EGGPLANT LASAGNA RECIPE - LOW FAT



Eggplant Lasagna Recipe - low fat image

A low fat eggplant lasagna recipe, that is delicious while not being greasy. Just 325 calories for this filling meal.

Number Of Ingredients 18

1 medium-large sized eggplant (cut 8 planks from it)
1/3 cup whole wheat flour
2 eggs
1/4 cup milk
1 cup Italian bread crumbs
Mrs. Dash Italian seasoning (or garlic + Italian Seasoning)
no-stick cooking spray
1 cup part-skim Ricotta
1/8 cup 2 tbs thinly sliced scallions
1 tbs. freshly chopped basil
1 tbs. grated Parmesan or Romano cheese
1 cup chopped raw mushrooms
1/2 cup diced sweet onion
1 tsp olive oil
4 ounces part skim mozzarella
1/2 jar of pasta sauce
Kosher salt
pepper

Steps:

  • Preheat oven to 400°
  • Put whole wheat flour in a bowl, season with Mrs. Dash Italian seasoning (or garlic powder & Italian Seasoning), Kosher salt and pepper.
  • Whisk one egg with the milk, in another bowl, to make an egg wash (season this, as well).
  • Pour the Italian bread crumbs into a third bowl.
  • Dredge each eggplant in the flour, then put in egg wash, turning to coat well. Lift out and let excess wash drip off. Place in final bowl, and lightly press the crumbs on to ensure they stick well.
  • Arrange the breaded eggplant "planks" on a baking sheet. Spray with no-stick spray, flip and spray other side.
  • Bake for 10 minutes, flip the eggplant, and bake for another 10 minutes. When you remove the eggplant, cut the oven down to 375°.
  • While eggplant is baking, put olive oil in saute pan on med-high heat. Add onions and saute until nearly cooked, add mushrooms saute and season with salt and pepper. Set aside when done.
  • Mix the Ricotta with 1 egg white, scallions, basil, Parmesan cheese, salt and pepper. Set aside.
  • Coat bottom of shallow pan with pasta sauce. Place 4 of the eggplant slices in the sauce.
  • Top with the Ricotta mixture, and about a 1/4 of the mozzarella.
  • Now add the mushroom and onion saute, then another 1/4 of the mozzarella and a few dollops of sauce.
  • Top with the remaining breaded eggplant planks. Spoon on sauce over each, and smooth out to cover. Finish with the rest of the mozzarella.
  • Bake at 375°, for 25 minutes.

A tasty, classic Eggplant Lasagna recipe made with roasted eggplant slices and without noodles. Comforting, cheesy, and low carb. You won't miss the pasta!

2 large eggplants (sliced lengthwise 3/4-inch thick (about 8 slices))
3 1/2 tablespoons extra virgin olive oil (divided)
1 ½ teaspoons kosher salt (divided)
½ teaspoon black pepper (divided)
16 ounces sliced cremini (baby bella) mushrooms
3 cloves garlic (minced)
1/2 teaspoon dried oregano
1 (24-ounce) can prepared marinara-style pasta sauce of choice (I used a roasted garlic flavor)
1 (15-ounce) container part-skim ricotta cheese
1 (10 ounce) package frozen chopped spinach (thawed with excess water squeezed out)
1/2 cup grated Parmesan (divided)
1 large egg
1 cup shredded part-skim mozzarella cheese (or a blend of mozzarella and provolone)
2 tablespoons chopped fresh basil (thyme, or parsley)

Steps:

  • Position racks in the upper and lower thirds of your oven. Preheat the oven to 400 degrees F. Lightly coat 2 rimmed baking sheets with nonstick spray. Coat a 9x13-inch baking dish with nonstick spray and set aside.
  • Arrange sliced eggplant in a single layer on the 2 sheet pans-if some of your end-most eggplant slices are very curved, trim off the eggplant outermost curvy portion so that the slices lay mostly flat. Brush 2 1/2 tablespoons of the oil over both sides of all of the slices. Sprinkle 1/2 teaspoon kosher salt and ¼ teaspoon pepper over the top.
  • Roast the eggplant until it is soft and golden, about 25 minutes, flipping the slices over and swapping the pans' positions once halfway through. Remove the slices from the oven and reduce the oven temperature to 350 degrees F.
  • Meanwhile, in a large skillet heat the remaining 1/2 tablespoon oil over medium heat. Add the sliced mushrooms. Saute until the mushrooms are soft, about 7 minutes. Add the minced garlic, next ½ teaspoon kosher salt, and oregano. Cook for another 2 minutes. Remove the pan from the heat. Add the marinara pasta sauce and stir to combine.
  • In a large bowl add the ricotta, 1/4 cup Parmesan, egg, and remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper. Mix well, until the mixture is evenly combined. Stir in the spinach, using a fork to break it up and distribute it as evenly with the ricotta mixture as possible.
  • Spoon half of the mushroom marinara sauce on the bottom of the prepared baking dish and spread it into an even layer. Lay 4 eggplant slices on top followed by all of the ricotta mixture. Layer on another 4 slices of eggplant and finish with the remaining mushroom marinara sauce. Top with the mozzarella and remaining ¼ cup Parmesan. Bake for 25 to 30 minutes, until the cheese is melted and the lasagna is hot and bubbly. Remove from the oven and sprinkle with fresh herbs. Let rest 5 to 10 minutes, then serve.

