EASY PIE CRUST
Even novice bakers who shy away from homemade pie pastry can't go wrong with this recipe. It is easy to roll out and produces a tender, flaky crust every time.

Yield pastry for a single- or double-crust pie (9 or 10 inches).

Steps:
- In a small bowl, combine the flour and salt; cut in shortening until mixture is crumbly. Sprinkle with vinegar. Gradually add the milk, tossing with a fork until a ball is formed. Cover and refrigerate for 30 minutes or until easy to handle. , For a single crust, roll out pastry on a lightly floured surface to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry 1/2 in. beyond edge of plate; flute edges. Fill or bake shell according to recipe directions., For a double crust, divide pastry in two portions so that one ball is slightly larger than the other. Roll out larger ball on a lightly floured surface to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge of plate. Add filling. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in top. Bake according to recipe directions.

- Mix flour and salt.
- Cut in butter.
- Mix in water one tablespoon at a time.
- Gather into a ball and let sit for 5 minutes.
- Roll out. Place in pie plate.
- Refridgerate 20 minutes.
- Microwave on MED 6-9 minutes. Check for doneness, let sit 2 minutes (it will continue to cook a bit after you take it out of the microwave).
- Use in any pie recipe requiring a baked pie crust.

EASY MICROWAVE PIE
I wanted to eat something sweet and quick. I made this up quickly (was inspired by a basic russian apple pie) and it turned out nice :)

Steps:
- Dice apple in pieces and dump in a greased microwave bowl.
- In another bowl, mix egg till fluff. Add sugar and mix again. Add flour.
- Pour over the apples.
- Put the lid of the bowl on it. Put in microwave for 10 minutes (this can be diffrent, my microwave is quite quick). Check the dough in between by poking in a toothpick. if it comes out clean the pie is done.

Steps:
- Preheat oven to 375.
- Put all ingredients into a 9 inch pie pan.
- mix with fork until well blended and pat into the pan.
- Push the pastry up the sides and form a nice edge with your thumb and finger.
- Generously prick the crust with a fork to prevent bubbling during baking.
- Bake 15 to 17 minutes at 375, until nicely browned.
MY NO ROLL PIE CRUST
The only pie crust I will use anymore. Its flaky and slightly sugary and oh so easy to do. Note: due to some major discrepencies please use a good quality oil, preferably a vegetable and a good name brand like Mazola, it may not seem like it will make a difference but in the end it will, also use new oil not something that has been sitting around for a while.

- Put water, butter and crisco in freezer while preparing flour.
- Sift flour, sugar, and salt together.
- Cut cold butter and crisco into flour mixture until crumbly.
- Add cold lemon juice and water. Mix just until moist crumbs form.
- Turn dough out onto floured counter top.
- Divide dough into 2 parts.
- Wrap in plastic wrip and put in refrigerator for at least 1 hour.
- Roll pie dough out and use as pie recipe directs.

- Take out the dough from plastic and open it flat on a working board area.
- Combine parmesan cheese and flour. Sprinkle half of the parmesan mixture over one side of the dough and gently roll mixture into dough with rolling pin.
- Flip dough on the other side, and repeat the above process. Roll dough out into a 12 inch circle.
- Gently move dough to a 9 inch pie plate, and press into corners to secure and fluting edges as desired. To prevent shrinkage, refrigerate dough for 20 minutes, then transfer to freezer for 10 minutes.
- Spray 2- 12 inch square pieces of foil lightly with cooking spray and arrange grease side down, in chilled pie shell. Top with pie weights and fold excess foil over edges of dough. Bake on lower middle rack at 375°F until surface of dough no longer looks wet, about 20 minutes. Celsius.
- Carefully remove pie weights and fooil and continue to bake uncovered for 5 minutes or until golden. Let cool for 15 minutes and proceed with your quiche recipe.
