ARTICHOKE AND BEAN SALAD WITH TUNA

Canned foods make eating healthy easier. And this salad is both easy-to-make and versatile. Canned beans, artichoke hearts and tuna make this lunch, dinner or passed appetizer nutrient-rich and delicious.

1 (15-ounce) can white northern or cannellini beans, drained & rinsed
1 (15-ounce) can artichoke hearts, drained and quartered
1 rib celery, finely diced
2 tablespoons red onion, finely diced
1 (6-ounce) can tuna, drained and flaked
3 tablespoons extra-virgin olive oil
juice and zest of 1 lemon
¼ cup chopped fresh parsley
Kosher salt and cracked black pepper

Steps:

  • Combine all ingredients in a mixing bowl, and season to taste with salt and pepper. Toss gently and refrigerate 45 minutes before serving.
  • Serve salad on a bed of mixed greens with crusty bread. Or alternatively, serve salad scooped onto a hero roll with arugula.

Grilled Rare Ahi, Ligurian Black Olive Smashed Potatoes, Shaved Young Artichoke, Fava Bean and Meyer Lemon Salad image

4 (5-ounce) pieces Sashimi grade Ahi tuna
1 pound Yukon gold potatoes
1/4 cup Ligurian black olives, pitted, minced
2 tablespoons Italian parsley
8 tablespoons extra virgin olive oil
4 young artichokes, fresh
1 cup shelled young fava beans, raw
1/2 Meyer lemon, shaved or sliced paper thin
1/4 sweet red onion, shaved or sliced paper thin
2 tablespoons Meyer lemon juice
3 tablespoons extra virgin olive oil
2 tablespoons Italian parsley leaves
Salt and white pepper, to taste

Steps:

  • Salt and fresh white pepper In a medium size pot add the potatoes and cover with cold water. Season generously with salt and put over medium heat until potatoes are tender. You can hold them for 45 minutes. At this point over low heat. When ready to serve, pull the potatoes out with a slotted spoon and place in a mixing bowl. Using a fork, smash the potatoes until there are no large lumps. Add the olives and the parsley and bit more of the extra virgin olive oil, add a little of the potato cooking liquid, combine well and season with salt and white pepper to taste. Serve immediately. For the Artichoke, Fava Bean and Meyer Lemon Salad: Break off the outer leaves of the artichokes until you get to the inner, tender leaves. Trim off the top of the artichokes. Using a paring knife or vegetable peeler trim off any green at the base of the artichokes and rub each artichoke with a sliced lemon to prevent discoloration. Slice the artichokes paper thin into a medium sized bowl. Add the rest of the ingredients and toss to combine. For the tuna, quickly grill the tuna for 1 minutes on each side. Making sure you do not over cook the fish
  • Shaved Young Artichokes, Fava Bean and Meyer Lemon Salad .

FAVA BEAN AND RAW ARTICHOKE SALAD



Fava Bean and Raw Artichoke Salad image

4 large fresh artichoke hearts, thinly sliced or quartered*
1 pound fresh fava beans, shelled, washed, and drained
2 to 3 scallions or spring onions, to taste, white and green parts, thinly sliced
2/3 cup slit green Greek olives
1 small bunch fresh dill, snipped
1/2 cup extra virgin olive oil
1 large lemon, juiced
Salt and freshly ground black pepper, to taste

Steps:

  • Combine the artichokes, fava beans, scallions or spring onions, olives, and dill in serving bowl.
  • Whisk together the olive oil, lemon juice, salt and pepper and toss well with the salad. Serve immediately.
  • Note: To prepare artichokes the Greek way, cut away most of the stem, leaving about 1 inch of it intact. Have 1 or 2 cut lemons handy as you work with the artichokes, rubbing them on cut surfaces to prevent discoloration. Also have a bowl of acidulated water on hand. Snap off the tough outer leaves near the base. Hold the artichoke on its side on a cutting board and, using a sharp serrated knife, cut the artichoke crowns down to within 1 1/2 inches of the base. With a paring knife, trim the tough green exterior off the stem. Rub the artichoke with lemon. Using a teaspoon, thoroughly scrape away the hairy choke on the inside. Holding the artichoke on its side again, trim away any leaf stubs by going around the artichoke almost on a bias with the knife. Using a paring knife, trim the stem so that only its inner, tender core remains. Rub the artichoke with lemon and drop into acidulated water. Continue until all the artichokes are clean.

