Your family will love these pancakes! They are extra fluffy without buttermilk. Add some chocolate chips for a special treat!

2 cups all-purpose flour
2 Tablespoons of baking powder
1 teaspoon salt
1/4 cup white sugar
1/4 cup oil
2 eggs, beaten
2 cups of regular milk

Steps:

  • Preheat an electric griddle or large skillet to medium heat. (I prefer a griddle.)
  • Combine all the dry ingredients in a medium sized bowl. In a large mixing bowl mix the wet ingredients.
  • Pour the dry ingredients into the wet ingredients and mix until there are no lumps. Make sure not to over mix.
  • Add a little melted butter to the pre-heated griddle then add about 1/3 cup of batter.
  • When the edges become dry and the top is bubbly flip the pancake and cook the other side for about a minute. It should be a nice golden brown.
  • Let cool and freeze any leftovers. Re-heat in the microwave for about 20 seconds per pancake.

Number Of Ingredients 8

2 eggs (large)
1 1/4 cups milk
2 teaspoons vanilla extract
3 tablespoons butter (melted)
1 1/2 cups all purpose flour
3/4 teaspoon salt
2 teaspoons baking powder
2 tablespoons sugar (substitute 1/4 cup malted milk powder for a more "diner style" pancake )

Steps:

  • In a medium bowl beat the eggs, milk, vanilla and butter. Set aside.
  • In a small bowl mix the flour, salt, baking powder and sugar (or malted milk) and whisk together.
  • Pour the flour mixture in to the egg mixture and whisk gently a few times to combine. Stop as soon as no pockets of flour remain. Let batter rest a minimum of 10 minutes or up to overnight in the fridge before cooking.
  • While the batter rests, pre heat a griddle or non stick pan over medium heat until warm. Grease with butter or flavorless oil and use a test drop of batter to see if the pan is ready. It should sizzle gently.
  • Using a 1/4 cup of batter, make circles on the pan but don't mash or spread out the batter. It will spread as it cooks.
  • Reduce heat to medium low and cook pancakes until the edges begin to try and bubbles forming on the surface begin to pop--about 4 to 5 minutes.
  • Flip the pancakes and cook 1 to 2 more minutes or until the pancakes spring back when pressed in the center.
  • Serve warm with maple syrup, butter and fruit.

I know there are a zillion pancake recipes already but I went thru and this one IS different and SO good. I think that mixing well, sifting the dry ingredients, and carefully folding in the egg whites makes these so very fluffy. And, wonder of wonders, you can freeze the batter, defrost in the fridge, and the pancakes are perfect. One more thing--you must use real maple syrup and you must warm it before serving it with the pancakes.

3 eggs, separated
1 2/3 cups buttermilk
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups flour
1 tablespoon sugar
3 tablespoons unsalted butter, melted

Steps:

  • Beat the yolks until pale and smooth.
  • Beat in the buttermilk and then the baking soda and mix well.
  • Sift in the dry ingredients mixing as you add; make sure the batter is smooth.
  • Add in the melted butter and mix well.
  • Beat the egg whites in another bowl until stiff.
  • Fold into the batter until no bits of white are visible.
  • Let batter stand about 20 minutes before making pancakes.
  • Make sure your griddle is really hot (the old water droplet test).
  • Ladle batter onto griddle; turn when bubbles form across the cakes and allow to lightly brown on the second side.
  • Serve with warm maple syrup and sweet butter.

1 1/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
1 1/3 cups milk
3 tablespoons vegetable oil

Steps:

  • Mix all dry ingredients together in a bowl (I use a 4 cup measuring cup).
  • Mix milk, oil and egg in smaller bowl (I use 2 cup measuring cup).
  • Mix liquid ingredients into dry ingredients.
  • Make 4 inch pancakes in a medium heated non-stick pan or griddle or use a small amount of oil in regular pan.
  • Cook until golden brown.

I've been perfecting my Pancake recipe over the years and I finally did it! These pancakes are super fluffy and delicious. My family was truly impressed. Makes about 12 - 6"diameter pancakes. I use non-stick spray on my griddle but you can use butter.

2 cups all-purpose flour
2 cups buttermilk
4 tablespoons butter, melted
2 eggs
2 tablespoons sugar
1 teaspoon vanilla extract
2 teaspoons baking powder
2 teaspoons baking soda
1/4 teaspoon cream of tartar
1 teaspoon salt
butter or nonstick cooking spray
1 cup maple syrup, I use Grade B
3 tablespoons butter

Steps:

  • PANCAKES: In a large bowl, mix Flour, Baking Powder, Baking Soda, Sugar and Salt. Set aside.
  • Separate egg yolks from egg whites.
  • Beat egg whites and cream of tartar on high speed until high speaks form, set aside.
  • Beat milk, egg yolks, vanilla, and melted butter together at slow speed until mixed.
  • Add Milk mixture to Flour mixture slowly while beating at a medium speed until completely blended.
  • Add 1/3 of the egg whites to the batter and mix together. Fold in (using a spoon of spatula) the rest of the egg whites carefully, do not over mix!
  • Grease your skilett or griddle with your preference of non-stick spray or butter and set to medium temperature (or 350 degrees).
  • Drop about 1/3 cup of batter on pan for each pancake and cook on that side until you see a few bubbles on the surface of the batter.
  • Flip your pancakes and cook for about another 1-2 minutes.
  • SYRUP: Place Maple syrup in a microwave safe container, add butter and heat in microwave for 30-45 seconds until butter is melted. Mix with spoon and serve over pancakes.
