Easy turkey crown image

Serve a traditional roast turkey for Christmas without the fuss. Use the sticky glaze you'd get on a ham to add flavour and golden colour to a turkey crown

50g butter, softened
2kg turkey crown on the bone
1 tsp Chinese five spice or a pinch of ground cloves
4 tbsp honey
1 tbsp Dijon mustard
1 tbsp red wine vinegar

Steps:

  • Heat oven to 190C/170C fan/gas 5. Smear the butter all over the turkey crown and season all over with salt and half the five spice. Put in a roasting tin, skin-side up, and roast for 30 mins. While the crown is roasting, mix all the glaze ingredients in a bowl with the rest of the five spice.
  • Remove the crown from the oven and brush the skin generously with half the glaze. Continue to roast for another hour, glazing twice more, until cooked all the way through and the glaze is sticky and caramelised. Leave to rest for at least 20 mins before carving. Save the juices from the tin to make gravy.

2 kg Turkey Crown ((fully defrosted, if necessary))
Olive oil
Salt and Pepper

Steps:

  • Thoroughly defrost your turkey crown first (see note 1).
  • Remove your turkey crown from the fridge about an hour before you are going to cook it.
  • Preheat your oven to 180C / 160C fan / gas mark 4 / 350F about 15 minutes before you want to start cooking your turkey. It is really important that your oven is at the right temperature before you start.
  • Next, drizzle 2 tablespoons of olive oil over the turkey and sprinkle over 1 teaspoon of salt and about 20 good grindings of black pepper. Rub the oil, salt and pepper all over the bird and place it, breast side up, in a roasting tray.
  • Cover the turkey crown in foil and roast for 60 minutes. The foil will help keep the breast meat juicy and stop the skin browning too soon and burning before the meat is cooked.
  • After 60 minutes, remove the turkey from the oven and remove the foil. Baste the turkey with the juices you find at the bottom of the tin. Put the turkey back in the oven, uncovered this time, for a further 20 minutes (see note 2).
  • After 20 minutes, turn the oven up to 220C / 200C fan / gas mark 7 / 425F, remove the turkey from the oven and baste with the juices. Return the turkey back to the oven for a further 30 minutes. Cooking the turkey at a higher temperature will help the turkey skin to brown and crisp up. 220C is also the perfect temperature for roast potatoes, meaning you can start your roasties now and they will be ready when the turkey has rested for 30 minutes.
  • After the final 30 minutes (the turkey will have cooked for a total of 1 hour and 50 minutes), remove the turkey from the oven and check it is done. Stick a small sharp knife in the fattest part of the turkey crown, and the juices should run clear and the meat should be white. If you have a meat thermometer, the internal temperature should be 74C (165F).
  • Transfer the turkey crown to a clean roasting tin (or similar). Allow the turkey to rest for 30 minutes, covered loosely in foil. It will not get cold and the meat will taste much nicer.
  • Use the turkey roasting tray to make delicious easy peasy turkey gravy.

½ cup unsalted butter, softened

1 ½ quarts turkey stock

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest position of the oven.
  • Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. Rub the skin with the softened butter, and season with salt and pepper. Position an aluminum foil tent over the turkey.
  • Place turkey in the oven, and pour 2 cups turkey stock into the bottom of the roasting pan. Baste all over every 30 minutes with the juices on the bottom of the pan. Whenever the drippings evaporate, add stock to moisten them, about 1 to 2 cups at a time. Remove aluminum foil after 2 1/2 hours. Roast until a meat thermometer inserted in the meaty part of the thigh reads 165 degrees F (75 degrees C), about 4 hours.
  • Transfer the turkey to a large serving platter, and let it stand for at least 20 to 30 minutes before carving.

1 (12 pound) whole turkey, neck and giblets removed
1 tablespoon vegetable oil
2 Granny Smith apples - cored, peeled, and cut into 8 wedges each

  • Use your fingers to loosen the skin over the turkey breast and thighs. Cut a hole in the turkey skin between tail and body (to affix legs); cut a hole on each side of the turkey beneath each wing (to affix wings). Rub the entire skin with vegetable oil.
  • Toss apple and onion wedges, garlic cloves, and celery in a large bowl until combined; sprinkle poultry seasoning over the apple mixture and toss again to coat. Stuff the body and neck cavities with the apple mixture. Insert each wing tip into the hole under the wing to secure wings; insert both legs into hole near tail to secure legs.
  • Place turkey onto a rack and set in a roasting pan. Insert cold butter pieces under the loosened skin, distributing the butter as evenly as possible.
  • Roast the turkey in the preheated oven until an instant-read meat thermometer inserted into the thickest part of a thigh, not touching bone, reads 160 degrees F (70 degrees C), about 3 1/2 hours. Check for doneness after 3 hours.
  • Remove roasting pan containing turkey from oven and cover with aluminum foil, lightly pressing the foil directly onto the bird. Let the turkey rest for 40 minutes before carving.

