This quick and easy taco bake will satisfy even the most picky eaters. You can modify it to add things you love. It's yummy and so easy to make! Top with tomatoes, lettuce, salsa or whatever you like on your Mexican food.

1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

1 cup salsa
1/2 cup mayonnaise
2 teaspoons chili powder
2 cups crushed tortilla chips
1 cup shredded Colby cheese
1 cup shredded Monterey Jack cheese
1 medium tomato, chopped
2 cups shredded lettuce

Steps:

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the salsa, mayonnaise and chili powder. , In an ungreased 2-qt. baking dish, layer half of the meat mixture, chips and cheeses. Repeat layers. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Just before serving, top with tomato and lettuce.

This is what I would serve at a typical supper here at my house when I am pressed for time and need something fast and filling. I have used ground turkey or ground chicken with great results but there is no reason that you could not use plain old ground beef. Hope you like it!

1 lb ground chicken or 1 lb ground beef
1 small onion, minced
2 garlic cloves, minced
1 tablespoon chili powder
1 tablespoon cumin, ground
1 teaspoon oregano
10 ounces tomatoes and green chilies, undrained (Rotel)
14 ounces pinto beans, drained
1 cup corn kernel
10 ounces tortilla chips
2 cups monterey jack cheese, shredded

Steps:

  • Brown meat, onion and garlic in large skillet until no pink remains and onion is clear. Drain grease.
  • Add spices, tomatoes, beans and corn and mix well.
  • Continue to cook over medium heat until some of the liquid has evaporated. You want a little liquid but not alot- like a sloppy joe mixture.
  • In an 8x8 greased pan crush a handful of chips and place on the bottom of the pan, adding more chips until you have a good layer. **** I like to get it as dry as possible here so that it holds together like a lasagna. PLEASE use your taste and judgment here and make it as dry or as liquid as you like. :)
  • Layer meat mixture on top of chips.
  • Crush some more chips and place on top of meat. Press down on chip layer to draw some moisture into the top layer of chips.
  • Top with cheese.
  • Bake at 350F for about 20 minutes or until cheese is thoroughly melted.

3/4 cup sour cream
4 medium green onions, sliced (1/4 cup)
1 medium tomato, chopped (3/4 cup)
1 cup shredded Cheddar or Monterey Jack cheese (4 oz)
Whole tortilla chips, shredded lettuce and additional salsa, if desired

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in beans and 1 cup salsa. Heat to boiling, stirring occasionally.
  • In ungreased 2-quart casserole, place broken tortilla chips. Top with beef mixture. Spread with sour cream. Sprinkle with onions, tomato and cheese.
  • Bake uncovered 20 to 30 minutes or until hot and bubbly. Arrange whole tortilla chips around edge of casserole. Serve with lettuce and salsa.

This is one of my mother-in-law's only recipes. So easy and absolutely yummy. . .but you have to eat it all in one setting as the leftovers don't heat up well. I have subbed lean ground turkey in the past and it is a bit more bland than the beef, so if you take that route, make sure you brown with the turkey with a clove of garlic and a couple tbsp diced onion.

0.5 (10 ounce) can enchilada sauce, mild
1 (4 1/2 ounce) can green chilies, chopped
1 (10 1/2 ounce) can fat-free cream of mushroom soup
2 cups sharp cheddar cheese
0.75 (13 ounce) bag Doritos (or any other taco flavored chip, you won't use the entire bag)
salt & pepper

Steps:

  • Brown hamburger, drain off fat and then mix with enchilada sauce, green chilis and soup.
  • Add salt/pepper to taste (I usually only add pepper).
  • Crunch up the Doritos; I usually only crunch up half of the bag to see if that's enough.
  • Layer chips, then hamburger mixture, then cheese and repeat. Make sure to put a few extra chips on the top because they get crisp and yummy.
  • Cook on 350 degrees for about 25 minutes.

1 1/2 pound(s) ground beef
1 medium onion chopped
1/4 cup(s) taco seasoning
1 cup(s) water
4 cup(s) broken tortilla chips
1 (16 ounce) can refried beans
1/2 cup(s) sour cream
1 tablespoon(s) hot sauce
1 cup(s) shredded cheddar
1 cup(s) shredded monterey jack
1/4 cup(s) chopped cilantro
pico de gallo
sour cream

Steps:

  • Preheat oven to 375 degrees. Lightly grease a 11×7 inch casserole dish.
  • Brown the ground beef in a large skillet over medium heat. About halfway through the browning process add the onions and cook until the beef is browned and the onions are soft. Add the taco seasoning and water and simmer for 8-10 minutes.
  • Layer the tortilla chips in the bottom of a casserole dish. Warm the refried beans in the microwave for 2 minutes at 60% power. Add the sour cream and the hot sauce to the beans. Stir to combine.
  • Smooth the refried beans over the chips using an offset spatula. Spoon on the cooked seasoned ground beef. Sprinkle evenly with the cheddar and the Monterey Jack Cheese.
  • Bake uncovered 15-20 minutes or until the cheese is melted and the casserole is heated through. Top with cilantro, Pico de Gallo, and if desired sour cream.
  • NOTES Use good sturdy chips so they hold up well and don't get soggy. Pro Tip - don't risk dropping the ground beef in the sink to drain the fat. Simply tilt the pan and use a paper towel to absorb the grease. I buy Spice Islands taco seasoning at Costco. It has so much flavor and tastes better than the packets from the grocery store. You can also make this in a 9×13 inch casserole dish. It will just not be as thick. Top the casserole with whatever you like. Some suggestions might include lettuce, tomatoes, black olives, cilantro, or avocado. This casserole can be assembled up to a day in advance. Simply cover tightly with wrap and store in the refrigerator. About 30 minutes prior to baking remove from the refrigerator and let it come to room temperature. Don't forget to remove the wrap prior to baking. Store leftovers in an airtight container in the refrigerator for up to 3 days. Cover tightly with several layers of plastic wrap and freeze for up to 3 months. Do not add the toppings. Reserve those for adding right before serving. Defrost in the refrigerator overnight.
