VEGAN SUNFLOWER SEED TUNA SALAD

Vegan Sunflower Seed Tuna Salad image

This vegan take on a deli classic uses soaked sunflower seeds two ways: both in place of the tuna and mayonnaise. With bright flavors of lemon and fresh herbs and a little crunch from fresh celery and shallots, you won't miss the fish in this satisfying salad.

Provided by Food Network Kitchen

Categories     main-dish

Time P1DT15m

Yield about 4 heaping 1/3 cup servings

Number Of Ingredients 11

1 cup raw hulled sunflower seeds
Juice of 1/2 lemon (about 2 tablespoons)
2 teaspoons Dijon mustard
Kosher salt
2 tablespoons fresh dill, coarsely chopped
2 tablespoons parsley leaves, coarsely chopped
1/4 teaspoon paprika
1 stalk celery with leaves, chopped
1 small shallot, chopped
Freshly ground black pepper
Serving suggestions: whole wheat wraps, lettuce, tomato and avocado

Steps:

  • Cover the sunflower seeds with at least 1/4 inch of water and soak, at room temperature in an air tight container, for at least 24 hours. The seeds are ready when they have nearly doubled in size.
  • Drain the seeds and pulse half (about 1 cup) with the lemon juice, mustard and 1/4 teaspoon salt in a food processor until almost smooth, scraping down the bowl as needed.
  • Add the remaining seeds, along with the dill, parsley, paprika, celery, shallot, 1/4 teaspoon salt and a few grinds of pepper to the food processor. Pulse until the mixture resembles tuna salad. Refrigerate in an airtight container for up to 3 days.
  • Fill a whole wheat wrap with lettuce, tomato, avocado and the vegan tuna salad.

PLANT-BASED CHICKPEA TUNA SALAD

Plant-Based Chickpea Tuna Salad image

This chickpea tuna salad is a great option for a quick lunch. It's the perfect recipe to prepare in advance to make sandwiches or eat as a salad throughout the week. Enjoy!

Provided by David Sterkel

Categories     Dinner     Lunch

Time 20m

Number Of Ingredients 11

2 15-ounce cans of chickpeas
1 large bunch of green onions (or red onion)
4 ribs of celery (with the leafy tops, if available)
1 to 2 large dill pickle (s, depending on preference)
⅓ cup of vegan mayo
3 tablespoons of mustard (your favorite type)
1 tablespoon of granulated garlic (or 1 minced clove)
1 tablespoon of salt
1 tablespoon of sugar or maple syrup
1 teaspoon of apple cider vinegar
Fresh cracked black pepper (to taste)

Steps:

  • Start by draining the chickpeas and adding to a food processor (you can also break them up by hand with a fork). Wiz the beans for 1-2 seconds and repeat until the beans are broken up (do not cream or mash, just break them up). This should take no more than 6-8 seconds in the food processor. Move to a large mixing bowl.
  • Dice the celery with the leafy tops, add to the mixture. Chop the green onions and pickles and add. Now, slowly combine the rest of the ingredients to taste. Some will like more "mayo" some will like less. I like less with extra mustard!
  • Once the "tuna" is done, chill it for an hour. I like to serve mine over a ciabatta roll with tomatoes, and avocados. I also usually sprinkle some diced jalapeno for a little kick!

  • Strain the almonds and sunflower seeds in a fine mesh sieve and transfer them to a blender or food processor and process until a thick, gritty paste is formed (it should be sticky). This will require some time, so you may need to stop, stir, and re-start your blender/food processor several times.
  • Add the remaining ingredients to the blender/food processor, and process until everything has come together. There will be chunks of celery and onion, so if you prefer a more uniform “salad,” make sure you chop them finely before adding them to the blender.
  • Refrigerate the salad for at least an hour before serving. Serve with crackers or veggies, or make it into a sandwich or wrap with your favorite fixings.

11 BEST VEGAN SALAD DRESSING RECIPES - THE SPRUCE EATS

From thespruceeats.com
Estimated Reading Time 4 mins
  • Raspberry Vinaigrette. Raspberry vinaigrette can get pricey at the store and once you make your own, you may never go back. Either fresh or frozen berries work well for this recipe.
  • Italian Herb Dressing. With the perfect blend of garlic, herbs, and mustard, this zesty dressing elevates any salad. Use fresh herbs if you have them for a more assertive taste.
  • Orange Mustard Vinaigrette. Sweet and tangy orange juice, spicy mustard, and sour vinegar combine for a complex vegan salad dressing that tastes really unique—and fat-free to boot.
  • Lime Agave Salad Dressing. For a Mexican-inspired salad dressing, give this lime and agave version a shot. All of these ingredients are vegan, gluten-free, and can suit a raw diet if the agave and olive oil are cold-processed.
  • Japanese Miso Salad Dressing. Miso comes from fermented soybeans, grains, and an edible fungus called koji, giving it a complex umami flavor. Combined with ginger, rice vinegar, soy sauce, and sesame oil, it makes a lovely salad dressing that tastes great with noodle-based dishes as well as greens.
  • Vegan Caesar Dressing. Most Caesar dressings do not work for vegan diets because they often contain mayonnaise and anchovies. This one has neither but packs in plenty of flavor thanks to garlic, lemon juice, and vegetarian Worcestershire sauce.
  • Thousand Island Dressing. Just because you follow a vegan diet doesn't mean you can never enjoy Thousand Island dressing again. Just use a vegan mayonnaise instead of the egg-based kind.
  • Vegan Ranch Dressing. You can still make a tasty ranch dressing vegan by swapping out the dairy products for soy milk and vegan mayonnaise. Use apple cider vinegar instead of white for a slightly sweeter flavor and don't skimp on the onion and garlic powder.
  • Tahini Goddess Dressing. This green Goddess dressing with tahini tastes so good, you may want to dig in with a spoon. Tahini gives it a creamy texture without any dairy, lemon juice adds a little tang, and parsley gives it a fresh green color.
  • Vegan French Dressing. Bottled French dressing contains a lot of sugar, high-fructose corn syrup, and artificial coloring, but you can make your own for a more natural, vegan salad topper.
