1/2 tablespoon olive oil
1 bunch green beans
Kosher salt
3 tablespoons soy sauce
3 tablespoons tahini
2 tablespoons honey
1 tablespoon sesame oil
Pinch crushed red pepper
2 cloves garlic, smashed

Steps:

  • Add olive oil to a large saucepan over medium heat. Add green beans and saute, until just tender, about 3 minutes. Season lightly with salt to taste and remove from heat.
  • Add soy sauce, tahini, honey, sesame oil, red pepper and garlic to a small bowl and mix until thoroughly combined. Drizzle mixture over beans and lightly toss to combine. Plate and serve.

Add 1/2 cup water, cover and cook until tender, about 6 minutes, then uncover and boil until the water evaporates, 1 more minute. Season with salt and pepper; toss with chopped pecans.

2 slices bacon, cut up
1 medium onion, cut into think wedges (about 1 cup)
1/2 cup fresh sliced mushrooms
1 1/2 cups chopped tomatoes or 1 (14 1/2 ounce) can diced tomatoes, drained
1/4 teaspoon salt (*see note below)

Steps:

  • Leave green beans whole or cut into 1-inch pieces.
  • In a large saucepan cook the beans in a small amount of boiling salted water about 10 minutes or until crisp-tender; drain.
  • Meanwhile, in a 10-inch skillet cook bacon over medium heat until crisp, stirring occasionally.
  • Remove bacon, reserving drippings in skillet.
  • Drain bacon on paper towels; set aside.
  • Cook and stir onion and mushrooms in reserved drippings over medium heat until tender.
  • Add tomato and salt.
  • Cook, uncovered, 2 to 3 minutes or until most of the liquid is absorbed. Transfer beans to a serving platter or bowl.
  • Top with onion mixture.
  • Sprinkle bacon over the vegetables.
  • *Note: Omit salt if using canned tomatoes.

2 cans of whole green beans
onion or onion powder

Steps:

  • Cut bacon into pieces and fry in a pan. Once bacon is browned, pull it from the pan and set aside. Drain the water from the green beans and set water aside. Add green beans to hot pan with bacon grease, cook the green beans in the bacon grease for about 5 minutes, stirring. Add diced onion or a sprinkling of onion powder, now pour the reserved water from the cans into the pan and reduce heat. Keep warm on the stove until ready to serve.
