- In a shallow dish, beat together the eggs and milk. Pour the bread crumbs and flour onto 2 separate plates. Sprinkle fish sticks with salt and pepper. Dredge fish sticks in flour and dip in the egg mixture. Then transfer fish sticks to bread crumbs, covering fish completely and pressing lightly to adhere. Place each fish stick on a wire rack when coated.
- Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Arrange half the fish sticks in a single layer without crowding; cook until golden brown, about 1 to 2 minutes on each side. Remove fish sticks from skillet, and transfer to a serving dish. Wipe out pan and repeat with remaining oil and fish. Serve fish sticks, hot or at room temperature, with tartar sauce.

- PREP: Cut fillets into 1/2-inch strips and season with salt, pepper and cayenne. Set aside. Place flour in shallow pan, set aside. Place eggwash into another shallow pan and set that aside. Mix breadcrumbs (or panko) and optional almonds and place into yet another shallow pan.
- Dredge strips of cod in flour shaking off excess. Dip next in eggwash and then in the bread crumb mixture, pressing down lightly into breading to coat. Set coated fish on waxed paper-lined sheet pan.
- In a large skillet heat butter and oil over moderate heat. Carefully add the coated fish strips and cook about 2-4 minutes per side, until golden brown. Do in batches if necessary. Transfer fish strips to paper towels to drain.

- Heat air fryer to 390°F.
- Whisk eggs and dressing in pie plate until blended.
- Use pulsing action of food processor to process bread crumbs and cheese until bread crumbs are finely crushed and mixture is well blended; pour into separate pie plate.
- Add fish, 1 stick at a time, to egg mixture; let excess egg mixture drip off, then dip fish stick into bread crumb mixture, turning to lightly coat both sides of strip with crumb mixture.
- Spray air fryer basket with cooking spray. Place about 1/3 of the fish sticks in single layer in prepared basket; add to air fryer. Cook 12 min. or until fish flakes easily with fork. Transfer fish sticks to plate. Repeat with remaining fish sticks.

BAKED FISH STICKS

- Preheat the oven to 400 degrees F.
- Salt and pepper the fish sticks. Place the flour on a rimmed plate and season with the garlic, mixing with a fork, and set aside.
- Place the bread and herbs (if using) in a food processor and pulse until uniform, but not too small. Season with salt and pepper. Transfer the breadcrumbs to a shallow baking dish or rimmed plate and set aside.
- Whisk the egg and 1 tablespoon water in a medium bowl. Dredge a piece of fish in the flour, gently shake off excess, and then dip the fish in the egg mixture, then the breadcrumbs, gently pressing into the crumbs. Repeat with the remaining pieces of fish.
- Place a metal cooling rack on top of a baking sheet, and mist with olive oil. Place the fish sticks on the rack and bake until the fish is cooked through, about 12 minutes. (For even browning, you can turn the fish over halfway through cooking time and spray the second side with olive oil.)

- Make delicious and crispy fish sticks, begin with grabbing a box of your favorite frozen food brand of breaded fish sticks.
- To prevent the fish sticks from sticking, lightly brush or spray with oil. Place the fish fingers in a single layer in the air fryer tray, or air fryer basket. Work in batches to avoid overlap in the basket.
- Air Fry at 400 degrees Fahrenheit for 10-12 minutes cook time, at the 5 minute mark flip them over during the cooking process.
- Once the outside is golden brown and crispy, remove fish sticks from basket. Serve with your favorite dipping sauce.

- For the fish sticks: Cut the fish into sticks about 3 inches long and 1/2-inch thick. Combine the breadcrumbs, coconut, cornmeal, curry powder and 1/2 teaspoon salt in the bowl of a food processor and pulse until the coconut is coarsely chopped. Dump out into a shallow dish. Whisk the egg white with 1 tablespoon water in another shallow dish.
- Dip the fish into the egg white, shake off the excess and coat thoroughly in the breadcrumb mixture. Bake immediately, or refrigerate up to 1 hour before baking. To freeze, arrange the breaded fish sticks on a baking sheet and freeze until hard, 1 to 2 hours. Store in re-sealable freezer bags for up to 1 month.
- For the sauce: Combine the yogurt, carrot, 1 tablespoon water, sweet chile sauce, soy sauce, scallions, lime juice and salt to taste. Wrap and refrigerate until ready to serve. Preheat the oven to 425 degrees F. Fit a rimmed baking sheet with a baking rack and spray with cooking spray. Generously spray the fresh or frozen fish sticks all over with cooking spray. Arrange on the baking rack and bake, flipping halfway through, until golden and crispy and cooked through, 15 to 20 minutes (if frozen, 20 to 25 minutes). Remove from the oven and season with salt. Serve with the dipping sauce.

- Preheat the air fryer or oven to 350ºF (180ºC).
- Remove the fish fillets from the fridge, pat dry with a paper towel, and cut into sticks 1 inch wide.
- Into a shallow bowl or large plate, combine the crushed pork rind, almond flour, salt, garlic powder, paprika, dill, and black pepper. Mix with a fork. Set aside.
- Add the mayonnaise, dijon mustard, and water to a small bowl and whisk to combine.
- Dip the fish strips into the mayo mixture and tap the excess, transfer to the almond flour mixture, rolling from one side to another of the plate until nicely coated in the breading.
- Transfer to a plate or straight to the air fryer basket or a greased baking sheet if made in the oven.
- Repeat the process with the other fish sticks. Don't overlap them; you may need to cook them in 2 or 3 batches depending on the size of your air fryer.
- Before cooking, spray avocado oil spray or olive oil spray over the breaded fish sticks.
- Cook for 5 to 6 minutes, turn over, and cook for another 5 to 6 minutes or more until crisp and center are tender and cooked.
- Remove from the air fryer or oven and serve immediately.
