SPAGHETTI SAUCE (EASY ITALIAN STYLE WITH 6 INGREDIENTS)

Spaghetti Sauce (Easy Italian Style with 6 Ingredients) image

Italian style spaghetti sauce with meat.

Provided by Christina Conte

Categories     Main Courses

Time 1h5m

Number Of Ingredients 8

4 Tbsp extra virgin olive oil (good quality)
3 cloves of fresh garlic (be sure it is not from China)
fresh Italian parsley, chopped
8 oz ground beef, grass fed
about 2 tsp Kosher or sea salt
1 (28 oz) jar/can of good quality Italian tomatoes (passata/purée or for the best quality, look for Pomodoro San Marzano Dell'Agro Sarnese-Nocerino DOP tomatoes--which are only ever whole, peeled tomatoes grown in a certain region of Italy)
8 to 10 fresh Italian basil leaves
(optional black pepper, to taste)

Steps:

  • Crush the garlic with the flat side of a knife.
  • Bring the extra virgin olive oil (and lard, if using) to medium high heat, then add the garlic and chopped parsley.
  • After a minute, add the ground beef and break up with a wooden spoon. Add some salt, and cook until it begins to dry up, then add the tomato passata/purèe/chopped tomatoes of your choice.
  • If using Mutti, they tend to be thick, so add about ¾ cup (6 oz) of water or until the bottom line of the jar (shake to rinse) then add to the pot. If you're using another brand, rinse the can/jar with a little less water, unless it's very thick.
  • Put the burner on high to bring the sauce to a simmer, and add more salt. Don't be afraid to add Kosher/sea salt as I can guarantee you will have much less sodium in this sauce than a jar of store-bought.
  • Lower the heat so that the sauce simmers gently for about an hour, stirring occassionally (so that the sauce won't stick). Taste for seasoning after about 30 minutes, and add salt if needed.
  • When the sauce is ready, check once again for seasoning. Add salt and pepper as desired, and a generous amount of fresh basil, torn into pieces.

GRANDMA MAGGIO'S SPAGHETTI SAUCE

Grandma Maggio's Spaghetti Sauce image

This is one that was recited to me out of memory alone, and described as a hand of garlic, etc., though the ingredient quantities should be accurate. I encourage buying the cheapest versions of these ingredients you can find; it will feed an army for about $15 without ruining the taste. You should add more seasonings based on preference. A great vegetarian sauce, and with meatballs...it makes great meatball sandwiches.

Time 55m

Yield 10

Number Of Ingredients 13

2 tablespoons olive oil
1 onion, chopped
1 whole head garlic, peeled and chopped
2 cups sliced fresh mushrooms
½ cup chopped fresh basil leaves, or to taste
1 (28 ounce) can whole peeled tomatoes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
¾ cup Merlot wine
2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons dried oregano
¼ cup white sugar

Steps:

  • Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion and garlic until translucent but not browned, 6 to 7 minutes. Stir in the mushrooms and basil, and cook and stir until the basil is wilted and the mushrooms are cooked through and have given up their juices, about 10 minutes.
  • Pour in the whole peeled tomatoes, and bring the mixture to a boil, stirring and chopping the tomatoes into pieces with a spoon. Pour in the tomato sauce and stir, crushing any large pieces of tomato left, and bring to a simmer. Let the sauce simmer until slightly thickened and bubbling, stirring occasionally, about 15 minutes.
  • Stir the tomato paste into the sauce, and fill the empty tomato paste can with Merlot wine, stirring to dissolve any remaining tomato paste in the can. Pour the Merlot wine into the sauce, and stir well to combine. Bring the sauce back to a simmer, and stir in the salt, pepper, dried oregano, and sugar. Let the sauce simmer until the seasonings are blended and the sauce is heated through, about 3 more minutes.

