White-Fish Stew with Dumplings image

This easy one-pot meal has you drop spoonfuls of biscuit dough on top of a simmering pot of delicate fish stew. The result is a comforting dinner ideal for shoulder season.

1 cup unbleached all-purpose flour
1 1/2 teaspoons baking powder
Kosher salt and freshly ground pepper
1/2 cup plus 2 tablespoons heavy cream
3 tablespoons unsalted butter
1 medium onion, finely chopped
2 celery stalks, finely chopped
2 carrots, peeled and finely chopped
2 bottles (each 8 ounces) clam juice
1 teaspoon fresh thyme leaves
1 pound skinless cod or halibut fillets (3 to 4)
2 tablespoons chopped fresh parsley leaves

Steps:

  • Whisk together 3/4 cup flour, baking powder, and 1/2 teaspoon salt. Stir in cream until dough is shaggy. In a medium pot, melt butter over medium heat. Add onion, celery, and carrots; season with salt and cook, stirring, until softened, 6 to 8 minutes.
  • Add remaining 1/4 cup flour and cook, stirring, 1 minute. Stir in clam juice, 1 cup water, and thyme. Bring to a boil, then reduce heat and simmer until thickened slightly, about 5 minutes.
  • Season fish with salt and pepper and add to broth. Drop heaping spoonfuls of dough into fish mixture. Cover and simmer until dumplings are cooked through, 15 to 18 minutes. Season to taste. Sprinkle with parsley; serve.

Homemade fish dumplings are an important part of Bergen Fish Soup. The goal is to make them as light as possible. The dumplings can also be served on their own, or with a dill-flavored béchamel sauce.

Yield Makes 10 to 12 dumplings

Number Of Ingredients 6

1 pound cod fillet, skin and bones removed
2 large eggs
2 to 3 tablespoons cornstarch
1 teaspoon fine sea salt
1 1/2 teaspoons freshly ground white pepper
2 cups whipped cream

Steps:

  • Run the fish through a meat grinder twice; it should be very fine and smooth. (You can use a food processor, although it can be more difficult to get a smooth consistency that way.)
  • In a large bowl, lightly beat the eggs. Add the cornstarch, salt, pepper, and fish and mix well. Gently fold the cream into the fish mixture, trying not to deflate cream.
  • With a spoon, form the dumpling mixture into small balls.

  • Heat the pot and add an appropriate amount of cooking oil. Heat oil until hot. Add chopped green onion stalks and stir-fry. Add minced pork and stir-fry until aromatic, then add minced dried shell shrimps and minced water chestnut. Stir-fry until nearly cooked. Add salt, chicken bouillon powder, fish sauce, and sesame oil. Turn off stove, remove from pot and allow to cool. This will be the filling.
  • Take 2/3 pounds (300 grams) of eel meat without bones and tendons. Use back of knife to mince eel meat, then fling the minced eel onto the cutting board several times to increase its viscosity.
  • Stuff an appropriate amount of filling into the dumpling wrappers. Fold them and tightly pinch them into half-circle shapes. Then, pinch the ends to form a typical dumpling shape. Put in bamboo steamer with a bit of space between each dumpling.

  • Start by making the dumpling dough. Add the all-purpose flour to the bowl of an electric mixer. With the mixer on low, slowly add the water. Run the mixer until the dough comes together into a smooth ball. 2 cups of water is a baseline. You may need less water in humid climates and more in drier climates/times of year (i.e. winter).
  • The finished dough should be soft and pliable, but not wet or sticky. Cover with an overturned bowl or plate, and let the dough rest on the counter for 1 hour. This gives the flour more time to absorb moisture, which will make the dough smoother and easier to work with. While the dough is resting, make the filling.
  • Take a spoon and scrape the fish meat a little bit at a time, discarding the tough membrane that’s left behind. Coarsely chop the fish (no need to make it into a paste-like texture at this stage). Add the fish to a large mixing bowl along with the rest of the filling ingredients. Whip in one direction using chopsticks or a wooden spoon for a good 5 minutes until the filling becomes gooey and sticky. Cover and marinate in the refrigerator for 15 minutes.
  • Now we are ready to assemble the dumplings! When the dough is done resting, cut it into eighths. Take one of your smaller pieces of dough, keeping the rest of the pieces covered to prevent them from drying out. Roll the small piece of dough into a thick cylinder on a clean and lightly floured surface. Cut the cylinder into 10-gram pieces using a kitchen scale. Now take one piece, and roll it from edge to center with a small rolling pin as you turn the dough in a circular motion. The end result is a 3-inch diameter dumpling wrapper that has thinner edges and a slightly thicker center.
