Steps:
- Take the puff pastry from the freezer and allow to fully defrost IN the packaging. 2. Preheat oven to 400 F or 200 C.3. Unroll the pastry and flatten it on the paper wrapper. Line a cookie sheet with parchment paper or a silicone mat.4. In a small bowl, add the ground almonds, sugar and almond extract if using. Combine with a spoon. Sprinkle almond sugar mixture evenly all over the pastry and use a long flat-bladed knife if you have one to spread the mixture evenly on the surface. Place a sheet of parchment over the top and use a rolling pin to LIGHTLY roll over the mixture so as to press it gently into the pastry. Be careful not to roll hard so you keep the shape of the pastry. Discard parchment paper.5. Take one LONG side and tightly roll the pastry toward the middle. Stop when you get to the middle. Then take the other side of the pastry and roll toward the middle. Wrap the pastry in plastic wrap and pop in the fridge for 20 minutes to firm up. 6. Take the pastry from the fridge and cut the ends off to make it tidy. Then cut into 1/4 inch thick slices. Place flat on a parchment-lined baking sheet. You may need to gently push the cookies down if they are too thick. If you want to make a more defined shape, point the curved parts to make them like rabbit ears. This will help when baking to get the classic palmier shape. 7. Brush the tops lightly with the melted butter and another light sprinkling of sugar. Turn over and brush with butter and sprinkle sugar on the other side too. 8. Bake for approximately 15 - 20 minutes or until the cookies puff up and turn golden brown. Keep an eye on them because they will burn very easily! Halfway through, turn the cookies over so they brown evenly.9. When done, use a fish slice or similar and transfer the cookies to a cooling rack. They will get crispy once cooled. These will store, once cooled, in an airtight container for a few days. They are delicious eaten as they are, or as I do, with a scoop of ice cream!

ORANGE FRENCH LACE COOKIES
Steps:
- Preheat the oven to 375 degrees F. Line 2 sheet pans with parchment paper.
- Place the almonds on a sheet pan and toast them for 5 to 10 minutes, until lightly browned, tossing once to toast evenly. Place 1 cup of the toasted almonds in a food processor fitted with the steel blade and chop them very coarsely. (Reserve the rest for later.) Combine the chopped almonds with the flour and set aside.
- Meanwhile, place the butter, brown sugar, corn syrup, orange juice concentrate, orange zest, and vanilla in a small saucepan and bring to a boil over medium heat. Off the heat, gradually whisk in the flour mixture until thoroughly combined. Stir in the reserved toasted almonds.
- With 2 teaspoons (tableware rather than measuring spoons), drop rounded spoonfuls of batter (about 1 1/2 inches wide) onto the prepared sheet pans, spacing them at least 2 inches apart. (I put 8 on each pan.) Bake for 7 to 9 minutes, until the edges are golden brown, turning the pans in the oven to brown evenly. Allow to cool and transfer to a wire rack. Repeat for the remaining batter. Store the cooled cookies in an airtight container between layers of wax or parchment paper.

- In a large bowl, cream butter and sugar together until fluffy. Beat in the egg, vanilla, and almond extract. Sift the flour over the top, add the salt and the chopped almonds and fold to combine.
- Pull off little pieces of the dough and roll them into balls about 1-inch in diameter, enclosing a whole almond in the center of each one. Place on an ungreased baking sheet and bake on the center rack of the oven for 15 to 20 minutes, until light brown. Transfer to racks to cool slightly. When cool enough to handle, roll 1/2 the cookies in the cocoa powder, and the remaining 1/2 in the confectioners' sugar. Serve warm or return to the rack to cool.

MACARONS AUX AMANDES (FRENCH ALMOND MACAROONS)
The taste of French Almond Macaroons is based on high quality almonds. Do not use pre-ground almonds. Get unblanched almonds, blanch them prior making and ground them as descibed in this recipe. For this recipe the egg white is mixed directly to the almonds and sugar mixture. The amount of egg white is critical. I always start with only one egg white first. And if the dough has not the right consistency I add a little more egg white.