1 (8 ounce) bag shredded part-skim mozzarella cheese
1 (8 ounce) bag shredded fat free mozzarella cheese
1/2 cup grated low-fat parmesan cheese
1 (29 ounce) jar Ragu chunky tomato onion & garlic sauce (this sauce is only 3grams of fat per serving and is very good!)
olive oil flavored cooking spray
2 large eggplants

Steps:

  • Preheat oven to 425°F.
  • Slice eggplant about 1/4" thick, spray with non-stick spray.
  • Place eggplant on a cookie sheet and bake for about 15-20 minutes or until nicely browned.
  • This can be done ahead of time, like on the weekend, so this is a lot quicker for a weeknight meal.
  • Spray an 8x8-inch baking dish with the non-stick spray and put a small amount of sauce in the bottom of it.
  • Place a layer of eggplant on top of the sauce.
  • Top the eggplant with the 2 kinds of mozzarella and sprinkle a little parmesan on top.
  • Top with a little bit of sauce and continue layering until either the ingredients are used up or you run out of room in the pan (I usually get 3 layers in).
  • Top off with the rest of the cheeses.
  • Bake in a preheated oven 35-45 minutes or until cheeses are melted and sauce is bubbling.
  • ENJOY!

2 large eggplants
1 teaspoon sea salt, plus more to taste
olive oil, to taste
5 cloves garlic, minced
½ teaspoon red pepper flakes
28 oz crushed san marzano tomato, 2 can
6 leaves fresh basil, thinly sliced, plus more for garnish
1 large egg
15 oz ricotta cheese, 1 container
2 cups shredded mozzarella cheese, divided
1 cup grated parmesan cheese, divided
2 teaspoons italian seasoning

Steps:

  • Preheat the oven to 375°F (190°C).
  • Cut off the ends of the eggplant, then slice lengthwise about ⅛-inch (3-mm) thick.
  • Sprinkle the eggplant slices with sea salt on both sides and let sit for 10 minutes to draw out moisture. Pat dry with paper towels to remove excess liquid.
  • Lightly grease a griddle pan with olive oil and heat over medium heat. Grill the eggplant slices for 2-3 minutes on each side, or until grill marks are visible. Remove from the pan and set aside.
  • In a medium saucepan, heat a drizzle of olive oil over medium-low heat, then add the garlic and red pepper flakes. Sauté for about 3 minutes, until the garlic is fragrant but not browned. Add the crushed tomatoes and 1 teaspoon of salt, stirring well to incorporate the garlic and red pepper. Simmer for 10 minutes, reducing the heat if the sauce begins to bubble too much. Add the basil and stir to combine. Remove from the heat and set aside.
  • In a medium bowl, beat the egg, then add the ricotta, 1½ cups (150 g) of mozzarella, ¾ cup (80 g) of Parmesan, and the Italian seasoning. Mix well to combine.
  • Assemble the lasagna. In a 9x13-inch (23x33-cm) baking dish, add enough sauce to cover the bottom of the dish and spread in an even layer. Add a layer of eggplant slices, covering the bottom of the dish completely. It's okay if the eggplant slices overlap slightly. Add a layer of the ricotta mixture and spread in a thin, even layer. Repeat with the remaining ingredients, finishing with a layer of sauce. Sprinkle the remaining mozzarella and Parmesan on top.
  • Bake for 45 minutes, until cheese is fully melted.
  • Turn the broiler on high and broil for 5 minutes, or until the cheese on top is browned and bubbly.
  • Remove the lasagna from the oven and let rest for 15-20 minutes before serving to give the lasagna time to set.
  • Serve garnished with fresh basil.

