FLUFFY LEMON JELLO SALAD RECIPE

Steps:
- Add the sugar, butter, fresh lemon juice and fresh lemon zest to a small pot.
- Bring to a boil.
- While the ingredient in the pot are heating, soften the unflavored gelatin in the tablespoon of water.
- Once the ingredients in the pot are boiling, add the softened gelatin to it and whisk until it's dissolved.
- Crack eggs into a small bowl or 2 measuring cup and whisk to beat.
- Pour the hot lemon liquid from the pot into the eggs in a slow stream while whisking vigorously until all the hot liquid has been added.
- Pour back into the pot and simmer until it thickens enough to coat the back of a spoon.
- Remove from the heat and pour into a container and refrigerate until chilled through. This will take about 3-4 hours.
- Put the chilled lemon curd in a mixing bowl and beat with beaters until it is smooth.
- Beat one container of cool whip into the lemon curd until smooth and well incorporated.
- Fold in the second container of cool whip.
- Serve or chill until you're ready to serve.

FLUFFY LEMON JELLO SALAD
Steps:
- Whisk together the lemon jello and cook & serve lemon pudding in a medium saucepan. Whisk in water.
- Bring mixture to a simmer over medium heat, stirring constantly, until mixture thickens and becomes more translucent. (About 5 minutes total.)
- Remove from heat and stir in the ice cubes until melted. Pour mixture into a large heatproof bowl and cool in the refrigerator until slightly thickened, and lukewarm to the touch; about 10-15 minutes.
- Remove from fridge and fold or gently whisk in the whipped topping until smooth and combined. Can leave the mixture in the same bowl, or pour it into a mold, or 13x9-inch pan. Smooth top with spatula.
- Return jello salad to refrigerator to chill and set up completely; about 2 hours. Serve with extra whipped cream and fresh raspberries, if desired.

Add drained pineapple to jello, mix. Add bananas to jello, mix. Top with marshmallows. Cover with plastic wrap and chill for 4 hours or until set. Just prior to serving, blend heavy whipping cream, vanilla and sugar. until soft peaks form. Spread whipped cream on top of Jello and serve. Refrigerate leftovers for up to 2 days in a covered container.

- In a cup of boiling water, add gelatin and sugar. Stir for 2 minute or until gelatin is dissolved. Stir in cold water and lemon juice. Chill for about 30 min., or until the mixture is the consistency of unbeaten eggwhites.
- Fold in yogurt, whipped topping, lemon rind (if desired) and lemon zest (if desired) into gelatin mixture, then spoon into pie crust. Chill at least 3 hours.
- Alternatatively the mixture can be spooned into 12 single serve graham cracker crusts (these can easily be packed in lunches).
