CHICKEN IN WHITE WINE SAUCE



Chicken in White Wine Sauce image

A delicious one-pan dinner made of chicken cooked in a creamy, white wine sauce.

6 pieces of chicken, skin-on bone-in (any type of cut)
2 strips bacon, roughly chopped
1 onion, diced
4 cloves of garlic, sliced
1 carrot, sliced
1/2 a bottle white wine
3/4 cup heavy cream, (180 ml)
salt
pepper
parsley, for garnish
2 tbsp olive oil, (30 ml)
French bread, to serve with

Steps:

  • Pat dry the chicken pieces, then salt and pepper both sides of each piece of chicken.
  • To a cast iron pan (or a dutch oven), add the chopped bacon. Cook until over medium heat until the bacon is crisp. Remove the bacon from the pan using a slotted spoon.
  • Add a tablespoon of olive oil to the pan. Add the chicken to the pan, skin-side down first, cooking each side for about 4-5 minutes over medium heat or until the chicken is nicely browned and crisp. Remove the chicken from the pan.
  • Add another tablespoon of oil to the pan along with the diced onion. Sauté over medium-low heat for a few minutes, until the onion is translucent and softened. Add the garlic slices and sauté for another 30 seconds. Pour in a splash of white wine (about 1 heaping tablespoon) so that you can deglaze the pan, using a wooden spoon to scrape up any bacon bits stuck to the pan.
  • Add the chicken back into the pan, along with the sliced carrots, and about half a bottle of white wine. The wine should reach just up to the tops of the chicken pieces, but the chicken should not be fully submerged to the point that you can't see the top of the chicken. Place a lid on the pan and cook over medium-low heat for 35 minutes.
  • Remove the lid from the pan and stir in the cream. Add a pinch of salt and pepper, then give the mixture a stir. Raise the heat to medium-high and let the mixture simmer and bubble away for another 10 minutes. Spoon the sauce over the chicken a couple of times as the sauce simmers for those 10 minutes. Taste test the sauce for salt, and add more if needed.
  • Garnish the dish with fresh chopped parsley and serve with a side of crusty French bread.

I am a French exchange student living in Australia for 2006-07. I had to cook tonight and wanted to make something with chicken, mushroom, cream and white wine. My host mum, Chef #239758, helped me some and here is the result. This is my first recipe on Zaar.

1 1/2 kg whole chickens, cut into 10-12 pieces
1/4 cup flour
1/2 teaspoon salt (or more)
1/4 teaspoon pepper (or more)
2 tablespoons butter
1/4 cup vegetable oil
2 medium onions, sliced thinly
250 g mushrooms, sliced sort of thinly
1 1/2 cups cream
1/2 cup white wine
3 tablespoons Dijon mustard (or more)
1 tablespoon green peppercorn, chopped
1/4 cup parsley, chopped

Steps:

  • Heat oven to 180 degrees Centigrade.
  • Heat butter and oil in a pan large enough to hold all the ingredients.
  • While the butter and oil are heating, put cut-up chicken, flour, salt and pepper in a plastic bag, and shake well to coat chicken.
  • Brown chicken pieces in hot oil and butter for 5 minutes on each side. You'll probably need to do this in two batches.
  • Put browned chicken in an ovenproof dish and put in the heated oven to finish cooking while you make the rest of the recipe. The chicken needs 10-20 minutes in the oven. Check that juices run clear.
  • Reheat the oil and butter.
  • Add the onions and mushrooms to the now hot oil and butter.
  • When onions and mushrooms are well softened and tender, stir in the cream, wine, mustard, peppercorns and cooked chicken pieces.
  • Heat to boiling, then turn down to a simmer. Simmer for 5-10 minutes.
  • Stir in parsley.
  • Serve over mashed potatoes or egg noodles.

1 tablespoon oil
1 medium onion, sliced
1 garlic clove, crushed
2 tablespoons flour
2 teaspoons curry powder
600 g skinless chicken thighs, filets, cut into 3 to 4 pieces
1 (40 g) French onion soup mix (dry)
1 (415 g) can apricot nectar
2 tablespoons chopped parsley

Steps:

  • Preheat oven to 190c.
  • Heat the oil in an oven-proof pan (with a lid) and cook onion and garlic over medium heat until onion is softened (about 5 minutes), Stir.
  • Mix the curry powder and flour together in a bag then add in the chicken and toss well.
  • Add the chicken to the pan and cook it until it changes colour. Add the dry soup mix and stir to coat all the chicken, then the nectar stirring really well. Bring to the boil and simmer until the mix thickens.
  • Put the lid on and place in the preheated oven. Cook for about 30 minutes or until the chicken is cooked through.
  • Remove from the oven, stir through the parsley, then serve over plenty of mash or rice (mash is my favourite).
  • *You can add in dried or canned apricots, but we prefer it without.

½ cup all-purpose flour
4 eggs, beaten
1 pound skinless, boneless chicken breast halves
½ cup white wine
2 cups chicken broth
1 teaspoon chopped fresh parsley
salt and pepper to taste
¼ cup butter
2 lemons, juiced
1 teaspoon cornstarch

Steps:

  • Coat chicken with flour, then egg beat, then saute in a large skillet until almost cooked through. Drain on paper toweling.
  • Preheat oven to 300 degrees F (150 degrees C).
  • In a medium saucepan combine the wine, broth, parsley, salt and pepper to taste, butter or margarine and lemon juice over medium low heat. Stir together while heating slowly. When butter or margarine has melted, slowly stir in cornstarch until sauce thickens slightly. Place chicken in a 9x13 inch baking dish and pour sauce over all.
  • Bake at 300 degrees F (150 degrees C) for about 10 to 15 minutes, or until chicken is cooked through and juices run clear.

Chicken French has everything I love in a recipe. It's delicious and easy, frugal, yet fancy, and everyone loves it. Better yet, it has a vague, confusing history and completely preposterous name. This not-French recipe hails from the Rochester area of New York State, where it's a staple on virtually every Italian-American restaurant menu.

4 eggs
2 tablespoons milk
1 cup all-purpose flour
1 tablespoon salt
1 teaspoon ground black pepper
1 pinch cayenne pepper
1 ½ pounds skinless, boneless chicken breast cutlets, pounded flat
2 tablespoons olive oil
1 tablespoon butter
1 cup vegetable broth
½ cup dry sherry
2 lemons, juiced
¼ cup cold butter, cut into chunks
1 tablespoon chopped fresh flat-leaf parsley
salt and ground black pepper to taste

Steps:

  • Beat eggs and milk together in a shallow bowl. Whisk flour, salt, black pepper, and cayenne pepper together in another shallow bowl.
  • Gently press chicken into flour mixture to coat; shake off excess flour. Dip into egg mixture and coat completely.
  • Heat olive oil and 1 tablespoon butter together in a large skillet over medium heat. Cook chicken in hot oil until lightly browned, 2 to 3 minutes per side. Transfer chicken to a plate.
  • Cook and stir vegetable broth, sherry, and lemon juice in the same skillet; bring to a boil and cook until sauce is reduced by half. Remove from heat and add cold butter chunks; stir until butter is melted and sauce is shiny and thickened, 1 to 2 minutes. Stir parsley into sauce and season with salt and pepper.
  • Return chicken to the skillet over medium heat, spoon sauce over the top, and cook until chicken is heated through and no longer pink in the center, 1 to 3 minutes more.
