EMPANADAS DE PINA (PINEAPPLE TURNOVERS)

1 cup all-purpose flour
1 stick butter or margarine
4 ounces Philadelphia Cream Cheese
1 jar (8 ounce) pineapple preserves
1/2 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Mix first three ingredients. Knead into dough, sprinkle flour to area used to roll out, and roll out dough.
  • Use a biscuit cutter or any drinking glass to cut out circles. Place preserves in bottom half of circle and fold the circles in half. Fold top of circle and press edges together either with your finger tip or with a fork.
  • Bake on a cookie sheet at 350 degrees F until light beige, about 12 - 14 minutes. After baking, while still warm, roll turnover in cinnamon sugar.

1 cup all-purpose flour
1/2 cup butter or 1/2 cup margarine
4 ounces cream cheese
1 (8 ounce) jar pineapple preserves, well drained
1/4 cup powdered sugar, for rolling (or more)

Steps:

  • Mix all ingredients except preserves.
  • Knead into dough, roll out and cut with biscuit cutter, making a round circle.
  • Place slightly less than a teaspoon of preserves in each cut shape.
  • Fold and crimp edges together with fork.
  • Bake on a cookie sheet at 350 degrees F until light beige, about 12 minutes.
  • After baking, roll in confectioners' sugar.
