MARINATED FIG AND GOAT CHEESE CROSTINI

Steps:
- In a medium bowl, combine the goat cheese, olive oil, honey and half of the tarragon, shallots and lemon zest. Season with salt and pepper.
- In a separate bowl, toss the figs with the lemon juice, saba vinegar and remaining tarragon, shallots and lemon zest. Season with salt and pepper.
- Spread the goat cheese mixture on the crostini, then top with the figs.
SALAMI CUPS WITH WHIPPED HONEY RICOTTA AND FRESH FIGS

Steps:
- Preheat the oven to 400 degrees F.
- Arrange the salami slices over the cups of a 24-cup mini muffin tin (slightly overlapping is fine), then top with a second mini muffin tin, pressing the salami slices into the cups and compressing them. Flip the muffin tins over and put the whole thing on a baking sheet upside down. Top with a cast-iron pan for more compression. Bake for about 12 minutes, then remove the cast-iron pan carefully. Bake for an additional 12 minutes. Let the salami cups cool completely, dabbing any rendered fat with paper towels.
- Using a hand mixer, whip the ricotta, mascarpone, honey, lemon juice, crushed red pepper and some salt until light and fluffly, about 2 minutes. Transfer the mixture to a piping bag (or make a piping bag using a resealable plastic bag).
- Fill each salami cup with the some of the whipped ricotta mixture, then top with a couple slices of fig and some crushed hazelnuts. Garnish with the lemon zest and basil.
FIG AND RICOTTA CROSTINI

- Preheat oven to 375 degrees F (190 degrees C).
- Place the baguette slices on an ungreased, foil-lined baking sheet.
- Bake the bread in the preheated oven until the bottoms are brown, about 5 minutes; flip and bake until crisp, 5 minutes. Remove the pan from the oven.
- Spread 1 tablespoon of ricotta on each slice of toasted bread. Place a few ribbons of basil on each, arrange a slice of fig on top, and drizzle the finished crostini with balsamic vinegar.

CROSTINI WITH GORGONZOLA AND FIGS

- Preheat broiler. Arrange baguette slices on baking sheet. Broil until lightly toasted on 1 side.
- Mash crumbled Gorgonzola and 1 tablespoon butter in small bowl until smooth. Spread Gorgonzola mixture evenly over untoasted side of baguette slices. Top with figs. Drizzle oil over figs. Broil until Gorgonzola mixture bubbles around edges, about 3 minutes. Transfer crostini to platter and serve.
CROSTINI WITH WARM GOAT CHEESE AND BALSAMIC FIGS
These are very easy to make and are absolutely delicious. The ingredients are estimates since it really depends on how large your crostini are. Feel free to make your own crostini by cutting french bread into thin slices and toasting them in the oven. Prep time does not include the soak time for the figs. Another option for serving, is to take the soaked figs and blend in a mini food processor, then spread on the goat cheese before baking.

Steps:
- Chop figs into 1/4 inch pieces and soak in balsamic vinegar, over night.
- When ready, preheat oven to 350 degrees F. Spread goat cheese onto the crostini, and top with a spoonful of the chopped balsamic figs. Bake for approximately 10 minutes.
- Remove from oven, and drizzle with a few drops of the remaining balsamic vinegar. Serve.

- Place the quartered figs in a single layer on the foil-lined baking pan and roast the figs for about 20 minutes. Check for doneness at the 15-minute mark. You should see some caramelization from the natural sugar from the figs. Remove from oven and transfer to a plate. The caramelized sugar hardens as it cools so it might be a little harder to peel off the soft figs if you wait until they cool.
- If there's room in your oven, in another small baking pan, arrange the salami in a single layer and bake for 6-8 minutes until the salami has rendered some of its fat and just starts to brown. Remove from oven, blot with paper towel and slice into thin strips and set aside. As mentioned above, you can save time by preparing the salami at the same time you're roasting the figs. Just be mindful of the shorter oven time. (Alternatively, you can also microwave the salami on a plate for 30-40 seconds.)
- To save time, also while the figs are roasting in the oven, reduce the balsamic vinegar in a small sauce pan over medium heat on the stove, stirring occasionally. It will take roughly 15 minutes for the balsamic vinegar to reduce by half. Remove from heat and transfer to a small container. The reduced vinegar will thicken as it cools. Set aside.
