These baked egg boats take just a few minutes to make and have only 5 ingredients! They are a great vegetarian breakfast recipe to feed a crowd.

9 eggs
1/2 medium onion, diced
1/2 colored pepper (I used 1/4 yellow, 1/4 red), diced
1 cup of cheddar cheese, divided
A loaf of French bread

Steps:

  • Whisk the eggs. Add the onion, colored pepper and 3/4 cup of cheddar cheese.
  • Hollow out the loaf of bread. Make sure not to carve out too much to prevent leaking.
  • Pour in the egg mixture and sprinkle with remaining cheese.
  • Bake at 350F for 30-40 minutes, until egg is set. Slice and serve.

BAKED EGGS IN SWEET POTATO BOATS



Baked Eggs in Sweet Potato Boats image

This breakfast recipe is a great way to use up extra sweet potatoes. Take roasted sweet potatoes, make a hollow for an egg, bake and top with an herby relish.

Yield Serves 4

Number Of Ingredients 11

2 whole fully baked sweet potatoes (medium or large)
2 Tbsp. extra-virgin olive oil
4 eggs
½ tsp. salt
¼ cup minced fresh parsley
¼ cup minced fresh cilantro
2 Tbsp. capers
2 Tbsp. raisins, roughly chopped
1 small shallot, minced
Juice of 1 lemon
About 1 Tbsp. red wine vinegar

Steps:

  • Preheat the oven to 375ºF.
  • Slice each baked sweet potato in half lengthwise and scoop out enough of each inside to make room for an egg. Brush with the oil inside and out.
  • Arrange the sweet potatoes in a baking dish and crack an egg into the hollow created in each sweet potato. Sprinkle with the salt, then transfer to the oven. Bake for 8-10 minutes, until the eggs are set to your liking.
  • Meanwhile, make a relish by combining the parsley, cilantro, capers, raisins, shallot, and lemon juice in a small bowl. Taste and add vinegar a little at a time until just tangy enough for your taste buds.
  • Serve each egg boat topped with relish.

8 eggs
4 avocados, peeled and sliced in half
1 cup salsa
2 ounces grated cheddar cheese
1/3 cup sour cream
1/3 cup sliced black olives
lettuce, for garnish
cilantro, for garnish

Steps:

  • Cook eggs any way you like them.
  • Arrange 4 plates by placing a bed of lettuce on the plate and topping with avocado halves, 2 per plate.
  • Place one egg in each avocado half.
  • Cover eggs with salsa and sprinkle with cheese.
  • Top each avocado with a dollop of sour cream and a sprinkle of black olive slices.
  • Garnish with fresh cilantro.
  • Goes great with warm tortillas.

Fun breakfast food! Just the basics. Sissy (my 22-year-old sister who would sooner starve than cook for herself) looooves this one!

2 eggs
2 slices of your fav bread (mine's whole wheat!)
1 dash salt
1 dash pepper
2 slices cheese (I use 2% milk white American)
butter, for pan

Steps:

  • Heat a bit of butter in a large skillet.
  • Take a small glass (it has to be smaller than the bread) and press the top of it into the bread to cut out a circle. Remove the circle (the "man overboard") and set aside.
  • Place the 2 slices of bread with the circle cutouts onto the pan.
  • Flip them before adding the egg so both sides of the bread are buttery.
  • Drop one egg into each hole in the bread slices. (the bread is the "boat").
  • Add a little more butter to the pan and throw on the "men overboard". They make nice little crispy buttery toast bites to accompany the egg.
  • Fry until desired consistency. Sissy doesn't like her eggs too runny so I flip them and cook both sides. Add salt and pepper to taste.
  • If you want cheese on them -- add it on right at the end just long enough to melt one slice over each boat.

2 cups Simply Potatoes (your choice, any flavor of Hash Browns or Mashed)
6 eggs
1 cup cheese (your favorite, Cheddar suggested, reserve 1/3 cup)
1 cup chicken (cooked and crumbled or chopped, etc.) or 1 cup turkey (cooked and crumbled or chopped, etc.)
1/4 teaspoon salt and pepper or 1/4 teaspoon parsley, to taste

Steps:

  • Heat oven to 350 degrees Fahrenheit.
  • Beat 2 of the eggs in a medium bowl, add the potatoes, 2/3 cup cheese, and meat (add spices now or sprinkle over eggs or cheese, later), mix well.
  • Prepare 4 custard cups, ramekins or large muffin tin cups with nonstick spray or by greasing. If you don't have cups large enough, use a round cake pan or similar size casserole.
  • Fill cups halfway with potato/meat mixture, then form a well in the center large enough to accommodate a whole egg, pressing the mixture up to the top edge of the cup. (For one pan, place all the mixture in the pan, then make 4 wells for the eggs.).
  • Bake in oven for 10 to 15 minutes (until barely starting to brown), then take out of oven, break each of the 4 eggs into a cup one at a time, and then place each into one well apiece (sprinkle desired spices/parsley over egg, if you like, or put over cheese, next step). Return to oven for 5 minutes (just until white is cooked, or longer for medium or firm yolks), then sprinkle remaining cheese over the tops (could sprinkle with parsley and/or spices now, if desired/not used before) and return to oven for another 2 to 4 minutes, until cheese is melted.
  • Serve in or out of the individual cups on plates, or use a pancake turner or pie server to plate individual servings if using a single pan.
  • Serves 4.