Roast a turkey crown if you're catering to fewer people this Christmas. It's also a lighter option if you don't want to overindulge on the big day

2kg turkey crown on the bone
3 oranges , 1 cut into wedges, ½ sliced, 1 ½ juiced
1 tbsp runny honey , plus extra for drizzling
handful thyme sprigs , leaves picked from one, two left whole, plus sprigs to serve (optional)
1 tsp soy sauce
2 bay leaves
500g carrots , peeled and cut into long batons
500g parsnips , peeled and cut into long batons

Steps:

  • Take your turkey crown out of the fridge 1-2 hrs before you want to cook it. Heat oven to 200C/180C fan/gas 6. Cut 4 slices from one of the oranges. Juice the rest of it along with another of the oranges. In a small bowl, stir the orange juice together with the honey and the picked thyme leaves, the soy sauce and a good grinding of black pepper.
  • Loosen the skin over the turkey breast. Place two slices of orange, a bay leaf and thyme sprig under the skin, on both sides of the breast, then spoon in some of the juice mix and smooth the skin back over. Tip the orange wedges into a roomy roasting tin with the carrots and parsnips. Nestle the crown amongst the vegetables and oranges. Drizzle over about a third of the remaining orange juice mix and roast everything in the oven for 30 mins. Remove, give the veg a stir and drizzle over another third of the juice mix, then return to the oven and do that again one more time, roasting the turkey for a total of 1hr 30 mins (covering with foil halfway through if it begins to colour too much).
  • Remove the turkey from the roasting tin and place on a board covered with foil, then turn the oven up to 220C/200C fan/gas 8. Toss the veg in a drizzle of honey and put the tin back in the oven to caramelise the veg for 25-30 mins, leaving the turkey crown to rest. Serve the crown on a platter surrounded by the glazed roots, orange wedges and extra thyme sprigs, if you like. Remove the sticky skin from the breast before carving the meat to serve as a side.

1 (12 -20 lb) whole turkey
4 tablespoons butter (real butter, more on outside for more browning)
chicken broth
2 tablespoons salt
2 tablespoons ground black pepper
1 tablespoon onion powder
2 tablespoons garlic powder, granulated
1 tablespoon dried tarragon
1 tablespoon dried parsley flakes
1 tablespoon dried thyme
1 tablespoon dried basil
1 tablespoon sage
2 tablespoons paprika (more on outside for more browning)

Steps:

  • Remove giblets from both cavities at both ends and set aside. Rinse the bird inside and out and pat dry with paper towel.
  • Place a rack into a large roasting pan,and then place the turkey onto the rack with the breast and legs up.
  • Mix all of the seasonings, except the paprika, together with the butter.
  • Place your hand between the skin and the flesh from the rear of the turkey and slide a palm full of butter and seasoning mixture in between the skin and flesh.
  • Then place a glob of butter into the palm of your hand and generously rub the entire turkey with the butter. Generously sprinkle the entire bird with salt, freshly ground black pepper, onion powder, granulated garlic powder, tarragon, parsley flakes, thyme, basil and paprika. Pour about 1/4" to 1/2" of chicken broth in the bottom of the roasting pan, being careful not to wash any of the seasonings off the turkey.
  • Completely tent the turkey with aluminum foil and place into a preheated 325 degree oven for about 1 1/2 hours. Remove the foil tent and wrap foil around the legs and wings.
  • Baste the turkey and return it to the oven for the remainder of the cooking time, which will be when the interior temperature of the bird reaches 180 degrees or until the juices run clear and not red when you puncture the bird between the thigh and the breast.
  • Cooking time will vary depending on the size of the turkey.
  • NOTE: I always cook my turkey unstuffed.
  • I place my stuffing into baking dishes to bake.

  • During the last 10 or 15 minutes of cooking, increase temperature to 375 or 400 degrees F. to get more browning, but watch it carefully, as you do not want to burn it or dry it out.