RAW BABY ARTICHOKE SALAD



Raw Baby Artichoke Salad image

1 pound of tiny, young baby artichokes
3 tablespoons fresh lemon juice
1/4 cup extra virgin olive oil, divided
2 cups mixed mesclun salad
1/4 cup basil leaves, washed and stemmed
1/4 cup flat parsley leaves, washed and stemmed
Chunk of Parmesan cheese for shavings

Steps:

  • Choose only the smallest, most tender, of the young and green fresh artichokes. Once they have developed their purple choke inside they are no longer desirable for this raw salad.
  • Wash the artichokes carefully. Trim the pointy ends of the leaves, cut off the top 1/4-inch and tear off and discard and blemished outer leaves.
  • Slice the artichokes, paper thin, lengthwise and place in a bowl with 1 tablespoon lemon juice and 2 tablespoons olive oil. Toss to combine well. Marinate the artichoke for no more than several minutes or they may blacken.
  • Toss the salad greens with the basil and parsley leaves. Whisk the remaining lemon juice and olive oil together and dress the salad greens with this vinaigrette. Toss together.
  • Place some salad evenly divided on several plates and divide the sliced artichokes among the plates by topping each dish with some marinated artichokes.
  • Shave fresh Parmesan cheese on each dish to finish.

FAVA BEAN SALAD WITH LEMON VINAIGRETTE AND SHAVED MANCHEGO CHEESE

4 cups shucked fresh fava beans
1/4 cup fresh lemon juice
2 tablespoons minced garlic
1/4 cup olive oil
Salt and freshly ground black pepper
1/4 pound Manchego cheese, shaved thinly (or Asiago or Romano)
2 tablespoons finely chopped flatleaf parsley

Steps:

  • Fill a bowl with ice and water. Bring a large pot of salted water to a boil. Add the fava beans and cook until just tender, 3 to 4 minutes. Drain and shock in ice water. Drain again and remove outer skins. Place the beans in a medium serving bowl. In a small bowl, combine the lemon juice, garlic and olive oil and whisk until blended. Season with salt and pepper to taste. Pour the mixture over the beans and mix well. Add the cheese, sprinkle with the parsley and serve.

4 artichokes
1 lemon, halved
5 tablespoons/74 ml extra-virgin olive oil, plus more as needed
Salt and freshly ground black pepper
Parmigiano cheese, shaved, as needed

Steps:

  • Clean the artichokes by removing all the tough outer leaves until you get to a pale yellow center. Peel the outer tough skin of the artichoke stems with a paring knife. Remove the purple leaves and hairy portion covering the choke; discard. Trim 1/3 off the tops of each artichoke, rub with lemon and finely chop. Squeeze extra lemon juice on artichokes to prevent from browning.
  • Plate the artichokes and season with olive oil and extra lemon juice, if needed. Then add pepper and salt, to taste. With a vegetable peeler shave the Parmigiano cheese and top the artichokes. Lightly drizzle with more olive oil if needed.

2 lemons
3 medium artichokes
3 cups whole milk
5 cups water, plus more for bowl and pan
1 pound each white and green asparagus, cut into 5-inch spears, trimmed and peeled
2 cups dry white wine
2 pounds fresh fava bean pods, shelled (about 2 cups)
1/2 cup fresh mint
3 ounces ricotta salata cheese, crumbled (3/4 cup)
1/3 cup low-fat buttermilk
1/3 cup extra-virgin olive oil
1 scallion, green part only
3 tablespoons fresh lemon juice (from 2 lemons)
1 teaspoon finely grated lemon zest
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Make the salad: Juice 1 lemon into a large bowl filled with water. Remove tough outer leaves of artichokes, cut off top two-thirds, and scoop out fuzzy chokes with a spoon; discard. Cut each in half, transferring to lemon water as you work to prevent discoloration.
  • Bring milk, 3 cups water, and white asparagus to a simmer in a medium saucepan over medium-high heat. Reduce heat to medium-low, and cook until tender, skimming foam, about 45 minutes. Transfer to a paper-towel-lined plate; let drain and cool.
  • Bring prepared artichokes, wine, remaining lemon (squeezed, with rind), and remaining 2 cups water to a boil in a medium saucepan. Reduce heat, and simmer until tender, 13 to 16 minutes. Using a slotted spoon, transfer artichokes to a paper-towel-lined plate; let drain and cool. Discard lemon.
  • Meanwhile, prepare an ice-water bath. Bring a large saute pan of water to a boil. Add green asparagus, and cook until tender, 4 to 6 minutes. Transfer to ice-water bath, and let cool; reserve cooking liquid. Drain asparagus on a paper-towel-lined plate. Add fava beans to boiling cooking liquid, and cook until tender, 3 to 5 minutes. Transfer to ice-water bath, let cool, then squeeze beans from skins. Divide beans and vegetables among 8 plates. Sprinkle with mint and ricotta salata.
  • Make the dressing: Puree all the ingredients in a food processor until smooth. Drizzle over salads, and serve.
