- In a large bowl, combine young coconut, fruit cocktail, pineapple tidbits, corn kernels, kaong, nata de coco, cheese, condensed milk, and all-purpose cream. Stir gently to distribute.
- Chill for a few hours or freeze until firm.

- In a large bowl or container with a lid, combine and mix the sweetened condensed milk and all-purpose cream.
- Add the rest of the ingredients and give it a good toss until well combined.
- Cover bowl with a cling wrap and chill for several hours before serving. May also be frozen.

This is a great fruit salad that doesn't need in season fruit! It is pretty and I have served it for brunches. If you use a little of the maraschino juice, it is a pink color. I got this recipe online when I was searching for an easy and different fruit salad.

- Blanch one pound of pea shoots in boiling water for about a minute, then drain and plunge shoots into ice bath; drain. Squash, chayote, fern shoots, watercress, swamp cabbage, spinach, marunguray, katuday, or sweet potato leaves(only the edible kind), can be substituted.
- Cut shoots into 1 inch pieces and place them in a large serving bowl. Add the remaining ingredients and toss to combine.
- Calamandin limes (bartender limes) are traditionally squeezed over the salad at the end.

- In a large bowl, combine sweetened condensed milk, sour cream & lime juice; mix well. Stir in the remaining ingredients (except cherries & nuts); cover & chill at least 3 hours or overnight. To prevent cherries from "bleeding", fold them gently into the salad just before serving, and top with chopped nuts if desired.
- Salad may also be frozen and served like ice cream.

FILIPINO AMBROSIA FRUIT SALAD WITH MACAPUNO
This is a fruit salad my mom used to make. Macapuno is a young coconut. The Macapuno Strings and Sweet Coconut Gel can be found in Asian markets and are usually in a glass jar. It's great for potlucks and can be easily frozen. Variations include adding cheddar cheese, nuts such as macadamia or cashews, chopped fresh apples or other fruits such as mandarin oranges, bananas, etc.

Steps:
- Drain the fruit cocktail, macapuno and coconut gel well, set aside.
- With the back of a spoon blend the cream cheese with 1/2 can of condensed milk and mix until smooth.
- You can use more condensed milk and/or cream cheese if desired.
- In a large bowl, combine all ingredients together.
- Chill for 30min-1hr or freeze.
- Enjoy!