You'll rejoice as white and dark meat alike come out juicy and tender in a bird you can set and forget - and then enjoy.

1 (14- to 16-lb) turkey, neck and giblets (excluding liver) reserved for turkey giblet stock
2 1/2 teaspoons salt (2 teaspoons if using a kosher bird)
1 1/2 teaspoons black pepper
Special Equipment
Pliers (preferably needlenose); a small metal skewer (optional); kitchen string; a flat metal rack; an instant-read thermometer

Steps:

  • Remove any feathers and quills with pliers (kosher turkeys tend to require this more than others).
  • Put oven rack in lower third of oven and preheat oven to 450°F.
  • Rinse turkey inside and out and pat dry. Mix salt and pepper in a small bowl and sprinkle it evenly in turkey cavities and all over skin. Fold neck skin under body and, if desired, secure with metal skewer, then tuck wing tips under breast and tie drumsticks together with kitchen string.
  • Put turkey on rack in a large flameproof roasting pan. Roast, rotating pan 180 degrees halfway through roasting, until thermometer inserted into fleshy part of each thigh (close to but not touching bone) registers 170°F, 1 3/4 to 2 1/2 hours.
  • Carefully tilt turkey so juices from inside large cavity run into roasting pan. Transfer turkey to a platter (do not clean roasting pan) and let stand 30 minutes (temperature of thigh meat will rise to 180°F). Cut off and discard string from turkey.
  • For a stuffed turkey:
  • Twelve cups of stuffing will fill both cavities and leave you extra to bake separately. Just before roasting, spoon room-temperature stuffing loosely (stuffing expands as it cooks) into the neck (smaller) cavity. Fold the neck skin underneath the body and secure with a small metal skewer. Then loosely fill the body (larger) cavity, and tie drumsticks together. If you don't want any stuffing to spill out, cover the opening with a slice of fresh bread, tucking it inside the cavity before tying the drumsticks. Follow roasting directions above. (Timing for a stuffed bird may be slightly longer, but start checking the temperature at 1 3/4 hours.) Immediately transfer stuffing from body cavity to a shallow baking dish (separate from one for stuffing baked outside the turkey). Take temperature of stuffing in neck cavity and if less than 165°F, add it to the baking dish. Bake (covered for a moist stuffing or uncovered for a crisp top) until it reaches a minimum of 165°F. This can take 20 to 45 minutes, depending on the temperature of the oven, which you may have lowered to reheat side dishes.
  • For a roast turkey breast:
  • The same method used above can be applied to a whole turkey breast (instead of the entire bird). For a 6- to 8-pound breast (with skin and bone), reduce amount of salt to 1 1/2 teaspoons and pepper to 3/4 teaspoon. Use a V-rack instead of a flat rack. Roast, rotating pan 180 degrees halfway through roasting, until thermometer inserted in thickest part of each breast half (close to but not touching bone) registers 170°F, about 1 hour 10 minutes to 1 1/2 hours. Let stand 30 minutes (temperature in breast will rise to between 175°F and 180°F). (For a grilled turkey option, see Grilled Whole Turkey.)

Steps:

  • Preheat oven to 325f and put a rack in a roasting pan.
  • N.B. If you use a foil roasting pan have it seated firmly on a solid tray do not attempt to carry it on it's own without bottom support.
  • Remove neck& giblets from the cavity of the bird Rinse turkey thoroughly inside and out patting it dry with a paper towel.
  • Sprinkle salt& pepper inside and over the skin of the bird Stuff the bird with dressing.
  • N.B. Do not do this until just before you are going to cook the bird.
  • Stuff the neck cavity as well as the body cavity.
  • Secure the neck flap with a skewer or stitch it Tie drumsticks together and close the body cavity securely.
  • In a small bowl combine butter,rosemary, sage& thyme, mix well Gently loosen the skin covering the breast, be careful not to tear it Spread herb mixture under the skin and over it Place turkey on rack in the roasting pan Roast the turkey basting every 20 minutes or so If the bird begins to brown too soon place a piece of tin foil loosely over it.
  • The bird is cooked when a meat thermometer reaches 180 degrees in the thickest part of the thigh Apprx 5 1/2 hours Remove turkey from roaster and let stand for 25 minutes Remove ALL the stuffing from the bird, Carve and Serve (Left over turkey and stuffing can be frozen as long as you freeze them separately) Make gravy in the roasting pan while the turkey is resting (a separate recipe will be posted or try one that is already posted).