TRADITIONAL SPAGHETTI SAUCE & MEATBALLS

Traditional Spaghetti Sauce & Meatballs image

This recipe was taught to me over 40 years ago by an old Italian man straight from Italy, who had taught it to my mother in law before me.It was an art he enjoyed, and took all day long creating.Sometimes a piece of Chicken, or a pork chop was added, but our favorite is the kielbasa sausage. The sauce was cooked awhile, then stirred and sampled. More spices were added as deemed necessary. The meatballs were prepared using a little sauce as one of the ingredients. They were cooked, then added to the sauce for awhile, and ocassionaly, one was removed and sampled by everyone. The wine was added to the sauce, and once the sauce, and the meatballs met everyones approval the spaghetti was prepared. It was served with a salad and fresh bread, and of course parmasean cheese was passed around. Hints: If you are not familiar with herbs, and their amounts, this will be a difficult recipe, because the amounts given are guess work. If you taste frequently, you will find you can adjust them to your taste. If you like a sweet sauce, add a small amount of sugar, and use Merlot Wine, as it is sweeter. If you wish to skip the meatballs, simply fry the burger and onion til done, and put it in the sauce towards the end of your cooking time. You must keep checking the sauce, as it will cook down, and as it begins to thicken, additional water will be necessary. Do not cut cooking time as it must cook 4 hours, or it will have an acid taste. The seasonings will correct this if you adjust them as you go.

ZAPPA FAMILY SPAGHETTI SAUCE

Zappa Family Spaghetti Sauce image

I have spent a lifetime trying to duplicate the red sauce and meatball recipe my mother, Anne Marie Zappa, cooked every week when I was growing up. I'll never do it, but this is close. This is a forgiving recipe. Maybe you want to add a couple of chicken thighs, or mix in a few browned hot sausages. Just keep a good ration of pork to beef.

Provided by Kim Severson

Categories     dinner, pastas, main course

Time 3h

Yield 6 to 8 servings

Number Of Ingredients 20

Salt and pepper
1 pound pork spareribs, neck bones or pork chops
1 pound beef chuck roast, blade steak or brisket
3 tablespoons olive oil
3/4 cup chopped onions
2 cloves garlic, minced
1 6-ounce can tomato paste
1 teaspoon dried oregano
1 tablespoon dried basil
1 teaspoon dried red pepper flakes
1 1/2 teaspoons kosher salt
1 bay leaf
1 28-ounce can crushed tomatoes, preferably Italian
1 28-ounce can tomato sauce
1/2 teaspoon sugar
2 tablespoons fresh parsley, roughly chopped
4 small or 2 large pickled peperoncini
Cooked meatballs
1 pound dried spaghetti for serving
Grated Parmesan for serving

Steps:

  • Sprinkle salt and pepper all over pork and beef. Place large pot over medium-high heat; when hot, add olive oil and brown meat. (Or cook meat in same pot used for meatballs, browning in the leftover fat.) Remove meat to a platter. Turning heat under pot to medium, add onions, and cook 3 minutes, stirring. Add garlic, and cook 2 minutes longer. Add tomato paste, and stir: cook until it absorbs fat in pan. Add oregano, basil, red pepper flakes, kosher salt and bay leaf, stirring to combine.
  • Add cans of tomatoes and tomato sauce, then 4 1/2 cups water. Stir in sugar, parsley and peperoncini. Return meats to pot with their juices. Bring sauce to a gentle boil. Turn heat down to a simmer, partly cover and leave sauce to simmer 21/2 hours or more, stirring regularly.
  • About 20 minutes before serving, add meatballs to pot. Boil spaghetti according to package directions. Drain, return spaghetti to pan and add 3 cups sauce. Toss pasta in pan for a minute to coat with sauce, and place on a large platter. Pour 2 more cups sauce over pasta. Place meat and meatballs on pasta, slicing large pieces. Serve with bowls of remaining sauce and Parmesan.

1/2 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon basil
1 pinch oregano
parsley
4 garlic cloves
1 lb spaghetti
parmesan cheese, grated, can use Romano

  • Pour the sauce over the the pasta and mix a little with 2 forks. Sprinkle with some chopped parsley and serve. Sprinkle with cheese,if desired, on top.
