FAT FREE TORTILLAS

Fat Free Tortillas image

Homemade tortillas bring a wide world of possibilities into your kitchen: breakfast burritos, melty quesadillas, tacos, and fajitas. All with the bonus of being fat-free!

Time 40m

Yield 12

Number Of Ingredients 4

3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup warm water

Steps:

  • Combine the flour, baking powder, and salt in a mixing bowl. Stir with a fork to combine. Slowly add the warm water while stirring until a crumbly dough forms. Turn the dough out onto a lightly floured work surface. Knead the dough until smooth. Divide the dough into equal sized pieces and roll each into a smooth ball. Cover lightly with plastic wrap and let stand at room temperature for 15 minutes. Preheat an ungreased griddle or skillet to 375 degrees F. Roll each dough ball out into a very thin circle. Place on the griddle and cook until lightly browned and blistered. Flip the tortilla over and cook until lightly browned and blistered. Immediately remove the tortilla from the griddle and cover with a dish towel while you cook the remaining dough. Serve warm or store in an airtight container. These can be frozen by placing waxed paper between each tortilla and placing in a ziptop plastic bag. Press out as much air as possible.

Time 2h

Yield 16 tortillas

Number Of Ingredients 5

1 cup plus 2 tablespoons milk
1/3 cup rendered lard, duck fat, vegetable shortening or unsalted butter
3 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1 3/4 teaspoons kosher salt

Steps:

  • Heat the milk in a small saucepan over medium heat until tiny bubbles start to form around the edges of the pan (the milk should be 180 degrees F), 4 to 5 minutes. Immediately remove from the heat and stir in the lard until melted. Let cool for 15 minutes.
  • Meanwhile, whisk the flour, baking powder and salt in a large bowl until completely combined. Pour in the warm milk mixture and stir with a rubber spatula until a shaggy dough forms.
  • When cool enough to handle, knead the dough in the bowl until almost completely smooth, about 3 minutes; do not overwork, the dough should be soft and only slightly elastic and not sticky. Wrap in plastic and let rest at room temperature for 1 hour to relax dough.
  • Divide the dough into 16 balls about a scant 3 tablespoons each (or 46g.). Arrange the balls on a rimmed baking sheet and cover with a damp kitchen towel until ready to use.
  • Working with one dough ball at a time, roll out on a lightly floured surface to a 7-inch round.
  • Heat a medium cast-iron skillet or large griddle over medium-high heat.
  • Working with one at a time (unless using a large griddle), cook the tortillas, reducing the heat if they are getting dark too quickly, until air bubbles form on the surface and the bottom is brown in spots, about 30 seconds. Poke any large bubbles with a fork to release steam, flip the tortillas and cook until brown in spots on the other side, about 30 seconds. Stack and wrap the tortillas in a clean kitchen towel and keep warm. Repeat rolling and cooking the remaining dough balls.

FAT FREE WHOLE WHEAT TORTILLAS

Fat Free Whole Wheat Tortillas image

I wanted tortillas to go with tonight's dinner but was out of them. So I went searching for a recipe that did not contain any fat. I found this one, and tweaked it a bit, in one of my favorite cookbooks "500 Fat Free Recipes." My husband could not get enough of them. We dipped them into soup and made bean burritos out of them.

Categories     Breads

Time 40m

Yield 12-16 serving(s)

Number Of Ingredients 2

3 cups whole wheat pastry flour
1 -1 1/2 cup water

Steps:

  • In a large bowl combine the flour and 1 cup of water.
  • Mix well.
  • If it needs more water to get to a dough stage, then add.
  • On a floured surface knead the dough until it is soft.
  • Make it into balls (12-16 depending on size).
  • Then flour a board well.
  • Take each ball and roll it as flat as you can.
  • Meanwhile heat a pan until it is quite hot.
  • Place the rolled out tortilla in the pan and cook for about 45 seconds to 1 minute or until it is bubbling and starting to brown.
  • Then turn it over and cook for another 45 seconds.
  • Place a clean cotton dishtowel on a plate.
  • As each tortilla comes out of the pan put it inside the towel and wrap them up.
  • I got 16 tortillas but my pan is small.
  • If you want bigger tortillas, make bigger balls of dough.

FAT FREE FLOUR TORTILLA

Fat Free Flour Tortilla image

Do you ever see those recipes that advise people to use "fat free tortillas?" I've never seen them in the stores, ever. So this is a great way to enjoy tortillas without the fat and cholesterol. I often make a bunch and then cut some of them up for tortilla chips and then freeze the rest of them.

Categories     Breads

Time 1h30m

Yield 12 tortillas

Number Of Ingredients 5

4 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons salt
4 tablespoons fat-free mayonnaise
1 1/4 cups hot water

Steps:

  • In large bowl, combine flour, baking powder, and salt. Stir well. Add fat-free mayonnaise and use pastry blender (or fork) and blend until flour mixture appears to be coarse throughout.
  • Add hot water and stir well. Knead in extra flour. Cover and allow to stand for 10 minutes.
  • Set iron griddle over medium to medium-high heat. Tear off a piece of dough, roll into a ball (approximately 2 1/2-inches).
  • On well-floured board, roll dough out into a circular flat form as thin as possible (less than 1/8-inch thickness) approximately 6 inches in diameter. Add more flour if dough is sticky.
  • Place tortilla on heated griddle and allow it to bubble slightly. Heat for approximately 1-2 minutes.
  • Flip tortilla and brown other side approximately 1 minute longer. If tortilla has browned in variable spots and does not have a dough-like texture, then it is done.

  • Whisk the two flours, salt and baking powder together in a large shallow bowl. Add canola oil and 1 cup of the water and mix to form a dough. Add enough additional water until the dough comes together. Knead 10-15 times then let the dough rest, covered with a towel for five minutes.
  • Divide the dough into 18 equal pieces. Run your hand under a running faucet and shake off the excess water. Wetting your hand will keep the dough moist as you roll. Roll each piece into a ball and place on cookie sheet, not touching each other, and cover with a towel. Allow dough to rest five minutes.
  • Keep the dough balls covered with the towel as you work. Sprinkle counter with flour and keep rolling pin floured as well. Remove one dough ball from under the towel and place on the floured counter. Press gently with your hand then use floured rolling pin to roll into a circle.