I was looking for a yummy South Beach recipe to curb my Italian Cravings. I found a vegetarian lasagna recipe using eggplant slices as noodles, substituted my own meat sauce, and voila! A low carb keeper in our home! The eggplant taste is indistinguishable with all of the bold italian flavors, and adds the needed texture of the missing noodles. I've also seen zucchini strips used as the mock noodles. Try it!

2 large eggplants, peeled, sliced lengthwise into 1/4 inch noodle-like strips
cooking spray (olive oil spray is best)
salt and pepper
1 1/2 lbs turkey breast or 1 1/2 lbs Italian sausage
2 tablespoons olive oil
2 onions, chopped
3 cloves chopped garlic
1 red pepper, chopped
1 (16 ounce) package sliced mushrooms
2 tablespoons italian seasoning (or mix of oregano, basil and thyme)
1 teaspoon fennel seed (optional)
salt and pepper
1 teaspoon red pepper flakes (if you dare!) (optional)
1 (10 ounce) package frozen chopped spinach
1 cup red wine (optional) or 1 cup vodka (optional)
1 (28 ounce) can tomato sauce (or large jar sugar free sauce if you can find it)
1 (15 ounce) can diced tomatoes (for less sugar, 3 chopped roma tomatoes)
2 cups low-fat ricotta cheese
2 eggs
3 green onions, chopped
3 cups shredded lowfat mozzarella cheese
1/2 cup parmesan cheese

Steps:

  • Preheat oven to 425 degrees.
  • Spray cookie sheet, arrange eggplant slices and season with salt and pepper.
  • Cook slices 5 minutes on each side.
  • Lower oven temp to 375.
  • Brown meat, onion and garlic in olive oil for 5 minutes.
  • Add red pepper and mushrooms, and cook 5 minutes.
  • Add spinach, tomatoes, tomato sauce, spices and wine and simmer for 5-10 minutes.
  • Blend ricotta, egg and Green onion.
  • Blend together Mozzarella and Parmesan Cheese.
  • Spread 1/3 of meat sauce in bottom of 9" x 13" glass pan.
  • Layer ½ eggplant slices
  • Dollop and Spread ½ ricotta
  • Layer 1/3 mozzarella/parmesan mixture.
  • REPEAT
  • Add last layer of sauce, then mozzarella/parmesan mixture on top.
  • Cover with foil and bake at 375 degrees for 1 hour.
  • Remove foil and bake or broil another 5-10 minutes until cheese is browned.
  • Let it rest 10 minutes before slicing, if you can wait that long!

1 large egg
1 lb eggplant, cut crosswise into1/4 inch slices
3 tablespoons flour
1 cup Italian seasoned breadcrumbs
olive oil flavored cooking spray
2 cups part-skim mozzarella cheese, shredded and divided
5 tablespoons parmesan cheese, grated
1 teaspoon dried oregano
1 teaspoon dried basil
1 (15 ounce) carton part-skim ricotta cheese
1 (12 ounce) carton 1% fat cottage cheese
1 (26 ounce) bottle fat free tomato basil pasta sauce
12 lasagna noodles, cooked

Steps:

  • Preheat oven to 450°.
  • Coat a baking sheet with cooking spray.
  • In a small bowl,combine 2 egg whites and egg, stirring with a whisk.
  • Dredge eggplant slice in flour,dip in egg mixture,and dredge in breadcrumbs. Repeat procedure with remaining eggplant, flour,egg mixture and breadcrumbs.
  • Place slices in a single layer on the baking sheet.
  • Coat tops of slices with cooking spray and bake 20 minutes, turning over after 10 minutes.
  • Remove from baking sheet and cool.
  • Reduce oven temperature to 375°.
  • In a large bowl, combine 1 cup mozzarella cheese, 3 tablespoons parmesan, oregano, basil, ricotta, cottage cheese and remaining egg white and mix well.
  • Coat a 9x13-inch baking dish with cooking spray.
  • Spread 1/4 cup pasta sauce in the bottom of dish.
  • Arrange 4 lasagna noodles slightly overlapping over the pasta sauce; top with half of cheese mixture, half of eggplant slices and 3/4 cup pasta sauce.
  • Repeat layers, ending with noodles.
  • Spread remaining pasta sauce on top and sprinkle with remaining mozzarella and parmesan cheeses.
  • Cover and bake 15 minutes.
  • Uncover and bake an additional 35 minutes, or until cheese melts.
  • Let stand 5 minutes and serve.
