 minutes. Last ten minutes of baking, sprinkle slivered almonds on top. You may sprinkle cinnamon if desired. The tops should be nicely browned.
- Serve plain or with karo or maple syrup.
- Recipe can doubled or tripled.
- Prepared ahead and refrigerated if desired.
- Allow an extra 10 minutes baking time if refrigerated.
