FREEZE-AHEAD PEPPERONI PIZZA BUNS
Steps:
- Heat oven to 375ºF.
- Unroll pizza dough onto lightly floured cutting board; roll out into 14x12-inch rectangle. Top with mozzarella and pepperoni.
- Mix pizza sauce and garlic powder until blended; drizzle over pepperoni.
- Roll up dough rectangle, starting at one long side of dough. Cut into 16 pinwheels; place, cut sides down, in 8-inch square pan sprayed with cooking spray. Sprinkle with Parmesan.
- Bake 25 min. or until golden brown; cool completely.
- Separate pizza buns; place each in separate freezerweight resealable plastic bag. Seal bags. Freeze up to 1 month.
- Remove pizza bun from bag just before serving; place on microwaveable plate. Microwave on HIGH 30 sec. or just until warmed.

These are nice to serve for a snack. My Mom used to serve them for her Bridge Group. I have served them with a bowl of soup for supper. If you like pizza, I think you will like these. This mixture can be kept in the fridge for several days and spread on buns when you are ready to use.

Steps:
- Slice bacon into small pieces and then brown it.
- Drain fat from bacon.
- Cut the pepperoni into slices and then quarter the slices.
- Add onion, green pepper, and mushrooms to the bacon and heat until onions begin to soften. Stir often.
- Add spaghetti sauce, pepperoni, oregano and garlic powder and heat through.
- Cool.
- Stir in cheese.
- Spread on open-faced buns and broil until bubbly and cheese melted.
- Enjoy!

- Prepare pizza dough through step 3. When the dough is ready, punch it down to release any air bubbles. Divide the dough in half. On a lightly floured surface, roll out each half into a large rectangle, about 10×12 inches.
- To prevent the filling from making your pizza rolls soggy, brush the tops lightly with 1 teaspoon olive oil each. Using your fingers, push dents into the surface of the dough rectangles to prevent bubbling. See photo above for visual. Spread 1/3 cup pizza sauce on top of each dough rectangle. Sprinkle each lightly with Italian seasoning and garlic powder.
- Sprinkle 1/2 cup shredded mozzarella evenly over sauce, then top with pepperoni slices. Carefully roll dough rectangles into tight logs. Place logs onto 1 prepared baking sheet, seam side down and place baking sheet in the refrigerator to chill, uncovered, for at least 20 minutes. Chilling prevents the rolls from falling apart as you slice.
- During that time, preheat oven to 400°F (204°C). Line two large baking sheets with silicone baking mats or parchment paper.

- After the first rise, roll out your bun dough into a rectangle. I wanted my buns smaller (toddler-sized), so I made sure my rectangle wasn't more than about 8" wide. You can always do bigger if you like. I wanted it pretty thin, so the dough wouldn't get too thick and take over -- I wanted a good dough-to-filling ratio. **I split my dough in half so it was easier to work with.
- Spread a thin layer of sauce on your dough. You don't want it oozing out all over the place, so don't lay it on too thick.
- Top with chopped pepperoni and cheese. (If you've divided your dough in half, make sure you only use about half)
- Roll up slowly, starting with the long end. Be careful not to squish out all of your filling. When you get to the last inch or two, bring the end up and pinch together with your roll, so the rest of your filling stays in and your edge stays nice and clean.
