FLUFFY BUTTERCREAM FROSTING
The secret of this light frosting is to mix it with a mixer for the recommended time at high speed. This incorporates air to make it light. 1-1/2 cups frosting is enough to frost the top of one 9 inch cake.

Steps:
- Combine all ingredients in bowl. Beat at low speed to mix. Beat at high speed until smooth and fluffy, approximately 5-10 minutes. If too stiff, beat in a few drops of water.

FLUFFY BUTTER COCOA FROSTING
A very fluffy, light cocoa frosting. I love to make frosting with butter, you get a dreamy, creamy consistency.

Steps:
- In a bowl (or 4 cup glass measuring cup is easier) add powdered sugar and cocoa.
- Cut in soft butter with a knife or fork.
- Add vanilla.
- Using mixer beat until fluffy.
- Add the milk or cream now until spreadable consistency is achieved.
- Frost COOLED (if warm it will melt the butter) cake, cookies, brownies, whatever!
- I use this recipe for my Moist Fudgy Cocoa Brownies.
- Yummy!

Steps:
- Combine powdered sugar and butter in a stand mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy, about 5 minutes. Add cocoa powder, vanilla, and salt; mix for 30 seconds. Add cream 1 tablespoon at a time, mixing after each addition. Scrape down the sides of the bowl. Mix on medium speed until frosting is shiny and seems to have large bubbles, 3 to 5 minutes more.

FLUFFY COCOA FROSTING
Steps:
- Gather the ingredients.
- Combine the milk and flour in a saucepan and whisk to blend.
- Cook over medium heat until thick, stirring constantly.
- Remove from heat and set aside to cool.
- In a mixing bowl with an electric mixer, beat the butter and shortening with the sugar until light and fluffy.
- Beat in cocoa and vanilla.
- Add the completely cooled flour and milk mixture.
- Beat until fluffy and sugar has dissolved, about 4 to 6 minutes.
- Enjoy!

PHYLLIS' FLUFFY FROSTING
I got this from my Grandma who got it from my Aunt Phyllis. It is incredibly easy but does pretty much require a stand mixer or a person with stamina. It is a very light whipped satin icing (not very sweet) and we love it best on chocolate cake but it frosts anything well. Be patient and whip it for the full 20 minutes or it will not set. To make this a chocolate whipped icing use unsweetened cocoa powder. Add it at the end using 1/4 to 1/2 cup depending on desired richness. *Melted chocolate will make it fall and so will heavy cream or half & half (it just won't set).

FLUFFY FROSTING
This is an amazing fluffy, delicious frosting. It pipes out beautifully, and holds it's shape. The flavor tastes like marshmallow whipped cream. Be sure to whip the hot sugar syrup with the egg whites for a considerable amount of time, about 8-10 minutes (on a Kitchenaid stand mixer) for the best results. I'm sure this would be excellent on any flavor of cake, but it is fabulous on chocolate cake and probably be great on red velvet.

- Combine the sugar, water and cream of tartar in a saucepan. Cook the mixture over medium-high heat until the sugar is completely dissolved and the mixture starts to bubble.
- Whip the egg whites and vanilla extract in a mixing bowl until soft peaks form. Slowly drizzle the hot sugar syrup mixture into the egg whites while whipping constantly at medium-high speed until stiff peaks form and frosting is very glossy, around 8-10 minutes.

This recipe came from The Nut Tree, a famous restaurant in Vacaville, CA. While it is no more, my mom was able to smuggle this delicious recipe from them and, as far as we are concerned, there is no other chocolate frosting.
