This is a great main course for dinner guests...and they never believe how easy it is. The creamy feta-basil filling can be made early and refrigerated until needed. Deli ham and packaged spinach leaves further cut prep time.

- Flatten chicken breasts to 1/4-in. thickness. Place a single layer of spinach over chicken., In a small bowl, combine the cream cheese, feta cheese, basil and pepper until blended; spread over spinach. Top each chicken breast with a ham slice, trimming if necessary. Roll up and secure with toothpicks., In a shallow bowl, beat egg and milk. Place bread crumbs in another bowl. Dip chicken rolls in egg mixture, then coat with crumbs. , Place seam side down in a greased 15x10x1-in. baking pan. Bake, uncovered, at 375° for 30-35 minutes or until chicken is no longer pink. Discard toothpicks.

- Place a slice of ham and cheese on each piece of chicken.
- Roll up from a short side and tuck in ends; secure with a toothpick.
- In a shallow bowl, mix crumbs, grated cheese and parsley.
- Pour milk into another bowl.
- Dip chicken rolls in milk, then roll in crumb mixture.
- Wrap and freeze roll-ups for up to 2 months.
- To use frozen chicken--completely thaw in the refrigerator.
- Unwrap roll-ups and place on a greased baking sheet.
- Spritz with nonstick cooking spray.
- Bake uncovered, at 425 degrees for 30 minutes or until juices run clear.

- Sauté the garlic and spinach in oil until the spinach wilts. Add the ricotta, parmesan, salt, and pepper, and stir until heated.
- Preheat oven to 450°F (230°C).
- Salt and pepper the chicken breasts, add the cheese mixture, and roll 'em up.
- Dip each chicken breast roll-up in the egg, then the breadcrumbs, and place in a 8×8 (20 x 20 cm) or 9×9 (22 x 22 cm) baking dish seam side down.
- Bake for 25 minutes.

- Preheat oven to 425 degrees. Season chicken with salt and pepper. On a clean work surface, lay cutlets flat (smooth sides down). Layer each cutlet with arugula; crumble goat cheese in the center. Starting with the narrow end, roll up chicken tightly; seal with a toothpick.
