500 g sultanas
250 g butter, chopped
3 eggs
2 teaspoons almond essence or 2 teaspoons vanilla essence
1 cup sugar
1 1/2 cups plain flour
1 teaspoon baking powder

Steps:

  • Preheat oven to 150°C and grease a 20cm square or round cake tin.
  • Pick over the sultanas to remove any stem- nothing worse than a crunch in your cake.
  • Place sultanas in a saucepan and cover them with cold water. Bring to the boil and then drain off the water. Return sultanas to saucepan.
  • Stir in the chopped butter and set aside the sultanas to cool.
  • Beat together the eggs, essence and sugar. Then add in the sultanas.
  • Add your flour and baking powder to another mixing bowl and aerate with a kitchen whisk (or you can sift them together).
  • Stir the flour into the sultana mix.
  • Pour into prepared cake tin and bake for 1 1/2 hours.

2 cups sultana raisins
water, or as needed
10 tablespoons butter, diced
2 cups white sugar
3 eggs
3 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon vanilla extract

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Lightly grease a 9 inch round cake pan.
  • Put the raisins in a saucepan with enough water to cover and bring to a boil; reduce heat to medium low and allow to simmer for 15 minutes. Drain the water from the raisins. Stir the butter into the raisins until it melts and coats the raisins.
  • Beat the sugar into the eggs in a bowl. Sift the flour and baking powder together in a separate bowl. Stir the raisins and vanilla into the egg mixture; add the flour mixture and stir until just mixed. Pour the batter into the prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 75 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

2 1/2 cups sultanas
1 cup sugar
1/2 teaspoon baking powder
1 cup water
2 eggs (well beaten)
1 cup self raising flour
1 cup plain flour

Steps:

  • Place butter, sultana's, sugar and water in saucepan, bring to the boil, cover and let simmer for 3 minutes.
  • Allow to cool.
  • Add the eggs one at a time, then sifted flours and baking powder.
  • Mix, pour into a lined 7" x 8" (18 x 20cm) square tin.
  • Bake at 180 celcius or until a skewer comes out clean.

Easy to make sultana cake. This recipe is a bit lighter on the butter than most and although it contains sugar, most of the sweetness comes from the sultanas so this will satisfy those who prefer something a bit less sweet.

80 g softened butter or 80 g margarine
2/3 cup caster sugar
2 eggs
3/4 cup milk
2 cups self-raising flour
1 1/2 cups sultanas

Steps:

  • Preheat oven to 180°C and line two 20x10cm loaf tins with baking paper.
  • Combine and sugar. Add eggs and vanilla and continue to beat until creamy.
  • Add 1/2 cup milk and 1 cup of flour, and gently stir to combine. Continue to add milk and flour until all is incorporated in the mixture.
  • Pour into tins and bake for 35-45 mins or until cake springs back in the centre and an inserted skewer comes out
  • This mix also works well for sweet muffins - makes about two dozen medium muffins.

1 lb sultana
4 ounces cubed butter
3 eggs
1 1/4 cups sugar
2 cups flour, heaped
2 teaspoons baking powder
1 tablespoon brandy or 1 tablespoon brandy flavoring

Steps:

  • Put all sultanas in a large pot and cover with water, boil gently for 5 minutes.
  • Strain sultanas in a colander then put sultanas back in pot.
  • Add butter, stir and leave to cool.
  • beat eggs in with the sugar then add to sultana mix then add essence, 2 large cups plain flour and the baking powder.
  • Mix well with wooden spoon till combined.
  • Line 9x9in cake tin (or other suitable tin)with greased paper on bottom and sides.
  • Bake in 190 celsius oven for 30-45 mins till knife inserted in middle comes out clean.
  • Ice with one layer of almond icing and one layer of royal icing and decorate as desired.

8 ounces sultanas (seedless white raisins)
4 ounces butter or 4 ounces firm margarine, cut up into small pieces
6 ounces sugar
6 ounces self raising flour (or all-purpose flour with baking powder)
2 small eggs, beaten
2 ounces chopped nuts (optional)
3 drops almond essence
1 pinch salt

Steps:

  • Cover the sultanas in water and let them soak overnight.
  • Bring the water and sultanas to the boil and then strain off the water.
  • Mix in the butter or margarine while the sultanas are still hot.
  • Mix in the sugar, beaten eggs and almond essence.
  • Sift in the flour and salt and then add in the chopped nuts (if desired).
  • Mix well.
  • Grease an 8" round baking tin and line the bottom with greased, greaseproof paper (vegetable parchment or waxed paper).
  • Pour in the cake mixture and smooth the top.
  • Bake in a moderate oven at 350F for 30 minutes.
  • Reduce the heat to 300F until the centre is firm to the touch.
  • Empty cake from the baking tin and store in an airtight container.