Steps:
- Roasting Almonds: preheat oven (220°C). Roast blanched almonds on baking tray for about 10 or until golden brown. Do not over-roast. Remove from oven and let cool completely.
- Making Cookies: Preheat oven (180°C).
- Reserve some almonds for decoration (optional).
- Ground the roasted almonds with sugar in food processor.
- While motor is running add as much egg white as need to make a smooth and soft dough, which is still sticky. Add almond or vanilla extract and mix well. The dough has the right consistency, if you can form ball with moistened hands, but is sticky.
- With slightly moistened hands form walnut sized balls. Put dough balls on baking tray flatten them slightly.
- Optional: decorate cookies with halved almonds and/or slightly dust cookies with caster sugar.
- Bake for 10-12 minutes or until the macaroons are slightly golden on top and firm.
- Take tray out of the oven and let cool cookies on tray for a few minutes. Then remove the cookies carefully from tray and let cool completely on cooling rack.
- NOTE on egg white: you may need more than 1 egg white. But start with one and mix very well. Only if the dough is too crumby after mixing add some more egg white.
- Yield is a guess.

Steps:
- Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper or nonstick baking mats. Combine sugar and almonds in food processor fitted with metal blade. Process 3 minutes to grind into a fine powder. If mixture is sticking, scrape down sides of bowl. Add starch and process 1 minute more.
- In another bowl or a mixer, whip egg whites, salt and extract together at medium-high speed until stiff peaks form. Working in 3 additions, fold almond mixture into egg whites, turning over and over until incorporated. Batter will be sticky and thick. Set aside to rest 20 minutes.
- Spoon batter by tablespoons onto prepared pans; cookies will spread to about 3-inch rounds, so leave plenty of room. Bake 1 sheet at a time until cookies are puffed, golden and shiny, 18 to 20 minutes. As soon as cookies come out of oven, remove paper (with cookies on it) from baking sheet. Let cookies cool completely before removing from paper; use a thin metal spatula or knife blade if cookies stick.

FRENCH BUTTER COOKIES FROM JOY OF BAKING
This is a classic French cookie originating in Normandy France. These cookies are delicious plain, but they can also be flavored with ground nuts or zests and they can even be sandwiched together with jam or preserves, ganache, or lemon curd.

Steps:
- In the bowl of your electric mixer (or with a hand mixer), beat butter and sugar until light and fluffy (2-3 minutes).
- Add the egg and vanilla extract and beat until blended.
- In a separate bowl, whisk together the flour, baking powder and salt.
- Add the flour mixture to the butter mixture and beat just until incorporated. Do not over mix the dough.
- Transfer the dough to a lightly floured work surface, knead the dough a few times to bring it together, and then divide the dough in half.
- Wrap each half in plastic wrap and refrigerate until firm (at least an hour).
- Preheat oven to 350 degrees F (177 degrees C) and place rack in the center of the oven.
- Line two baking sheets with parchment paper and set aside.
- Remove one portion of the dough from the refrigerator and place on a lightly floured work surface. Roll out the dough until it is 1/4 inch (1 cm) thick. Using a lightly floured 2 inch (5 cm) round fluted cookie cutter, cut out the cookies, placing them on the prepared sheet.
- Place the baking sheet of cut out cookies in the refrigerator for about 15 -20 minutes to chill the dough.
- Meanwhile, in a small bowl, whisk the egg with the water for the egg wash. Remove the cookies from the refrigerator and brush the tops with the egg wash.
- Then, with the tines of a fork (or I like to use the end of a toothpick), make a crisscross pattern on the top of each cookie.
- Bake cookies in the preheated oven for about 12-14 minutes (depending on size of cookie) or until golden brown around the edges.
- Cool cookies on wire rack.
- Store in an airtight container for up to a week.
