BUTTER PECAN FRENCH TOAST
This dish is a fabulous twist on traditional French toast. Substituting French bread for regular sliced bread and adding bourbon to the sauce makes it a real showstopper that's perfect for breakfast, brunch or even dessert.

- Heat a large nonstick skillet over medium-low heat and melt 2 tablespoons of the butter.
- In a large bowl, combine the milk, eggs, 1/4 cup of the brown sugar, the cinnamon, and vanilla. Whisk together until everything's combined and smooth.
- One by one, dunk the slices of bread into the egg mixture and place them on the buttery skillet.
- Fit as many slices in the skillet as you can, cooking them until golden on the first side, about 2 1/2 minutes. Flip to cook them on the other side for about 2 minutes. Remove them to a plate. Add 2 tablespoons of the butter to the skillet and repeat with the rest of the bread slices until they're all cooked.
- To the same skillet, add the remaining 4 tablespoons butter, the remaining 1 cup of brown sugar, and the salt. Stir and cook over medium heat until the butter and sugar are melted and bubbling, 2 to 3 minutes. Turn off the heat completely, pour in the bourbon and stir, allowing the fumes to dissipate for about 1 minute. Turn the stove on medium heat and continue to stir and cook for another minute, or until the mixture is starting to thicken. Add the pecans, stir to combine. Keep cooking the sauce, stirring constantly, until the mixture is deep golden, 2 to 3 minutes. Be careful not to cook it too long as it will become chewy, you want a nice caramelly sauce. Turn off the heat.
- Serve two pieces of French toast with a little butter. Sift over some powdered sugar.
- Spoon on a generous amount of the sauce then top with whipped cream and a sprinkling of cinnamon.
FAT MOMMA'S LAST NIGHT FRENCH TOAST RECIPE - (5/5)

- In a 9 x 13-inch dish, melt 1 stick margarine or butter. Add 2 cups brown sugar, 2 tbsp corn syrup, and cinnamon to melted margarine and mix well in baking dish. Sprinkle 2/3 cups nuts (chopped if you're cheap, or halved if you're rich) on sugar/butter mixture. Spread each slice of French bread (at least 1 inch thick) heavily with cream cheese and place cream cheese side down on sugar/butter/nuts in baking dish. Mix together 2 cups milk, 5 eggs and 1 tsp vanilla and pour over the bread in the dish. Cover and refrigerate overnight. Next morning bake in 375 degree oven for about 45 minutes until puffed and lightly browned. Remove from oven and cool slightly before serving. Dust lightly with confectioners' sugar and serve.
MAMA'S FRENCH TOAST CASSEROLE
My favorite breakfast dish from my childhood, and still is! My mother would make this for special occasions when we had a lot of family over, for Christmas or Thanksgiving or other holidays. The cream cheese and maple syrup with the french toast are a combination that pleases everyone. Prep it and leave it in the fridge overnight, then bake it in the morning. Just the smell of it will make your whole family smile!

- 1. Grease an oven safe, 13.5 x 9" pan with butter.
- 2. Place 1/2 of the bread in the bottom of the pan, then add the cheese, then place the rest of the bread on top.
- 3. Beat eggs in a separate bowl, and add melted butter and maple syrup in the bowl.
- 4. Pour this mixture over the bread, cover with plastic wrap or foil paper and refrigerate it for 8 or 9 hours (overnight is fine).
- 5. Remove from the refrigerator and bake in a preheated oven at 325 degrees for 35 to 40 minutes.
- 6. Remove from oven and let cool for a couple minutes, then enjoy!

My mom always fixed French toast for us in the skillet. For those that aren't worrying about weight, you could use 6-8 eggs and regular milk.... MOM'S FRENCH TOAST
This isn't your typical French toast. But it is what I was raised on! I couldn't understand why resturaunts didn't serve real french toast when I was little. This one is a much thicker "coated" and just a different texture to it. Can be doubled. I hope your family enjoys it as much as ours does! Can be made with any kind of bread you like, white, whole wheat, I tried texas toast bread and that was pretty good also!
