Extra Vegetable Fried Rice image

Learn how to make vegetable fried rice-it's a simple and satisfying dinner! This vegetarian recipe features extra vegetables and brown rice. Recipe yields 2 large or 3 moderate servings (I think you could double it if you have a large enough skillet, but you might not get as much caramelization on the edges of the veggies and rice).

1 1/2 teaspoons + 2 tablespoons avocado oil or safflower oil, divided
2 eggs, whisked together
1 small white onion, finely chopped (about 1 cup)
2 medium carrots, finely chopped (about 1/2 cup)
2 cups additional veggies, cut into very small pieces for quick cooking (see photos for size reference; options include snow peas, asparagus, broccoli, cabbage, bell pepper, and/or fresh or frozen peas-no need to thaw first)
1/4 teaspoon salt, more to taste
1 tablespoon grated or finely minced fresh ginger
2 large cloves garlic, pressed or minced
Pinch of red pepper flakes
2 cups cooked brown rice (*see notes!)
1 cup greens (optional), such as spinach, baby kale or tatsoi
3 green onions, chopped
1 tablespoon reduced-sodium tamari or soy sauce**
1 teaspoon toasted sesame oil
Chili-garlic sauce or sriracha, for serving (optional)

Steps:

  • This recipe comes together quickly. Before you get started, make sure that all of your ingredients are prepped and within an arm's reach from the stove. Also have an empty bowl nearby for holding the cooked eggs and veggies. I'm suggesting that you start over medium-high heat, but if at any point you catch a whiff of oil or food burning, reduce the heat to medium.
  • Warm a large cast iron or stainless steel skillet over medium-high heat until a few drops of water evaporate within a couple of seconds. Immediately add 1 1/2 teaspoons of oil and swirl the pan to coat the bottom. Add the scrambled eggs and swirl the pan so they cover the bottom. Cook until they are just lightly set, flipping or stirring along the way. Transfer the eggs to a bowl and wipe out the pan with a heat-proof spatula.
  • Return the pan to heat and add 1 tablespoon of oil. Add the onion and carrots and cook, stirring often, until the onions are translucent and the carrots are tender, about 3 to 5 minutes.
  • Add the remaining veggies and salt. Continue cooking, stirring occasionally (don't stir too often, or the veggies won't have a chance to turn golden on the edges), until the veggies are cooked through and turning golden, about 3 to 5 more minutes. In the meantime, use the edge of your spatula or a spoon to break up the scrambled eggs into smaller pieces.
  • Use a big spatula or spoon to transfer the contents of the pan to the bowl with the cooked eggs. Return the pan to heat and the remaining 1 tablespoon oil. Add the ginger, garlic and red pepper flakes, and cook until fragrant while stirring constantly, about 30 seconds. Add the rice and mix it all together. Cook, stirring occasionally, until the rice is hot and starting to turn golden on the edges, about 3 to 5 minutes.
  • Add the greens (if using) and green onions, and stir to combine. Add the cooked veggies and eggs and stir to combine. Remove the pan from the heat and stir in the tamari and sesame oil. Taste, and add a little more tamari if you'd like more soy flavor (don't overdo it or it will drown out the other flavors) or salt, if the dish needs an extra boost of overall flavor.
  • Divide into bowls and serve immediately. I usually serve mine with chili-garlic sauce or sriracha on the side. Leftovers store well in the refrigerator, covered, for 3 to 4 days (if you used purple cabbage, it might stain your scrambled eggs a funny blue color, but it's fine to eat).

Vegan fried rice is so easy and perfect for weeknights when you're craving a flavorful, healthier option than take-out. With JUST Egg (optional) and your choice of healthy veggies, vegan fried rice is always a hit. Get creative and try a variety of vegetables. Add your favorite vegan protein to turn it into a full meal.Yield: serves 3 as a side dish or 1 to 2 as a main with added protein.

3 cups cooked rice, cooled or chilled (I prefer white jasmine rice; see Note 1.)
2 tablespoons neutral oil, such as grapeseed or sunflower
3 cloves garlic, minced
1 large carrot, peeled and diced
½ cup frozen peas or shelled edamame
approx. 2 cups additional chopped mixed vegetables (such as mushrooms, cabbage, corn, onion, snow peas; fresh or frozen.)
3 green onions, chopped
2 tablespoons soy sauce or tamari (for GF)
1 ½ teaspoons toasted sesame oil
½ cup JUST Egg, optional (Plant-based egg product; See Note 2.)
pinch of red pepper flakes, optional
salt and pepper

Steps:

