2 boneless skinless chicken breasts
2 tablespoons butter
1 garlic clove, minced
1 medium onion, sliced
salt and pepper
1 cup white wine or 1 cup water
1/2 cup sour cream

Steps:

  • In a medium frying pan, lightly brown garlic in butter over medium heat, about 2 minutes.
  • Add chicken and cook, turning, about 10 minutes or until brown on all sides.
  • Place onion slices on bottom of pan under chicken.
  • Sprinkle chicken with salt and pepper; pour wine or water over chicken.
  • Cover, reduce heat to low and simmer about 20 minutes or until chicken is done.
  • Remove chicken to serving plates and keep warm.
  • Add sour cream to pan drippings and cook, stirring, about 2 minutes until warm but not boiling.
  • Spoon over chicken.

3 whole chicken breasts, split
8 ounces sour cream
1 (10 ounce) can Campbell's Cream of Mushroom Soup
1/2 cup butter
8 ounces hillshire farm seasoned stuffing mix
1 1/2 cups chicken broth

Steps:

  • Preheat oven to 350.
  • Boil chicken 20-40 minutes until almost fully cooked. Pull apart into bite size pieces.
  • Mix chicken with sour cream and cream of mushroom soup.
  • Spread mixture into a buttered pan.
  • Melt butter.
  • Pour stuffing mix into a mixing bowl, stir in butter and chicken broth. Spread over chicken mixture.
  • Bake 30 minutes or until bubbly.
  • If desired serve with cranberry sauce on the side.

1/3 cup dried breadcrumbs
7 teaspoons flour, divided
9 ounces boneless skinless chicken breasts
1 egg, slightly beaten
2 teaspoons margarine
2 teaspoons oil
1/2 cup sliced fresh mushrooms
1/4 cup canned chicken broth
1/4 cup dry white wine
1 ounce provolone cheese, cut into strips

Steps:

  • In a shallow bowl or on a paper plate, combine the bread crumbs and 2 Tbsp of flour; dip chicken into egg, making sure all sides are coated, then dredge in crumb mixture.
  • Repeat process, being sure to cover the chicken entirely.
  • In a 10 inch nonstick skillet, combine the margarine and oil.
  • Heat over a medium heat until the margarine is bubbly and hot.
  • Add chicken and cook, turning once, until both sides are lightly browned and chicken is cooked through, 2-3 minutes on each side.
  • Transfer to a plate and keep warm.
  • To the same skillet add the mushrooms and saute until lightly browned, 1-2 minutes; sprinkle with remaining teaspoon of flour and stir quickly to combine.
  • Add broth and wine.
  • Cook, stirring constantly, until mixture thickens, about 1 minute.
  • Return chicken to skillet and top evenly with cheese; cover and cook until cheese is melted, 2-3 minutes. Garnish with parsley.

This is so easy! I use it when I'm having people over for dinner because it can easily be doubled to feed a large gathering or dinner party. Once you put it in the oven, you can forget about it for 2 hours and move on to something else. It's always a huge hit with our guests! Serve over rice and enjoy!

1 (2 ounce) package chipped beef
6 skinless, boneless chicken breast halves
1 pound sliced bacon
1 (10.75 ounce) can condensed cream of mushroom soup
1 (16 ounce) container sour cream
½ teaspoon paprika

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Line the bottom of a 9x13 inch baking dish with slices of chipped beef. Wrap bacon slices around chicken breasts, and place on top of chipped beef. In a medium bowl, mix together condensed soup and sour cream. Pour sour cream mixture over chicken breasts, and sprinkle with paprika.
  • Bake in preheated oven for 2 hours.

1/2 cup dried breadcrumbs
2 tablespoons flour
1/2 tablespoon paprika
1/2 teaspoon white pepper
2 boneless skinless chicken breasts
1 egg, slightly beaten
2 teaspoons olive oil
2 teaspoons butter
1/4 cup sliced mushrooms
1 teaspoon flour
1/4 cup chicken broth
1/4 cup dry white wine
2 slices provolone cheese

Steps:

  • Combine bread crumbs, paprika, pepper and flour on a paper plate.
  • Dip chicken in egg, making sure all sides are coated, and then dredge in crumb mixture. Repeat process with second chicken breast, being sure to use all the egg and crumbs. Set aside.
  • In 10 inch skillet, combine oil and butter; heat over medium heat until bubbly and hot. Add chicken and cook, turning once, until both sides are lightly browned and chicken is almost cooked through, 2 to 3 minutes on each side; transfer to plate and keep warm.
  • To same skillet, add mushrooms and saute until lightly browned, 1 to 2 minutes; sprinkle with 1 tsp flour and stir quickly to combine. Add chicken broth and wine and cook, stirring constantly, until mixture thickens, about 1 minute.
  • Return chicken to skillet and top evenly with cheese; cover and cook until cheese is melted, 2 to 3 minutes.
  • Garnish with freshly snipped parsley, if desired.

My husband calls it the classiest meal I serve because it's exactly like what you order in a fancy restaurant! Very low in fat and calories, and it only takes 1/2 hour from start to finish. Pairs nicely with roasted baby potatoes and steamed broccoli.

1 cup all-purpose flour
4 boneless, skinless chicken breast halves
salt and pepper to taste
2 tablespoons butter or margarine
½ cup dry white wine
½ cup fat-free chicken broth
1 tablespoon Dijon mustard
1 zucchini cut in half lengthwise, then sliced diagonally
5 sun-dried tomatoes, chopped
1 clove garlic
1 teaspoon dill weed
⅓ cup fat-free sour cream

Steps:

  • Place the flour into a shallow dish. Season chicken with salt and pepper, and then dredge in flour. Shake off excess. Heat the butter in a large skillet over medium-high heat. Brown the chicken breasts on each side, about 3 minutes per side.
  • Pour the chicken broth and white wine into the skillet, and scrape any chicken residue from the pan for flavor. Stir in the mustard. Cover, and cook for a few minutes until chicken is 'springy', but not cooked through. Add the zucchini and sun-dried tomatoes, then season with garlic and dill weed. Cover, and cook until the zucchini is tender and the chicken is cooked through, about 5 to 10 minutes.
  • Remove the chicken to a platter, and remove the pan from the heat. Stir sour cream into the pan liquid. If most of the liquid has evaporated, stir in a bit more wine or broth first. Season with salt to taste, and serve chicken with sauce poured over it.

I love chicken, and this is a favorite of mine. It's a little time consuming wrapping everything up, but the results are so worth it. Serve with rice, noodles, pasta, it doesn't matter...the sauce tastes fine with any.

6 boneless skinless chicken breasts
1 can cream of mushroom soup
1 cup sour cream
6 slices bacon (uncooked)
6 slices ham (thinly sliced)
2 packages puff pastry

Steps:

  • Preheat oven to 350 degrees.
  • Pound/flatten each chicken breast lightly.
  • Wrap each chicken breast in a slice of ham, then tightly wrap a slice of bacon around the ham; secure with toothpicks if necessary.
  • Place in a baking dish.
  • Blend together sour cream and undiluted mushroom soup, then pour over the chicken breasts.
  • Bake seam side down for about 30 minutes.
  • Remove chicken from dish, and set aside cream sauce.
  • Cut the puff pastry into 6 separate rectangles.
  • Place each chicken breast on the bottom half of a rectangle, then fold the pastry over and seal, to form a square packet.
  • Bake at 350 degrees for about another 20-30 minutes, until pastry puffy and golden.
  • Serve hot with warm cream sauce poured over.