  • Cooking happens quickly, so it's helpful to have all of the ingredients prepared and ready to go. Heat 1 tablespoon of oil in a wok or cast iron skillet over medium-high heat. Add the rice. Stirring occasionally, cook until the rice is toasted and has a lightly chewy texture, about 4 minutes. Transfer rice to a plate.
  • Add 2 teaspoons oil to the pan. Cook the vegetables, excluding green onion, until lightly softened, 2 to 3 minutes. Create a hole in the center, and pour the soy sauce, toasted sesame oil, and red pepper flakes directly onto the hot surface. Stir into the vegetables.
  • If using ½ cup or less of JUST Egg, you should have enough room to scramble it by pushing the veggies to the side. If you would rather make an egg-heavy fried rice, transfer the veggies to a plate so that you'll have more room (JUST egg is very liquid and will spread). Add the vegan egg to the skillet/wok and cook for about 1 minute, tossing and scrambling.
  • Mix the scrambled JUST Egg into the veggies. Return the rice to the pan, and add the green onion. Stir to incorporate. Taste and season with salt, pepper, or additional soy sauce, if desired. Serve immediately.

1 large egg, beaten
Kosher salt
2 cups baby spinach
1/2 cup chopped broccoli florets
1/2 cup chopped red bell pepper
1/4 cup shredded carrots
1/4 cup thinly sliced snow peas
1 teaspoon minced garlic
1 teaspoon finely grated fresh ginger
1 teaspoon soy sauce
3 cups cold cooked long-grain white rice
1 teaspoon toasted sesame oil

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop onto a plate.
  • Add the remaining tablespoon oil, then add the spinach, broccoli, bell pepper, carrots, snow peas, garlic, ginger, soy sauce and 1/4 teaspoon salt and stir-fry until crisp-tender, about 2 minutes.
  • Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg to the skillet and cook, stirring and breaking up the egg, to mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the sesame oil and serve.

200g basmati rice or 400g/14oz leftover cooked rice
1-2 red chillies , deseeded and grated or very finely chopped
3 garlic cloves , crushed
1 tbsp sunflower oil
2 large carrots , diced
200g Chinese cabbage , finely sliced
2 eggs , lightly beaten
3 spring onions , sliced
200g frozen peas
1 tbsp soy sauce , plus extra for serving, if you like

Steps:

  • If making the rice from scratch, cook it following pack instructions, then drain. Mix the chillies and garlic (in a pestle and mortar, if you have one) with a pinch of salt, to make a paste.
  • Heat oil in a wok or large frying pan on a medium-high heat. Add the carrots and stir-fry for 5 mins until tender. Add the cabbage and chilli paste and cook for 1 min more. Tip in the cooked basmati or leftover rice and stir-fry for 1 min until piping hot.
  • Push the rice mixture to one side of the pan. Add the eggs to the cleared space and scramble until set. Mix in the onions, peas and soy and stir-fry everything together until the peas are hot.

25g cashews
4 tbsp olive oil
1 corn cob
250g rainbow baby carrots , halved lengthways
2 red onions , finely chopped
2 celery sticks , finely chopped
2 large red peppers , finely sliced
3 garlic cloves , crushed
2 tbsp Cajun seasoning
1½ tbsp smoked paprika
1 tsp chipotle paste
2 tbsp tomato purée
200g heirloom cherry tomatoes , halved
400g can kidney beans , drained and rinsed
400g can cherry tomatoes
300g long-grain rice , washed
400ml vegetable or vegan stock
1 tbsp red wine vinegar (vegan varieties are readily available)
2 tbsp caster sugar
2 spring onions , finely sliced

Steps:

  • Dry-fry the cashews in a large saucepan or casserole dish over a medium heat until golden brown. Remove from the heat, leave to cool, then roughly chop. Heat 1 tbsp oil in the same pan over a high heat, then fry the corn on each side for 20 seconds to char. Remove from the pan, set aside, then tip in the carrots and fry for 5 mins. Remove from the pan and set aside.
  • Heat the rest of the oil in the same pan over a medium heat and fry the onions and celery for 10 mins until soft and slightly coloured. Tip in the peppers and garlic, then fry for another 5 mins before adding the Cajun seasoning, smoked paprika, chipotle paste and tomato purée. Fry for 1 min until the spices are fragrant, then add the cherry tomatoes and fry for another 2 mins.
  • Stir in the kidney beans, canned tomatoes, rice, stock, vinegar and sugar, then stir until everything is combined. Bring to the boil, then cover with a lid and simmer with a lid on for 35-40 mins on a medium-low heat, stirring halfway through, until the rice is cooked and liquid absorbed.
  • Slice the corn off the cob and mix it through the rice along with the carrots. Season and garnish with the spring onions and cashews.
